Announcing the 2011 Keep Your Resolution Giveaway!

We all know that planning meals and eating less processed food is the way for us to attain our newly minted health goals for 2011.  I love taking classic comfort foods and making them healthier.  One of my favorite makeovers was macaroni and cheese.  I actually had the best macaroni and cheese at a work pot luck several years ago.  I probably had the equivalent of three cups I just couldn’t stay away from it.

I asked the woman who brought it for the recipe and was shocked that her recipe called for a dozen eggs, and four cups of cheese! No wonder it tasted so good! 😀

I’ve made Clean Eating’s Mac N Cheese and its as close to the real deal as you can get.  And look at the difference in the stats!

So I was thrilled when the publishers of Rocco DiSpirito’s new cookbook, Now Eat This! offered me the opportunity for two of my readers to win this cookbook – and I know most of you are cookbook whores like me – but get this – they are giving me two autographed copies of the cook book to give away!

One of Hannah’s favorite dishes is coconut shrimp – I had no idea that a typical serving is over 1000 calories!  Rocco revamps this dish for a mere 178 calories.  And every recipe in the book is under 350 calories:

Now on with my day from yesterday 😀  I got up early and got to the gym.  Two swim lanes were open – sweet!  I picked the middle one, and about 15 minutes into the swim, a woman stands at the end of my lane and as I get closer she asks “can I share your lane?”  I look over to the last lane on the right, its still empty, I look at her and say “I am kind of slow” to which she replied “then you should be in the slow lane” and pointed to that last lane.  I’ve never heard of such a thing!  So I asked her if she could move my stuff to the end of that lane and she did.  Have you ever heard of such a thing?  It’s not like its the expressway!  I swam 35 minutes without stopping 😀

I was hangry when I got to work.  When I was at Whole Foods I got these multi-grain pita breads – 3 points each.  I made a pita pizza – 1 pita, 1/4 cup pizza sauce, baby spinach, red pepper and an ounce of goat cheese.  I put it in my office’s toaster oven – 15 minutes baked at 350, then a few minutes under the broiler.

At lunch I did 30 minutes of strength training, and then ran a mile.  Sadly though my blood sugar was falling and I couldn’t push myself that hard – I ran the mile in 13:25.  When I got back to work, my blood sugar was 38 😦  So I had two clementines and a banana – still loving that fruit is free!

Lunch was tomato soup and grilled cheese.  I love Campbell’s tomato soup, but its so high in sodium.  This tomato soup could not be simpler to make – and I love how the fire roasted tomatoes give the soup some smokiness.

Simple Tomato Soup 

 
Course: main meals

Ingredients

 
  28 oz canned tomatoes, one diced tomato, one fire roasted tomato
  1 Tbsp olive oil
  3 cup(s) chicken stock
  1/3 cup(s) heavy whipping cream
  1 Tbsp parsley, freshly chopped
  1 serving(s) Hot Sauce, Tabasco
  1 clove(s) garlic clove(s) (medium)

Instructions

Gently heat the olive oil over medium heat and add garlic, taking care not to brown the garlic.
Stir in the canned tomatoes and chicken stock. Bring to a boil.
Remove from stove, let cool slightly. Using a stick blender puree soup. Add in cream and hot pepper sauce, and adding salt and pepper to taste.

 

4 points for two cups of soup - I sprinkled about a tablespoon of goat cheese on top

 And I had a pepper jack cheese and deli ham sandwich on pumpkin seed bread.

When I was at Whole Foods I wanted to pick up some tuna steaks – Tony loves them and I always say we’ll eat more fish/seafood dishes, but I am kinda picky about it.  They didn’t have any fresh, so I picked up this package for $8.99 for two steaks.

They defrosted in our refrigerator all day.  I just rolled the sides in sesame seeds.  Tony likes his really rare, I like mine more medium (although I did end up over cooking mine a tad).  I made a brown rice fried rice on the side, however Tony didn’t approve of my lack of butter and skimpy 1 tsp. of oil.

  9. Ooh, I’d love to win that cookbook! My favorite lightened-up recipe is one for Stuffed Shells I’ve made many times from Cooking Light. My boyfriend declared it “as good as Olive Garden” and so now I make it all the time 🙂 I do use about 1/2 the spinach it calls for, because otherwise I find the spinach flavor too strong.

    (1) Soba noodles with dipping sauce
    Ingredients
    Soba noodles
    Soy sauce
    Wasabi
    Chopped scallions
    Bits of Nori seaweed

    Directions
    1. Prepare the noodles as the package directs. Bring water to a boil, boil them for however long the package says, then drain them and pour cold water over them so that they cool.
    2. Prepare the sauce – mix together the remaining ingredients.
    3. Dip the cold soba noodles into the sauce and eat!

  18. Our family’s favorite mac and cheese recipe has a qt of whole milk, over a stick of butter, about a pound of cheeses, and half a pound of bacon. And that is why I only make it once a year! 🙂

  19. This lasagna with Amatriciana sauce is soooo delicious, and it’s baked in individual portions to keep me in check from overeating 😉 It’s a bit labor-intensive since you’re making your own dough, but the end result (and the fact that it’s just under 350 calories a serving) makes it worth it!

The other night I made an awesome saffron corn chowder that was low fat (practically fat free), but that recipe is in a book, so call me lazy, but I decided to find a link online for a similar dish.     Super Hash Brown Potato Soup

    1 pkg frozen or fresh shred hashbrowns
    (Simply Potatoes™ –Shredded Hasbrowns )
    1 pkg. country Gravy Mix
    (Pioneer Country Gravy Mix)
    1 small onion (browned under broiler) 0/0/0
    2 small cloves of garlic (browed under broiler with skins on) 0/0/0
    2 quarts chicken broth or stock
    4 slices of fully cooked bacon diced

    Add browned onion and garlic to a stock pot. Add chicken stockand bring to a boil.
    Add Gravy mix. Stir together. Let simmer for about 10-15 min. Add hash browns. Cook for as long as you for 1 hour or more.

    Apple Cinnnamon Cottage Cheese Breakfast Bowl
    1/2 cup Cottage Cheese
    1 Gala Apple ( diced)
    59 g. Bite Size Shredded Wheat
    Cinnamon and Splenda Mix

    Add all ingredients to large cereal bowl and mix. Sprinkle liberally with cinnamon and Splenda Mix to taste. Filling and yummy!!

    Cinnamon and Splenda Mix:
    4 T. Splenda or sweetner of your choice
    1 t. cinnamon
    (or use the proportions cinnamon to sweetner you like best)

    I love beef stroganoff, but it is so not healthy! This version is not quite the same, but it is similar enough that if you kind of mix the greek yogurt in your bowl you can get a fair, and yummy, approximation. Personally, I skip the dill and add some garlic to the seasoning, along with a little Worcestershire sauce.

    1 can Cream of Mushroom Soup
    Mushrooms (amount & variety depends on your taste, I used Baby Portobellos)
    6 oz plain Greek Yogurt
    1 tsp Xanthan Gum
    Extra Lean Ground Turkey
    Noodle Substitute: Spaghetti Squash or Shirataki
    Heat soup in a saucepan. Saute Mushrooms in a medium skillet, when finished, mix in with Soup. While stirring constantly, mix in Greek Yogurt and Xanthan Gum. In a large skillet cook Ground Turkey over medium heat. Pour Soup mixture over Turkey and mix together. Eat plain or mix with your favorite low-carb/calorie noodles.

    I got this meatloaf muffin recipe from a Weight Watchers leader. Not only is it lightened up meatloaf, but it’s also individually portioned out! The recipe says 3 points per muffin but I still need to recalculate points using the new system. This is a staple in the house…we’ve made it with beef, turkey and bison!

    Weight Watchers’ Tried & True Meatloaf Muffins
    1 Pound Extra Lean Ground Beef
    4 oz. Zucchini, unpeeled and shredded
    1 Egg
    1 Cup Ore Ida Shredded Hash Browns, frozen
    1/2 Cup Fat Free Shredded Cheddar Cheese
    1/2 Package (3 oz.) Kraft Stove Top Seasoned Stuffing Mix
    1/4 Cup Reduced Fat Parmesan Cheese
    1/2 teaspoon Minced Garlic
    1 teaspoon Worcestershire Sauce
    1/4 Cup Ketchup
    1/4 Cup Onion, chopped

    Preheat the oven to 350 degrees.
    Mix all ingredients.
    Divide evenly into 12 muffin tins (I used a 1/3 measuring cup to divide the mixture)
    Bake 30-40 minutes or until done.
    Each meatloaf muffin=3 points

  43. One of my favorite lightened recipes is a Thanksgiving stuffing. It’s so simple, but by reducing the butter and cutting out the eggs, it’s a light and lovely dish. And, now I want some tomato soup for lunch!

    Both involve bananas, and I am actually hesitant to post them because I’m afraid there will be a run on bananas and then there’ll be a shortage. But I have enough in my freezer that I’m willing to take that chance. Only for you, my lovelies.
    The first is Banana Soft Serve. It’s all over the blogosphere now but Gena is the one who gets the credit. She was the first to do it, and a genius. Simply take a banana or two (I like them on the ripe side) cut them up and freeze them. When they are frozen, pop them in your food processor and let it go for approx 5 minutes. (I have used my blender before but had to add a little almond milk to thin it out a little). That’s it! Ice cream that will rival the best. If you’re feeling crazy, add a little cocoa or peanut butter.

    Green Monster
    This is another recipe that took off like wildfire. But it first appeared on OhSheGlows, and now has it’s own page!
    Take one frozen banana, two handfuls of spinach, and one cup OJ or almond milk or milk of your choice. Blend till smooth. It’s a nutrient powerhouse and fill you up. Great way to get your fruits and veggies in and your dairy too if you use milk. There are lots of variations but that’s the one I use. It’s delicious!

  48. I love this cook book and will look at buying it either way. I also love Eating For Life too, for very basic recipes. Lately i’ve been craving whole foods and grains like crazy. Oranges, celery, zucchini…that reminded me of my recipe. I made it up last week. Turkey meatloaf. Pureed zucchini, 1lb of ground turkey, garlic, salt, Mrs dash table blend, chopped onions, one egg, 5 crushed grain crackers mixed ans shaped, add just a small drizzle of ketchup on top, and bake at 350 for 60min. Extra moist, tasty, and healthy.

    I made a recipe for mayo free chicken salad I saw from Iowa Girl Eats.

    (Mayo-Free) Chicken Salad (serves 3)
    Ingredients:
    6 oz shredded chicken
    1/3 cup dried cranberries
    1/4 cup sliced almonds
    2 green onion, sliced
    2 small ribs celery, chopped
    Dressing:
    1/2 cup plain Greek Yogurt
    1/2 1/4 teaspoon curry powder
    2 teaspoons soy sauce
    squeeze of lemon juice
    salt, to taste
    Directions:
    Mix dressing ingredients and pour over chicken mixture. Toss to coat. Serve!

    Buffalo Chicken Meatloaf

    1/2 cup skim milk
    2/3 cup old fashioned oatmeal
    1 pound ground chicken breast
    1/4 cup chopped onion
    1/2 cup chopped celery
    1 cup shredded carrot
    2 egg whites, whisked a bit
    4 T Cayenne Pepper Sauce (like Frank’s Red Hot), divided
    1/2 cup reduced fat blue cheese crumbles

    Heat oven to 350 degrees. Spray a 9 x 5 x 3 bread pan with olive oil spray.

    Put skim milk and oats in a bowl. Stir and let sit to soften, about 3 minutes. In a large bowl, combine the chicken breast, onion, celery, carrot, egg whites and 2T hot sauce. Add in oats and mix well. Gently stir in blue cheese crumbles. This mixture will be quite wet!

    Put mixture into the prepared bread pan and smooth top. Brush remaining 2T hot sauce on the top. Bake in the oven for 45 minutes or until set.

    Makes 4 servings.

    207 calories, 4.1g fat (2 saturated), 63 mg cholesterol, 918mg sodium, 15g carbohydrate, 2.7g fiber, 27.7 g protein.

  61. I grew up in the Midwest and we had these restaurants called Runza Drive In. My mom made homemade Runza’s which are bread dough filled with a hamburger, cabbage and onion mixture then baked off in the oven. They are super delicious and filling!

    I found a recipe that is lighter, has more fiber and is super easy using frozen whole wheat bread dough. Now I can enjoy these when ever I want. I think in some places they are called Bierocks. What ever you call them they are scrumptious!
