Monday morning. . .

and back to work.  Luckily even though I was off last week, so were many other people at my office so the piles I thought would be on my desk aren’t as big – whew!

Breakfast was a homemade mcmuffin with 4 ounces of mandarin oranges.  I am still trying to figure out my camera, so be patient!

Okay, my break is over.  I am going home at lunch today to check in on Tony so for the time being, my lunch/dinner post will be posted together at the end of the day.   See you tonight!

Merry Christmas!

Whew, what a busy day!  So happy that we were finally able to celebrate today!  Joe came over around noon and we had our immediate family Christmas – got a ton of stuff, but my favorite things were my new camera, Joe gave us gift certificates to the high end movie theater that he works at (can’t wait to do that again!) and Hannah made me four pairs of earrings to go with a shirt she bought me.  Inside was a note giving me breakfast in bed and a closet makeover!

I still have to read the instruction manual to the new camera and load the software on my computer – but here’s what it looks like.  And, you guessed it, blue is my favorite color!

My old camera (the one that took that picture!) is only 3 megapixals, this new one has 10.1!  Can’t wait to figure out how it works!

So my parents-in-law, sister-in-law, nephews and grand nephews came over to exchange gifts.  You can imagine my surprise when my father-in-law walked in with this!

Are you kidding me?!  Yes, that is a 42 inch flat screen, high definition television!  I was so dumbfounded I didn’t really know what to say!  Of course, Tony and I said it was TOO MUCH but they said since we’ve been through a lot, they felt we deserved it.  THANK YOU SO MUCH!

So I made lasagna, penne pasta with alfredo sauce and a chopped salad.  Here’s how it looks after resting:

Here is the easy recipe!

Easy Meat Lasagna (adapted from a recipe from www.recipezaar.com)

Directions

1.       Brown ground beef, Italian sausage, onion and garlic.

2.       Add salt and next 5 ingredients; stirring until well mixed.

3.       Simmer 1 hour.

4.       Combine cottage cheese, eggs, pepper, 2 tablespoons parsley, Parmesan cheese and 1/2 of mozzarella cheese; in a lasagna pan, layer noodles, meat sauce, and cheese mixture; repeat.

5.       Top off with layer of noodles, sprinkle evenly with remaining mozzarella cheese.

6.       Bake at 375 degrees for 30 to 40 minutes, or until cheese mixture is thoroughly melted.

7.       Let rest 10 to 15 minutes before slicing.

So I am off to load my new camera software and read the instruction manual.  Hope everyone had a good weekend!

After hospital food. . .

I think Tony was happy to get anything for dinner tonight!  Hannah had a baked potato topped with Hormel chili because she doesn’t like meat.  I made steak, new potatoes and green beans with garlic bread.

On the way to the store I meant to drop off Tony’s prescriptions, but completely forgot!  Luckily the next town over has a 24 hour pharmacy, but turns out, its a bit busy!  We had to wait about 45 minutes, but it was necessary because one of the medications was for pain!

Lasagna is all ready to go for tomorrow, all I have to do is pop it in the oven.  It’s a simple recipe but so good!  I’ll post it tomorrow.  Tony isn’t a huge fan of ricotta cheese so I use cottage cheese!

Off to relax!  Night all!

TONY’S HOME!!!!

At long last!   Although leaving the hospital takes FOREVER – everyone has to sign off on him going home, the cardiologist, the orthopedic doctor, the internets, the janitor!  But all went well and he is now comfortably resting, with Ed by his side!

While I was waiting for home health care to call me back before going to the hospital, I cut into one of the grapefruits from my parents-in-law – it was so sweet!

I learned the hard way that the cafeteria at the hospital is CLOSED on the weekends, so Hannah and I ended up picking up Subway for us and Tony.   As much as  I try, as soon as I see these potato chips I have to get them!

When we left the hospital it was a balmy 65 degrees, but then the rain came down hard on the drive home – as much as I hate driving in fog, I almost think its worse when it rains so hard while driving 60 miles an hour!   It easily dropped 15 or 20 degrees already and we’ve only been home an hour and a half.

So I am off to the grocery store, I haven’t been in almost 10 days!  Tony’s family is coming over for lunch tomorrow and we will finally open our Christmas presents 😀  Can’t wait!  I decided to make a lasagna – casseroles are always easy!  See you later tonight!

Party Pizza Friday, but no Tony. . .

Okay, so we had our hopes up that Tony would come home today, but sadly that was not the case.   But things were in the works today that HOPEFULLY he’ll be home tomorrow.  I was talking to the joint care coordinator who faciliates from hospital to home, so that is a good sign!

So I basically think that we have had every type of weather this Christmas!  So tomorrow, high of almost 60 degrees!  And then last night, everything turned to a sheet of ice.  This morning I went out to warm up the car and there was about 1/10 inch of ice all over it!  On the ride to the hospital this morning, I saw plenty of this:

 When I got to the hospital, Tony was gone for one last test.  He came back to the room about 10:30, then left around noon to get his pic line replaced.  I ventured down to the cafeteria – today’s special was meatloaf with mushrooms – yuk!

I got a salad, carrot sticks, ranch dressing and a chicken finger:

I ended up leaving the hospital at 4:00 this afternoon because the fog was rolling in!  With the cold snow and the warm air it was SO FOGGY!  And people are driving like 70 miles an hour!  Me, I was in the left lane, going 50 miles an hour.  I don’t really like driving at night, let alone with the fog!  By the time I got off the expressway I finally loosened my white knuckle grip on the steering wheel!

So my sister-in-law had to work tonight so I invited my parents-in-law over for Pizza Party Friday!  My nephew and his son came over too.  It was a nice distraction having  them over, and being in the kitchen again!  My MIL chopped veggies while I rolled out the dough Hannah made earlier today – she did a great job!  I had caesar salad on the side:

And my MIL brought over a container of her homemade cookies – Hannah is in heaven!

And my parents-in-law have a grapefruit tree at their house in Florida and brought me a dozen fresh grapefruits – yummo!

So when Tony is not here, Hannah is Ed’s best friend.  This is usually how I say goodnight to them both!
