My friend Foodie McBody emailed me a nice chart to track my points – thanks Foodie! ๐Ÿ˜€

I took my camera on our walk – right behind our office building is a country club golf course, so the road doesn’t have a whole lot of traffic.

we also walk over a bridge with a stream - not even sure where this goes to!

Lunch was a low carb taco melt – I wrapped up 2 ounces of taco meat and then folded it up – grilled it with Pam on the seam side down first, then flipped it to make a crunchy taco.ย  Also have 4 ounces sliced cucumber, 1/2 red pepper, 5 ounces avocado (no idea that avocados were so high in fiber – 4.8 grams for 5 ounces!), then a baby spinach salad with carrots and the last of my beloved Annie’s Goddess dressing:

drizzled with my homemade salsa (which Tony added salt to and now tastes much better!) :D

all together lunch comes in at 530 calories, 30 fat, 30 protein, 57 carbs and a whopping 23.1 grams of FIBER!

Afternoon break is over – Hannah’s working tonight so its a mini-date night dinner at home – we both agreed on steak and while I was leaning towards shrimp, I think I’ll make scallops instead – you’ll just have to come back tonight and see!

  1. Wow what a lunch!! You almost had a days worth of fiber in one sitting, you’d better be drinking plenty of water (the dietitian in me is coming out!). The food looks amazing. You’ve inspired me to break out the beef and whip up some tacos.

  2. Aw I love seeing deers in the wild! There always used to be a bunch on my school’s grounds. Have fun with your date night ๐Ÿ™‚

  3. I love how much fiber there is and how TASTY your whole meal looks. Great post.

  4. what a great place to walk! pretty pics.

i keep meaning to make some fresh salsa but never seem to get around to it. yours looks so good!

  5. I buy the TJ’s imitation of Goddess and it’s just as good! So addictive ๐Ÿ˜€

  6. Lunch looks like a great spread! Looks like a really nice place to take a walk at lunch. I work along the harbour, but rarely go out for a walk at lunch. I should really start!

Good luck on your challenge ๐Ÿ™‚

  7. It’s been a week! How’s the challenge going so far?? I’m doing great except for the water part, which continues to plague me.
