Avocado Bread/Rolls/Biscuits and Gravy

Thank you for all your birthday wishes for Hannah!  She had an awesome weekend!

She bought her first lottery ticket:

She won her first lottery ticket!

She bought whip cream!  Okay, some of you had questions about why you had to be 18 to buy canned whipped cream.  Apparently you can get high off of the nitrous oxide that makes the whip cream come out of the can!

we will be using it for angel food cake though! 😀

And. . . . she got her nose pierced!  It’s tiny though.  And Tony and I have always discussed with the kids – piercings you can take out but tattoos are forever!

So Hannah wanted biscuits with sausage gravy for breakfast.  This is a breakfast she usually has at my Aunt’s lake house.  I cheated a bit, because I used packaged gravy mix that my mom bought me, but it is so damn good!

And the only sausage we buy – we used to buy cheaper sausage but it was so greasy, we stick with good ole Jimmy Dean:

One thing I’ve learned about making biscuits is to not overwork the dough too much.  I also shred my butter too – I put a stick of butter in the freezer the night before – I think it makes for a tender buscuit.

So Saturday I decided to attempt my first Healthy Bread in Five recipe.  Click on the badge below for more information.

It was avocado bread.  I can’t post the recipe, but I’ll give you what page it is on in the book!

It is interesting because it calls for mashed avocado in the dough!

You mix the mashed avocado with the water and add that to the dry ingredients.

The dough is pretty sticky, but after the two hour rise it was perfect.  I decided first to make rolls for our burgers.

I weighed out 4 ounces of dough for each roll, brushed with water and sprinkled with black sesame seeds.

I love parchment paper - my baking stone heated up in the oven so this was an easy way to get them on the stone - with 5 minutes left of baking, I put them directly on the stone

So it was our first burger grill of 2010!  It was almost dark outside, but that didn’t stop me!

I also made fries with dinner.  These are the best fries – they are baked potatoes, quartered and deep fried – the secret?  Two fries – the first time I just get them slightly brown, then when I am ready to plate, I drop them for another three minutes – so crunchy on the outside, yet tender on the inside.

I really liked this bread, although Tony thought it had a weird aftertaste.

So I had a lot of dough leftover, and decided to use the same cooking method as the Best Bread Ever.

I scored the top

I then baked it in my dutch oven for 30 minutes with the lid on.

And then another 15 minutes with the lid off.

I may have waited 5 minutes before slicing a piece!

I love this crunchy crust! I think I'll bake every bread with this technique 😀

I had a great grocery shop – $107!  (Breakfast and Lunch is just for me)

Breakfasts:

  • Breakfast pizza
  • zucchini egg white omelet
  • crustless broccoli and cheese quiche (I’ll have this twice)
  • oatmeal with craisins and almonds

Lunches:

  • chicken tikka masala with brown rice
  • broccoli cheddar soup
  • beef noodle salad
  • chili baked potato
  • Posole soup with spinach quesadilla

Dinners:

  • Scallop saltimbocca with mashed potatoes
  • dinner at Chinese restaurant to celebrate Hannah’s b-day with my step-son Joe
  • Pork chops with blue cheese dressing
  • Sesame chicken salad with spinach, cucumber and cilantro
  • Party Pizza Friday?  (not sure I can convince Tony, so it may be fish tacos!)

    • I put those up so someone would have to think about my daugethr. Last night was particularly bad. A line from a song I was listening to triggered the break-down and subsequent, uncontrollable sobbing. It only happens once or twice a year anymore, which is good. Sorry, if it bothered anyone, but sometimes it seems like no one remembers my little girl, and it hurts to think that people would forget such a wonderful, energetic, little bundle of joy. Anyway thanks for tolerating my shenanigans and letting me thrust my problems onto unsuspecting readers.

  3. Oh my gosh….I had no idea about the whipped cream! I wonder if it’s like that in every state? I’ll have to try and buy it to see. Really, I just want an excuse to get whipped cream. 🙂

    I love Hannah’s piercing! I couldn’t agree more about them, too. I had my belly button pierced in college and now it’s out, so it’s like I never had it. I’d love a tattoo but I am too indecisive – and the “forever” thing scares me!

  9. Do you have your house at a certian temp. when you rise your dough. OR do you use a certian yeast? My bread never turns out as great as yours looks. Now My mouth is watering and I will have to add make home made bread to my list of to do’s today!!!!!

    • I just keep it on the counter or on top of the stove – our house during the day is only at 63 degrees. Let me know how it turns out! 😀

Did you know that Target doesn’t sell Brillo or SOS pads because they can be unrolled and used somehow to make crystal meth! Good heavens – what ‘s the world coming too?

  14. I didn’t know they actually made it a law on the whipped cream. Those are called whip-its or other variations, hmmm, why kids think huffing is a good idea I will never know. Same with spray paint and that is definitely locked up in stores. Congrats on her first lotto win.

  19. 1. We always use the gravy mix at the Lake – I don’t know any other way to make the sausage gravy!
    2. Yes, I knew about the nose piercing. Looks fine to me, I’m glad it’s little.

  20. When my younger son turned 18, he got his ears pierced, registered for the draft (had to) and joined the ACLU. It is so funny what they do when they are finally legal!

    • I’m 41 years old and recently had a heart cath and 23mm stent ilpnamt in the LAD. My Cardiologist, who is from Poland and not tainted by American political dieting correctness, told me I needed a diet considerably lower in Carbohydraes than what I was typically eating. I wasn’t sure exactly what he was referring to and luckily I found this book. I was astonished at what I was reading. Everthing I was ever tought about nutrition was wrong. I’ve been excersizing and keeping my Carbs below 50g a day and I feel phenominal. I’ve lost 16 pounds in 4 weeks and all of my lipids are way down except my HDL which has risen slightly. My Triglycerides have also went from 291 to 120 in just 3 weeks! This book has given me enough information to lead a healthy life and I thank the authors of this book for saving my life. My four year old son thanks you too!

  28. I can’t believe kids have to be 18 to buy whipped cream! It was one of my favorite things when I was a kid.

    And you are so right on the piercings vs. tatoo thing. My mom has a very personal tatoo in a not so personal space (read ankle) and it always makes me cringe. And lots of people in their 20s have small nose studs that they wear to work and it’s fine.

    • I find it easy to despise amlsot all pop starlets but, for some reason, I find something about this girl decent. I mean besides the fact that she is every middle aged man’s guilty pleasure.I find her music to be unlistenable. I don’t, however, find her videos unwatchable. If I ever meet her in person I won’t recognize her without a big red MUTE in front of her.
