I have to give props to Tony for the idea of pureeing the watermelon and and reducing it for the base of my bbq sauce idea. Thanks Tony!
Watermelon BBQ Sauce
- 1/2 cup watermelon juice that has been reduced over low heat for 1/2 hour
- 1/2 cup balsamic vinegar
- 1 tbsp. brown sugar
- 1/4 cup soy sauce
- 1 tbsp. canola oil
- 1 tbsp. dijon mustard
- 2 tbsp. minced garlic
- 1 tsp. red pepper flakes
Mix all together and refrigerate for at least an hour, or overnight.
Now I did not use this as a marinade, but as a mop as the kabobs were grilling. There was TONS left over, so I am going to try this as an overnight marinade. I thought it was delicious!
My other kebob was a tofu kebob that was in the July/August Everyday Food Magazine.
- 2 cups fresh cilantro leaves
- 1/4 cup vegetable oil
- 1/2 jalapeno, seeded
- one inch chunk of fresh ginger
- lime juice from one lime
- salt and pepper to taste
- 1 package firm tofu (16 ounces) pressed under a cast iron skillet for 1 hour to remove most of the water
In a food processor, combine cilantro, oil, jalapeno, ginger, lime juice, and blend until smooth. Season with salt and pepper. Make your skewers with the tofu and veggies of choice (mine was zucchini and red pepper). Cook on the grill and add a couple tablespoons of the cilantro mixture during the last 30 seconds and serve the rest on the side as a dip.
I loved this! It tasted so fresh, but I love cilantro, so maybe that helped. Tony and Hannah both thought it tasted like ass, but it was a winner in my book!
Since I had 1/2 a recipe of dough leftover from party pizza Friday, I ended up making cheese bread.
I cheated on the pork kebobs!
I need to keep reminding myself that I am only cooking for a family of 3!
Even though our morning started in lots of rain – it turned out to be a beautiful day, and I think tomorrow is supposed to be nice too. We have nothing planned for tomorrow, other than the lawn and some laundry – love that!
Have you seen the movie UP yet? OMG, totally loved it, and actually almost came to tears a couple times! The only variable is that it is a kids movie, and we went to a 2:00 p.m. show – this one kid decided to sit next to Tony – on the step right next to his seat! After every scene he kept asking “is this a dream?” We thought that there weren’t enough seats, but no, the kid wanted to sit on the step!!
