And I couldn’t be happier! 😀 I got this sauce from the Asian grocery store:
This package was only .99 cents and three servings - each serving is 1 1/2 tablespoons (plenty!) for 40 calories and 1 gram of fat
The spicy also could have come from the sliced red jalapeno I threw in just for kicks! 😀
1/4 package tofu, 4 ounces broccoli, 3 ounces zucchini, 2 ounces carrot, 1 sliced red jalapeno (with seeds!) 1.5 tablespoons sauce
It wasn’t until I put this into www.calorieking.com that I realized that this bowl only comes in at 224 calories, 9 fat and 23 carbs – so I may have to dig into my office food stash drawer later on this afternoon if this doesn’t hold me!
And I was so hungry this morning, I ended up eating this before working out so now I am off to get my 30th sticker in a row for Shred!

It’s another rainy day, although the temps are supposed to be near 7o today. At least everything is turning green so that’s a good sign spring is almost here!
I had plenty of time this morning, so I put together a hash for breakfast – 4 ounces cooked chopped potato, 2 ounces deli corned beef hash, one small egg, and 1/2 ounce of jalapeno cheese. I just pan fried it for about 7 minutes, until the egg was done and the potatoes got crispy.
I had a small fuji apple on the side - altogether breakfast comes in at 414 calories, 17 grams of fat and 40 carbs
my apple was a bit tart, so I drizzled it with 1 tablespoon of sugar free syrup - worked great!
American Idol Spoiler Alert:
I was so surprised that Adam was in the bottom two! Although I think there are two camps with Adam – you either love him or you hate him!
I am planning on doing my last day of shred today!!! I can’t believe I’ve done it 30 days in a row! Starting tomorrow I am going to move on to her 40 minute DVD. I am very anxious to weigh in and measure myself tomorrow – I think 30 days is the longest time I’ve gone without weighing myself!
Morning break is over – its tofu stir fry for lunch – I am trying a new sauce so I hope its spicy! If not I brought a jalapeno to throw in the mix. See you then!
Oh my gosh, if one more thing went wrong with my computer at work today I was ready to crack open a bottle of wine we keep in our work wine cooler leftover from Christmas! Keeping my fingers crossed tomorrow goes smoother!
Since I didn’t do Jillian at lunch I had to do it when I got home from work. I also wasn’t prepared for dinner. As I was sitting at my desk waiting for my computer to reboot for the tenth time, I realized I hadn’t made the corn chowder for our soup and sammie dinner, nor did I marinate the chicken for our teriyaki chicken kabob dinner! When all else fails – go out! It worked out perfectly – I had plenty of time to work out, we went out to dinner, picked up a few things at Walmart on the way home and back by 8:15 – nice!
I am in the process of seeing who got voted off American Idol tonight – I usually fast forward the car commercials! And I can’t believe they picked Jamie Foxx for the “rat pack” theme – still don’t get that one!
My lunch was delicious – I ended up making a “leftover” spaghetti lasagna which consisted of:
- leftover spaghetti
- cooked spaghetti squash
- 2 cups chopped fresh baby spinach
- 6 ounces cooked quinoa
- 5 ounces cottage cheese
- crushed red pepper
- Italian seasoning
- homemade mariara sauce
I think the quinoa makes this dish!

So we ended up going to TGIF – even though you can never find their nutritional info online!

I got the Jack Daniels grilled chicken dinner.
I ended up eating one of the chicken breasts, all the mashed potatoes, and just a few of the vegetables – the vegetables were awful – they tasted like they were frozen.
I saw a preview for a new show on Lifetime. It’s called Cooking Yourself Thin. It premieres this weekend so check out your local listings – supposedly they will have all the calories for the meals they make and also how they made the dishes calorie friendly. Nice!

I’ve had the worst time with my computer at work today – still busy, I’ll post lunch (which was delicious by the way!) with dinner tonight. I was by myself for my lunch work out and didn’t have the Jillian dvd, so I did my jog/run/sprint routine for 40 minutes on the treadmill.
I reached a new personal goal – 8.0 mph on my last one minute sprint! Felt pretty good about that!

I was running late this morning so McDonald’s came to the rescue! I ended up getting the breakfast burrito and the fruit and walnut salad. All together breakfast comes in at 510 calories, 24 fat and 57 carbs – not too bad!
I really loved the walnuts!!
