Old School

I started out with my typical breakfast sammie on Thomas’ Everything bagel thin.  I cannot tell you how much I love these – all the flavor of a bagel, but without all the calories!  I had another orange on the side from my $1 bin, but this was more of a juice orange than a navel orange, so it made it a little more difficult to eat, but so juicy!

Breakfast: 309 calories, 41 carbs, 24 protein, 6.9 fat and 4.1 fiber

Lunch was Chili Mac – 3 ways – 1/2 cup cooke penne, 1 cup of my Cincinnati Chili, 1 oz. cheddar cheese and fresh jalapenos! 😀

I also had a side salad – mixed greens, cucumbers, fat free Italian dressing and 1/2 package of the best almonds!

I have Michelle at Lucky Taste Buds to thank for these – I recently won her giveaway!  The whole package is only 110 calories – I was going to just use half of the package on my salad, but then ended up eating them all – they were that good!

Lunch: 580 calories, 39 carbs, 43 protein, 28 fat and 9.4 fiber

The only thing I can say about dinner is that I was frazzled!   I was making pork chops and I wanted to make potato pancakes.  Well, I had to take the deep fryer downstairs, and bring up the food processor.  Only problem – I could not find the insert that let me use my shredder!

I looked everywhere, but it was no where to be found.  After looking for 15 minutes and going up and down stairs at least half a dozen times, I had to go Old School.  I am confident half of my readers have never seen anything like this before!

It sits on top of your bowl and you select the size you want.  Oh.my.God. this was a pain in the ass!  My arms were so tired just shredding 4 potatoes!  And all the while I kept thinking, “if I knew where that part was I could be done in 20 seconds!!”

they were good though! 😀

Luckily Tony took charge of the pork chops – he put lemon pepper seasoning on them and they were cooked to perfection – I cut off 4 ounces for my dinner – they were huge!

I also decided to make stuffed grilled zucchini.  I microwaved the zucchini whole, then cut it in half, took out some of the seeds and put in 1.25 ounces of goat cheese.  Tony rolled the cheese in his hands to get it to fit – thanks!

These were so good – the goat cheese already had seasoning in it – just called “fine herb” so not exactly sure what is in it, but so flavorful!

Dinner came in at 423 calories, 13.9 carbs, 45 protein, 8.2 fat and 3.2 fiber.  And Tony came through – I kept forgetting to replenish my office stock!

this will last me about a month! 😀

Stats for Wednesday:  45 minute walk at lunch with 2 pound weights!

  2. I love bagel thins too, I can finally have bagels again 🙂
    Think of the shredding as some bonus exercise and strength training all in the service of a great meal.
    The zucchini looks to die for(well all of it does) I will definitely have to try that, how long did you grill it and did it melt onto the grill at all? did you add the goat cheese before you put it on the grill, or let it get some grill marks first?
    All just looks YUM!

    • I microwaved the zucchini whole – just hit my “fresh vegetable” button. Then cut it in half, scooped out the seeds and placed it face down on the grill for about 2 minutes, just to get the marks. Then I flipped them, filled them with cheese and it melted in just a couple minutes. 😀

  6. The everything bagel thins are hard to find in my parts! My Mom found 2 bags adn a lady came up behind her and almost grabbed a bag from her!! lol Lets not fight here ladies! lol

    Isn’t it frustrating to not find a certain item that you KNOW is probably right in front of your face? Good on ya for grating the potatoes old school…I probably would have just gone with baked (lazy am I).

  11. Ok, that is totally old school and I have never seen that before, but it looks so cool and it looks like it did the job. Next time I make soup maybe I will add some jalapenos. I think Ryan would like that.

  12. i LOVE goat cheese, i think of it more as a summer cheese, is that wierd? I jsut love it in summery salads and such, of course I eat it all year round 😉

    haha I know that feeling of your arms being tired after peeling 4 potatoes! i remember helping my mom make potato pancakes and was the designated potato shredder!

  13. Isn’t it crazy how stuff just disappears?! Both Johnny and I have a handful of items that we have never been able to find. And you’re right – it does get annoying b/c you go up and down stairs, pull everything out of cabinets and drawers and closets, etc. Ugh! Luckily we have a sense of humor and joke about a few of the missing items – like a set of my paintbrushes. So now when we can’t find something we joke “uh oh, I hope it’s not w/ those paintbrushes of yours!” hehe

    I love my Cuisinart insert! But how cute is that dial-o-matic and I love how it boasts it’s easier and faster! I wonder how horrible it was before that even!?

  14. I love bagel thins, but haven’t been able to find that flavor. I agree, it’s like you get all the good stuff from a regular bagel, but without any guilt! 😉

    That zucchini looks awesome!! Goat cheese is one of my favorite kind of cheeses!! 🙂

  21. We just got the bagel thins in our area so it’s probably going to be a little longer before the everything bagel makes it here. I’m loving the whole bagel thing without all the calories though!

    And if it were up to me, I’d give you an A+ for your additional potato workout! 🙂

  22. I’ll have to keep an eye out for those bagel thins–don’t think they’ve made it to Wichita yet. I can’t imagine using that shredder! I do my shredding by hand but it’s not an antique so it doesn’t take too long. I give your day an A+!

  23. I love the wheat bagel thins but was kind of scared to try the “everything ones.” You make them look good though, so I think I’ll pick some up on my next trip to the store!

  24. Your lunch looks SOOOO good!! I tried the whole wheat bagel thins and they really upset my stomach for some reason. Not sure why. 😕 Wish they made a NY style version of these; crusty on the outside, soft inside. 🙂
