Leaving on a jet plane! Day 9 of 101

Hannah leaves for Germany today!!  Doesn’t seem like it was that long ago that Maxi left us to go back home!  You can see the pictures from the farewell dinner here.   We have checked the weather and it will be in the 70’s at least the first 10 days of her trip.  I am so excited for her – I am taking a half day off.

After we drop her off Tony is taking me to a fabulous Italian restaurant – he’s taken clients there, his son and even his Dad, but I have yet to try it!   Check out the menu – what would you order?  All I know is that Tony took one client one night, and he went back the following two nights on his own!

I am so happy its berry season – my store had both black berries and raspberries for .99 cents a pint!

On the side I had an egg white “taco” on a flour tortilla – drizzled with my baja fresh salsa!  On the bottom is crumbled goat cheese – I bought this at the Marion Street Cheese Market when I went to Oak Park last weekend.  It’s called purple haze and it has lavender and fennel in it!  I am going to check out this company and see what else they have and if they sell it closer to my house.

Breakfast comes in at 290 calories, 31 carbs, 17.2 protein, 10.6 fat and 9.2 fiber.

I went to the gym to do the bike machine.  I ended up doing 8.8 miles in 39 minutes.  While I was riding, an “award” flashed across the screen saying that I was a “marathoner.”  What doesn’t make sense is that I’ve ridden 43 miles since I started the machine last week!

I only started this machine 7 days ago!Okay, the soup I made is about the easiest soup you could ever make!

Enchilada Soup Recipe (printer friendly version here)


2 cup corn
1 cup black beans
1 can fat free refried beans
8 cups chicken broth, low sodium
8 ounce chicken breast, cooked and shredded
12 ounce enchilada sauce
1 teaspoon cumin
1 pinch of salt
1 pinch of pepper


Add all ingredients in a big pot and simmer until beans, corn and chicken are warmed – about 15 minutes.

I need to use my MasterCook to figure out the calories on this – caloriecount said 1 1/2 cups was 414 calories and 23 grams of fiber, which just doesn’t seem right to me.  I had an ounce of tortilla chips on the side:

Dinner was easy – spaghetti with Italian sausage on our homemade marinara sauce. 😀

467 calories, 59 carbs, 21 protein, 16.2 fat and 4.5 fiber

I must have overestimated the amount of carbs in my dinner, because 30 minutes after dinner my blood sugar was 42 😦  So I ate a small banana nut muffin and that did the trick.

Stats for Day 9 of 101:

  • 1420 calories, 196 carbs, 80 protein, 42 at and 38 fiber (which I don’t think is right!)
  • 25.5% calories from fat, 21% from protein and 53% from carbs
  • 8.8 mile bike ride in 39 minutes

So this will be the longest time Hannah and I have been apart from each other – she’s vacationed with my Mom before for 10 days, but this trip is 3 weeks!  I couldn’t be more excited for her though!

    Yum that restaurant DOES look good! I’d probably get the veal parmigian! Or maybe a dish w/ ricotta since those are my fav types but J can’t have it!

    Good luck to Hannah! I was away a lot as a teenager – summers I’d go to camp for a few weeks, I lived w/ my aunt for 2 mos. and grandparents for a few yrs. My mom would visit every couple of months!

    Maybe the marathon is at sprint speed? I can’t figure it out either! But good job on the award and 40+ miles!!!

  5. Between the beans and your berries I’d bet that fiber is right. They both have lots.

    Did I ever tell you “Italian” is my favorite food? There are so many good things on that menu. I would probably ask my husband to have the Insalate Caprese so I could order the Pomodori con Cippola e Gorgonzola (which I know you’d hate!). Then for a main course it would be a toss up – Pollo alla Basilico “House Specialty”, Pollo al Vesuvio, Spaghetti alla Carbonara or Stuffed Gnocchi. Too many good things to choose from.

  14. You love Hannah so much! I love how you talk about her, it’s so clear that you 2 are so incredibly close…reminds me so much of me and my mom 🙂 I was away for my parents for 5 months before when I lived in Italy. It was really hard!

  15. I hope she has a great time while she is there. The spaghetti looks yummy. We went to Italian last night. Actually, Ryan wanted some Monday and we drove there and then found out they were closed Monday’s which I forgot, so we tried again yesterday.

    Your berries look so good, we have had lots of blueberries and blackberries but the raspberries haven’t been great.

    Hannah will have an amazing time – may not want to come home 🙂
    I spent a year in Europe when I finished school and then before getting married did a couple of 6 month stints – I love to travel 🙂

    Your “Best Buffalo Chicken Chili” sounds delicious, but what is Frank’s hot sauce? What could I substitute it with?

    • It’s a brand of hot sauce that is mostly used when making buffalo wings – any mild (or hot!) sauce would be a good substitute! I made that chili for a work function and it was a big hit!

    That goat cheese looks intriguing! Lavender is such an uncommon flavoring. I bought a bag of lavender sugar recently, and I’m trying to figure out what to do with it. Any suggestions?

    • I have actually never had anything with lavender in it – but I think it would make an interesting snickerdoodle cookie with the cinnamon/lavender combo!

      • Oooo, that sounds good. I was thinking perhaps something with lemon. I will definitely be making some lavender scones; I had some at a tea place around here and they were tasty.

        So the goat cheese people owe you some free cheese, because I bought some today for lunch (same flavor! yum!) after reading your post! They had it at Whole Foods.

  23. last year i went to see my grandma for 2 months! it was the longest i went away from my mom and by the last month i had many sobbing and crying phone calls “i wanna go home” … lol. hannah will miss you so much just as you will miss her 🙂

  24. OK I want to go to that Italian restaurant too. That soup is outstanding and so simple, I have got to make it too when I am of this detox diet. The longest I think I was away from my parents as a teen was one week. Lucky Hannah, she will love it there!! We are going to try to go next summer. Have a great night with Tony!

  32. when i was a teenager i went to france for a foreign exchange experience. i still remember it clearly so i know hannah must be so psyched!
