TGIF!

Yesterday was the last and final appearance of the cauliflower crustless quiche :D  I had an english muffin on the side this time, of course still with bacon and Taco Bell sauce!  Breakfast: 472 calories, 35 carbs, 30 protein, 26 fat and 7.3 fiber.

Since I did the extreme ride the day before, I opted for the elliptical.  While its nice to watch HGTV while working out, I don’t think its as good of a workout.  45 minutes went by and wasn’t anywhere near out of breath or sweaty like the bike machine.

Lunch was leftovers: my buffalo chicken chili with 1 cup cooked pasta and red pepper slices.  Lunch: 498 calories, 70 carbs, 23 protein, 15 fat and 17.1 fiber :D

Remember when I bought the whole beef tenderloin last weekend?  The video I watched to learn how to cut it down said that the tail, head and side pieces, once the silver skin and extra fat could be used, makes great burgers.  I used the attachment on our kitchen aid.  I was afraid the meat wouldn’t stay together, so while the grill heated up, I put them in the freezer for 15 minutes.

The verdict?  The burgers weren’t that good.  I think because maybe our grinder doesn’t get a coarse enough grind?  So while you would eat one bite of the burger, it would be good, but then the next bite might be really tough – too tough to even eat.  Lesson learned!  But that corn?  Best corn we’ve had all summer! My co-worker went to the farmers market near our office yesterday, and brought me mirai corn:

It’s from a farm in Wisconsin and its so good.  Once the water comes to a boil, you only need to cook it for 2 minutes for perfection.  It is so sweet and tender – thanks Renee! :D

  • 1545 calories, 176 carbs, 72 protein, 67 fat, 25 fiber
  • 37% of calories from fat (we’re getting better!)
  • 45 minute elliptical

There are so many interesting dishes around food blog land, I only wish I had time to make everything that I see.  I think I’ll start a new feature on BDL: “I want to make that.

I’ll start off with something that is near and dear to my heart:  homemade Tabasco! I want to make that! :D

  3. Can you get Silver Queen corn there? It’s my very favorite corn and the first to sell out at the farmer’s market. So good I only want to eat it, not use it in recipes!

    Too bad about the burgers – it’s sad when they look so good yet don’t hold up on the taste. Oh well, you did more than most people would have with that meat, so you still win!

    • Thanks! :D My camera is a point and shoot – its an Olympus 1010. I am confident I still only know how to do half of what its capable of, but its durable – I’ve probably dropped it on the ground a dozen or more times! :D
