I decided to have yet another taco burrito for breakfast, not the best picture, but it’s so good!

I only ate the strawberries in this fruit cup – the others weren’t very good.ย  I realize now that when I buy the pre-cut fruit, I really need to eat it within the first couple of days.

Breakfast: 397 calories, 43 carbs, 40 protein, 10.2 fat and 16.4 fiber ๐Ÿ˜€

Lunch was more of my Chicken Tikka Masala.ย  Um, pretty sure I love this because it’s the third time I’ve made it in three weeks!ย  I had 3/4 cup of white rice and a WW 1 point pita.

Lunch: 616 calories, 66 carbs, 51 protein, 15.7 fat and 4 fiber

I love the added cilantro – probably my favorite herb next to basil!

I had another orange on the side too.

I knew the girls were going to be home for dinner, so I took Christina’s advice and made her something she would be more familiar with:ย  spaetzle!ย ย  Only problem – I’ve never made it before!ย  My friend Andrea at work’s Mom is from Germany, so she gave me her tried and true recipe:

Andrea’s Mom’s Spaetzle Recipe (I doubled it!)

  • 2 cups flour
  • 2 teaspoons salt
  • 2 teaspoons pepper
  • 1/2 teaspoon ground nutmeg
  • 4 eggs
  • 1/2 cup milk
  • 3 tablespoons unsalted butter (didn’t add to mine though)
  • 2 tablespoons minced fresh chives (left that out too!)

Mix flour together – mix eggs and milk together.ย  Make a well in the dry ingredients and put eggs/milk in the middle.ย  Using a fork, bring down flour to incorporate.ย  Let dough sit 10 to 15 minutes.

I saw on youtube where you could just push the dough through a collendar – um, that didn’t work!

It was then that Maxi said her mom uses a machine – and her hand gestures led me to my potato ricer!

They only take a couple minutes to cook – when they float to the top, they are done.ย

I was wondering what to make with the spaetzle, and a quick google search led me to this recipe.ย ย ย  So beef stroganoff spaetzle it was!ย  Maxi had two helpings!

Dinner was literally ready in about 25 minutes, and the kitchen was all cleaned up by 6:45!ย  It was still so light out, so I took Ed for a quick walk – but it was freezing, we only lasted 15 minutes!

And while cold, it was a beautiful sunset!

Stats for Thursday:ย  40 minute walk/jog/5% incline on treadmillย (wasn’t feeling the run yesterday!), 15 minute walk with the dog.ย  (1454 calories, 143 carbs, 141 protein, 37 fat and 23 fiber)

The German students went downtown on Wednesday – I finally downloaded Maxi’s pictures last night – this one is one of my favorites!ย  They are in the glass cube that juts out of the Sears Tower!

    That’s great that Maxi enjoyed the spaetzle. I bet she felt right at home. It looks pretty delicious to me, I’ve never tried german food!

  2. I’ve never heard of spaetzle – but that looks so delicious! That is so sweet of you to make some food for Maxi that must remind her of home. I’m sure she appeciates it more than you know!

  3. So sweet of you to make a meal that Maxi is familiar with – after a week in America, I’m sure she was ready for something from home. That said, I always thought spaetzle was a dessert…so I’ve learned yet another food thing from you, lol!

  5. Spaetzle and beef stroganoff are a couple of the very few German foods I like. Go figure since I love carbs. You are a great hostess!

    Next time you talk to Charlie tell him I’m really mad that he’s not blogging. Especially since he went to Fitbloggin as a super star! The least he could do is give us a review…

  7. Wow, I think I would be a little scared in the glass cube, especially piled among other people!

    I love spaetzle with a little butter, and your recipe doesn’t look too hard to make at all! I don’t know what it is about cut fruit that makes it go bad so quickly. Bummer, because cutting up produce ahead of time makes it so much easier to eat.
