Porkchops

I like pork chops, but I tend to like them boneless, while Tony likes them on the bone.  I was lucky because these were on sale!

Dinner:

  • 4 ounces pork chop
  • 3 ounces potatoes
  • 3 ounces green beans
  • 1 tablespoon blue cheese dressing mixed with 1 teaspoon balsamic vinegar

This morning before I left work, I baked a potato in the microwave and left it in there.  I diced it up and pan fried it in a little oil/pam mixture.  The green beans are from Trader Joe’s – I microwaved them and when the were done, I mixed them in with the potatoes for a quick pan fry.  I thought they might be dry, so I mixed 1 tablespoon blue cheese with 1 teaspoon balsamic vinegar – really turned out good!

And I made the Italian Wedding Soup for my lunches with the remaining ground beef purchase earlier this week.  I used 5 ounces of raw ground beef, 1 ounce of grated parmesan, Italian seasoning and garlic for the meatballs.  Where last nights meatballs were about golf ball size, these are marble size:

Ingredients

 
  3 cup(s) canned chicken broth   
  5 oz cooked ground beef, 10% fat   
  1 Tbsp grated Parmesan cheese   
  3 cup(s) spinach   
  1 tsp minced garlic   
  1 tsp italian seasoning   
  1 cup(s) cooked egg noodles   

Instructions

Mix together the ground beef, Parmesan cheese, minced garlic and Italian seasoning and salt and pepper to taste. The meatballs should be about the size of a marble.
Add chicken broth to pot, add meatballs, and bring to a boil, reduce and simmer for 15 minutes, or until meatballs are done.
Remove from heat, add pre-cooked egg noodles and baby spinach. Let sit for 5 minutes until noodles are warmed and spinach begins to wilt.

 Right now I have my Christmas Morning Biscotti in the oven, trying to redeem myself from the mishap of forgetting the baking powder earlier this week!

Keep your fingers crossed that the biscotti turns out!  I’ll post it at breakfast if it does!

Eclectic Lunch

I didn’t plan my lunch very well today!  I knew I had tomato soup in the fridge and carrots and cucumber, but when I put that in calorieking, it was only like 200 calories – not enough! 

So I had my leftover bean burrito in the fridge, and cut off about a 2 ounce slice and warmed that up.  I also added ranch dressing for my veggie dip:

And yet another Diet Dr. Pepper – my favorite pop!  I’ve gone a month without drinking them, but this is my third one this week!  But oh so good!

I ran an errand at lunch today in preparation for Halloween, so no lunch work out today.   😦

Wide open spaces

Ed and I turned left this morning on our walk and that brought us to a really wide open prairie.  The only thing we saw were two deer jumping in the tall grass about 100 feet away.  Ed didn’t even see them!

I did have a bit of a scare, because as soon as we got out of the car, I didn’t have a good hold of his leash and he just went running for the woods!  Now when he was a puppy, Tony would take him to this spot and he would just run and run, but always listened to Tony when it was time to come back.

Um, let’s just say he doesn’t listen to me as well!  It took me a couple minutes to get him back, and then the whole rest of the walk, it seemed like he was wanting to cut loose!

Did anyone watch Biggest Loser?  I can’t stand the couple Ed and Vicky – I know its a game, but they drive me nuts.

Phil looks great though!  And it was nice that he is back home with his wife and kids – and has lost 109 pounds!

On Top of Old Smokey

Well, I think my meatballs turned out pretty good!  Here is the recipe:

  • 3/4 pound ground beef
  • 1/4 pound Jimmy Dean Sage sausage
  • 1 tablespoon minced garlic
  • 1 tablespoon Italian seasoning
  • 1/3 cup Italian style bread crumbs
  • splash of milk
  • salt and pepper to taste

Here they are before getting in a smokin hot pan of 1/2 teaspoon oil and Pam:

Pan fried them so they got crispy on the outside:

Once they were browned, I baked them in a preheated 350 degree oven for 10 minutes:

The final step was just to keep them warm in my marinara sauce – which looks strangely orange!

All together I had 5 ounces cooked penne pasta, 4 meatballs, sauce, sprinkle of Parmesan cheese and 1/2 slice of wheat garlic bread.  Yum!

My blood sugars were normal all day and I got a total of 75 minutes of exercise today – nice!

Hopefully tomorrow’s walk won’t be as chilly as this morning!  See you at breakfast!

I thought it was red lentil chili. . .

when I put it in my lunch box, but after I reheated it, it was another taco soup!  I thought I was done with those already!  I told you it made a lot!

So with today’s taco soup I have a spinach salad with cucumbers, baby carrots and my favorite Annie’s goddess dressing.

 Good workout at lunch.  I did 30 minutes run/walk adjusting the speed and the incline.  I was kind of clumsy, because the program I was following wanted you to change the incline like every 30 seconds.  It was too much to keep track of, so I alternated between 5.5 mph for the run at no incline and then the walk part at 3.5 at 5% incline.

Then I did 5 minutes of abs and 5 minutes of S T R E T C H I N G!

I am making the most of my ground beef purchase.  Sunday was burgers, last night tacos, tonight spaghetti and meatballs, and I am going to try and make Italian Wedding Soup for lunches.  Anyone ever make that before?

Then I’ll probably end up making a meatloaf for a meal down the road for Tony with the remainder of the beef.
