I decided to come up with a recipe using just what I had on hand. I looked at a bunch of copy cat recipes for Chili’s southwestern egg rolls, but they all called for using tortillas and canned black beans, both of which I didn’t have. So I give you my version!

If you haven’t looked for it yet, you have to try Cabot’s 75% reduced fat cheddar cheese – it is SO flavorful! I used calorieking.com to figure out the calories of this quiche – this is for the WHOLE pie!

Note to self: you need to marinate these wings longer than 2 hours – overnight would be better!
While I like the marinade recipe, the short time I marinated them, there was really no flavor to them at all.
