Yesterday was the last and final appearance of the cauliflower crustless quiche 😀 I had an english muffin on the side this time, of course still with bacon and Taco Bell sauce! Breakfast: 472 calories, 35 carbs, 30 protein, 26 fat and 7.3 fiber.
Since I did the extreme ride the day before, I opted for the elliptical. While its nice to watch HGTV while working out, I don’t think its as good of a workout. 45 minutes went by and wasn’t anywhere near out of breath or sweaty like the bike machine.
Lunch was leftovers: my buffalo chicken chili with 1 cup cooked pasta and red pepper slices. Lunch: 498 calories, 70 carbs, 23 protein, 15 fat and 17.1 fiber 😀
Remember when I bought the whole beef tenderloin last weekend? The video I watched to learn how to cut it down said that the tail, head and side pieces, once the silver skin and extra fat could be used, makes great burgers. I used the attachment on our kitchen aid. I was afraid the meat wouldn’t stay together, so while the grill heated up, I put them in the freezer for 15 minutes.
And I had lots of mustard and pickled jalapenos on mine:
The verdict? The burgers weren’t that good. I think because maybe our grinder doesn’t get a coarse enough grind? So while you would eat one bite of the burger, it would be good, but then the next bite might be really tough – too tough to even eat. Lesson learned! But that corn? Best corn we’ve had all summer! My co-worker went to the farmers market near our office yesterday, and brought me mirai corn:

There are so many interesting dishes around food blog land, I only wish I had time to make everything that I see. I think I’ll start a new feature on BDL: “I want to make that.”
