Snow Day!

Our office closed at 3:00 yesterday afternoon and I knew then that I would be off of work today.  It was a scary drive home because it was white out conditions – I could only see about 5 feet in front and behind me, and the road I drive on has a speed limit of 55 – and people were still driving that fast – I was so happy when I finally pulled in our driveway!

I sat in my comfy chair and it was like I was in a snow globe:

The heavy snow didn’t start until around 8:00 at night.  It was so windy!  Here is what our deck looked like around 9:00 p.m.

Then this morning, here’s how it looks outside our back door:

Looks like my exercise today will be shoveling!

Yesterday morning I was driving to work when I realized I never put anything together for breakfast.  I stopped by McDonald’s, and while my brain was saying “I’ll have oatmeal” my mouth actually said “sausage McMuffin please.”  In my head I was like, it’s probably about 8 points.  Um, try 11 points!

For lunch I had two servings of my black bean and pork chili with some fritos for some crunch on top – lunch comes in at 9 points:

Aldi sells these potatoes for .69 cents a can.  They made a quick side dish for dinner – just sauteed them in a cast iron skillet with a teaspoon of butter and threw in some canned green beans at the end.

I marinated pork chops all day in light Italian dressing.  The recipe I was following had a “tuscan” glaze to pour over the chops, but after I made it, it was way too vinegary, so I came up with this mustard sauce.  While I can eat mustard with a spoon, it cam be a bit overpowering for Tony.  The chicken broth cut the bite, but you still had the mustard flavor.

Biz’s Rosemary Mustard Sauce

4 servings (about 1/8 of a cup) 1 Points Plus

  • 1 tablespoon butter
  • 1/2 cup chicken broth
  • 1/4 cup Dijon mustard
  • 2 tablespoons skim milk
  • 1 teaspoon lemon juice
  • 1 tablespoon orange juice
  • 1 tablespoon chopped fresh rosemary

Put all ingredients in a skillet and cook over medium heat, stirring to combine and simmer for 10 minutes.

these chops were huge! (that's what she said). I had about 5 ounces of pork chop

Then poured the mustard sauce on top: Dinner comes in at 10 points.

Stats for Tuesday:

  • 34 points (including Tony’s famous popcorn last night)
  • no exercise
  • average blood sugar 107

So in total we got about 17 inches of snow.   I’ll be spending the day shoveling, snow blowing, and I’ll certainly be Bizzy in my Kitchen – I have plans to make artisan bread and bagels. 😀

Oh, have to share a proud Momma moment – Hannah made the President’s Deans List for her first semester in college.  And just this past week, she got 52 out of 50 on her first math quiz this semester – go Hannah! 😀  So proud of you!

I hope everyone stays warm today – and sorry for the East Coasters because I think the snow is coming your way!

  1. We just have ice here in Ohio. 😦 There’s a bit of snow blowing around but nothing that appears to be sticking. Nice snow drift! It’s nice to be able to work at home when the weather is crappy, but then if your office closes, you still have to work!

  2. You should get a Noble Prize. You are a genius. I NEVER would have thought of using canned potatoes that way. You have rocked my world and I can’t wait to try it!

  3. Yay, Hannah! What a great accomplishment!

I’ve never thought to saute green beans from a can! Great idea! And potatoes from a can are so easy to use! Love it!

    Enjoy your snow day!

  4. I always get a kick out of seeing patio tables covered in snow – they look like they are wearing a hat! Glad you didn’t have to go to work in that mess – stay warm and enjoy your cooking day. 🙂

  5. Yepppppp, we are getting pounded with snow right now! Snow day for me too, but I don’t actually have classes today, I was just supposed to work at my office for 2.5 hours.

  6. Oh my WORD that is so much snow! We have a couple inches of ice…..our county is on a travel watch (or warning?), and basically said you shouldn’t be out on the roads unless you have to be. Um, okay – I’ll stay home and bake with my niece! 🙂 Be careful when you go out next. And YES, shoveling will most definitely be a HUGE workout! I can’t imagine shoveling that many inches….

  7. oh congrats to your daughter! How nice it is when they make us proud like that!!

Can I just tell you how many times I have gone up to order something and my mind is saying something healthy and point friendly, but then my mouth utters something entirely different? lol

  8. I snorted some coffee after reading “that’s what she said” about the chops! LOL

    Have a fun snow day!

  9. Congrats, Hannah!!! You should be proud, mama! 🙂
I have a snow day, too. Cleveland weather isn’t much better!

  10. Yea for Hannah! The mustard sauce looks good! Happy shoveling! We’re in a deep freeze, it’s like 23 below windchill here.

  11. Congratulations to Hannah!

We are in the midst of the snow now. Been out twice so far with the snow blower to keep it manageable. It can stop now…

  12. Wow, that’s a lot of snow! None here…let’s just say the groundhog saw a nicely defined shadow today…before the wind whisked him away, that is!

That mustard sauce sounds so yummy! You are the QUEEN of on-the-fly creativity in the kitchen! (By the way, did you notice that Paula Dean was the Grand Marshall of the Tournament of Roses parade this year? That reminded me of you & your Halloween costume, and made me chuckle.)

    Stay warm & cozy!

  13. Lucky you on your snow day. I drove to work in ice. Yep, we got an ice storm. Snow on Saturday. It’s the winter that won’t go away!

Enjoy your bonus day off…mmmmmm I can smell the bread and bagels now!

  14. Congrats to Hannah and enjoy the snow before it becomes yuck and slushy. It gave us cabin fever for a week last month here in the south 🙂

  15. Enjoy your snow day. We did not get snow–only some rain! I’m jealous!

  16. Those potatoes look good! And they are from a can!

  17. I’ve got to go get some pics outside of our house! It’s CRAZY!!! We couldn’t even let the dog out b/c the snow is deeper than he is!

Glad you got home safe – J was in the same boat. Let out about 2:30 or 3 and it took him about 2 hrs to get home. I was so glad when I heard the garage door!

    I love the mustard sauce!

  18. We got about a foot here in the Midwest. Glad I didn’t have to be anywhere!

  19. wow that is a lot of snow!

  20. Enjoy your cozy house and kitchen. I also love the pictures of deep snow – the way it collects on every horizontal surface is so cool. (no pun intended, hahaha) I can’t thank you enough for putting the Points Plus values with your food now. That helps me a whole lot. I’m loving the program – it has so much flexibility built in.

  21. I don’t think I’d ever leave my house if it snowed like that here. Agh!!!

  22. So glad you are safe and snuggly at home! When I heard that the Chicago area was going to be hit super hard, I immediately thought of you. We didn’t get it as bad as I had thought, but it’s still nasty out there! Max has been in heaven. For some reason, the little turd loves snow! Enjoy your snow day!

  23. AW she’s such a smart cookie and hard worker -very cool! ew – i’m so glad you made it home safely – how scary!

  24. That’s SOOOO much snow!!!

Your dinner looks great! I used to make pork chops with mustard sauce years ago. Not sure what happened to the recipe… I think I’ll have to borrow yours some time soon!

    Way to go Hannah!!!

  25. I heard Chicago got hit hard. Enjoy the day today Biz…you deserve it. I had a snow yesterday and it was amazing!

  26. Chicken and anything mustard related are two things I could eat all the time – yours looks great! Glad you got home safe and sound in the snow…

  27. I have a snowday too…looks like your enjoying yours right 😉

  28. Yeah Hannah!!! 🙂

Great job! I am enjoying my snow day too!

  29. oh my goodness! That is a LOT of snow! Stay warm over there! Your chili looks delicious. I can’t get enough chili right now. Fritos are a fun topping 🙂 Congrats to Hannah!!!!!!

  30. isn’t this weather nuts! ours is so wet and foggy. i love the mustard sauce you made for those chops, yum!

  31. I am soooooooooooooo over this winter….this morning I had to go to work and we had ice all over the place, so dangerous!

is it bad that I crave that mcd’s bfast sammie? lol

  32. WOW honey, that is a great deal of snow. Other than going to the Mountain I have never seen this much snow before. Stay warm and safe!

  33. Congrats to Hannah! That made me smile!

You are living in a snow globe – oh my goodness. Hope it warms up soon and melts all the white stuff. I am day dreaming about Spring.

I have never bought canned potatoes, who knew they could look so good.

  34. Congrats to Hannah, that is so awesome.

That is a lot of snow Momma. Wow. I never understand why people think they can still drive the same in those conditions and then wonder why they wipe out or crash into someone else and wonder why.

Dinner looks good, but y’know…I have never been able to do those canned potatoes. They never tasted quite right to me.

Hope you all are well and Tony is doing good. Please give him our love [you & Hannah too!]

  35. I about died when i saw the words Rosemary and mustard in the same sentence. I have a mustard, garlic balsamic sauce that i make once in a while, but i love rosemary and was just thinking i wish i had a few more recipes with rosemary, and viola. So thanks. I’m excited to try that one out, might even do it tomorrow for lunch.

Can’t believe you had that much snow, that’s we normally get here, but it must have headed your way because we’ve just had sunny days…-22 sunny days. When it snows it’s more like +22 so i don’t mind the snow because the cloud cover makes it 40 degrees warmer. Still that is a crazy amount of snow.

  36. Weighting For 50

Way to go Hannah!!! And holy crap…..that is a WHOLE LOTTA SNOW!!!! Great pictures (despite the fact the snow itself makes like difficult). Take care and stay warm if you can!!!!

  37. Yay, Hannah!! You’re one smart cookie. Congratulations!

  38. Glad you got home safely. I’ve been getting lots of extra workouts shoveling and chopping ice. I love winter but admit I’m looking forward to spring…only 44 more days…
