There’s no calories on Halloween, right?

Oh my goodness, as soon as I saw the pulled pork in a crockpot, I knew it wasn’t going to be good!  All in all I think I did okay, no dessert for me at least!

Lunch:

  • pulled pork sandwich
  • the cheeziest wagon wheel mac n cheese
  • hashbrown potato casserole
  • a spicy meatball (it was a jar of jalapeno jelly mixed with cocktail sauce and store bought meatballs – very good!)
  • broccoli slaw salad

What I didn’t take a picture of was the second spoonful of mac n cheese!

It’s fun because we have to dress up for work and we have a costume contest – my friend W and I won for funniest!  I won’t put up a picture, because you wouldn’t get it – its an office inside joke.  I let her have the prize:

Happy Halloween!

It almost felt balmy out this morning for our walk, it was already 50 degrees at 6:45 am!  We walked a new path again – this time it was a horse trail!

Breakfast:

  • 1 Thomas’ whole grain english muffin
  • 1.5 ounce sliced apple
  • 1 ounce swiss cheese

We are having a Halloween pot luck at work today, which may be a challenge!  Sloppy Joes are the main entree – maybe I’ll have some without the bun for less carbs.  Not sure what else there will be, but hopefully there will be some healthy choices!

Good thing I am diabetic, because there are BOWLS AND BOWLS of Halloween candy – the good stuff too – snickers, kit kats, HEATH BARS which are my favorite!

Party Pizza Thursday?!

What’s up with that?!  Well, Hannah and I don’t like meatloaf, so we had plan B.  Luckily I had leftover pizza dough, so that was a quick decision for us!

The dough gets a special chewy/crispy texture when it sits in the fridge for any length of time.  It was so good!

Simple – a few slices of pepperoni, sliced banana peppers from my mom’s garden, and mine was a 4 ounce pizza dough.

I have my secret ingredient recipe all set – I’ll be making it tomorrow night.  It sounds amazing in my head, so we’ll see!

soup salad and sammie!

I realized I haven’t been eating as many veggies, so decided to add on a spinach salad with Annie’s goddess dressing.   This is the only flavor I have tried and am looking forward to some of her other flavors – if they are as good as this goddess one, I’ll be in heaven!  (Just have never seen them on sale though :O)

Lunch:

  • 12 ounces homemade Italian wedding soup
  • 1 low carb wrap with lettuce, dill pickles, 1.5 ounces garlic bologna and .5 ounce swiss cheese and garlic/thyme mustard (yum!) I know this is probably a weird combo, but it works!
  • 2 cups fresh spinach
  • 1 tablespoon Annie’s goddess dressing

I LOVE THIS SOUP!  I like that the meatballs cook in the broth.  Not only does it make for a tender meatball, but it gives the broth an amazing flavor.  And its perfectly salted!

Not sure what’s on the menu for dinner for me and Hannah – Tony is having meatloaf with the last of the ground beef.  That was a good purchase!  The package was $8.33 cents and I got:

  • cheeseburgers
  • beef tacos
  • spaghetti and meatballs
  • Italian wedding soup with meatballs
  • meatloaf!

Not too shabby! 

I am still trying to come up with a recipe for the Blogger Secret Ingredient this week – pear.   I had an idea for a baked pear with goat cheese with a balsamic glaze, but someone already beat me to it!  Gotta put my thinking cap on!

and I took a short walk this morning – it was chilly and I was not prepared!  I hadn’t made my lunch, or breakfast yet!

The biscotti worked last night!  Baking powder is my friend!  I am happy I have redeemed myself!

Breakfast:

  • 1/3 cup oats
  • 2/3 water
  • 2.5 ounce diced apple
  • pinch salt
  • 1 tablespoon sf syrup
  • 1 tablespoon trail mix
  • pinch of cinnamon

When I put this into www.calorieking.com to see how much insulin to take, this whole bowl came in at 192 calories, 5.4 fat, 5.3 fiber, 31.6 carbs, 6.5 protein.  Does that sound right?  It seems too low in calories to me!
