I’ve talked a lot about how much I love my no rise pizza dough.   You just mix it, roll it and bake it.  I made some dough the other day and I’ve come to a conclusion.  The longer it sits (up to a week) in the refrigerator, the better it gets.  When I woke up yesterday morning I planned on making a carrot and cilantro soup for our work lunch.  I was grabbing the carrots when I saw the dough and put it on the counter for about a half hour.

The soup recipe sounded so good – and healthy – two cups for only 5 points. The only problem?  Um, it tasted like jarred baby food.  Nothing I did brought it back around, so luckily I had some buffalo chicken chili in the deep freeze and immediately went to plan B and put some potatoes in the oven and decided we would have chili baked potatoes instead. 😀

So I rolled out the dough, put some sauce on it, sliced up some red and yellow peppers and then added 3/4 of an ounce of the cranberry chipotle cheese Tony brought me the other day.  As I was taking it out of the oven, I realized the only thing breakfast about this pizza was that I was eating pizza for breakfast!  I consider the peppers to be a veggie serving though. 😀  My “breakfast” pizza comes in at 10 points.

This is what our weather has been like the past few days . . . I need some sun!

The only saving grace is that I think we’ll finally hit some 70 degree weather over the weekend – I have yet to cook on the Weber grill this year! 😦

At the gym I did the StairMaster on level 10, for 35 minutes.  Holy cow I was a sweaty mess after that – I did the “interval” setting, so you never know how fast its going to go.  I did have to pause it a couple times to catch my breath.  I did 105 floors. 😀

So here is our Plan B lunch – an 8 ounce baked potato, 1/2 cup of my buffalo chicken chili and more of the cranberry chipotle cheese – its so good!  Lunch is 10 points.

So why the title of my post?  Big changes on the work front.  I wish I could go into detail, but let’s just say my office is a sinking ship.  While there is a rescue boat for me (which is a good thing) the boat isn’t able to save everyone I am afraid.  The changes will be swift and its going to get pretty ugly the next couple of weeks, but hopefully I’ll make it to dry land in one piece.

I am proud that with all the stress going on, I haven’t gone off plan this week!  No “my blood sugar is low” pieces of chocolate, french fries, etc.  Well, I did have a few glasses of wine last night, but I guess that’s to be expected with everything going on. 😀

I had some chicken breasts that needed to be cooked up.  While I really felt like ordering a pizza, we grilled some chicken.  I used one of my grilling sauces our friends gave me for my birthday last month.  This is so good!  Thanks D&D! 😀

It’s only 25 calories a tablespoons and so flavorful.  I had that with some leftover mac n cheese I made for Hannah last week – hope she doesn’t mind that I took it! 😀  Dinner comes in at 9 points.

Today is Friday Firsts!  I haven’t participated in a while. . . I am linking my baked falafel dish to Christina this week.

I guess it’s time to get ready for work.  All I know is I am wearing jeans today.  😀

  2. so sorry about all the changes you have to deal with. Tough times…but keeping your goals in the front of your mind should help you weather through it! Besides….with Tony’s cancer scare and subsequent days that have followed that, you have rocked! No reason you can’t do the same. 🙂

    Ugh…I can absolutely relate to the weather woes. Same here. They are saying 70’s for the weekend, but honestly, I cannot even remember WHAT 70’s feels like…its been winter here for almost 7 months now! YUCK! I want to grill too!!!

  3. Wow- those plan B potatoes look pretty rocking. And the pizza is a fabulous use for the cheese Tony got for you- yum! Sorry to hear about work :(. I hope everything works out for the best. Change can totally be SO stressful. I use exercise, coffee with friends and naps to deal with it 😉

  4. Absolute craziness is what you’re having to deal with – fingers crossed that you AND your lunch buddies all end up on the same lifeboat. Hate that you are having to deal with something like this now.

    I don’t to change all that well (reference: coconut M&Ms), but for some reason I either go in the direction of uber-efficient and organized, or pretty much off-the-rails. Hope you are a little more even-keeled (ha – another boat reference) than I am.

  7. Hate change! Always have and although I’m better about it now, I think I always will. I deal with it through prayer and taking time to realize that no batter what happens, everything will work out in the end even if it takes a LONG time. I hope this transition is as stress-free as possible for you. So glad you have a rescue boat! I hope you new job will be as great as this one.

  10. I suck at change. I tend to freak out a little. But if I keep things as “normal” as possible, I feel better about it.

  11. So sorry to hear about the workplace. We had the same last year, and though I was in the lifeboat, some of my friends weren’t, and it is VERY hard for them but also those of us left behind. I feel for everyone!!! Hang in there!!! Change is hard, but good things can come of of it eventually! Take care of yourself Biz, have some fun this weekend!!!

  13. I go through the stages of change really quickly, usually skipping right over denial as I find it sadly unproductive. I try SO HARD to look at WIIFM (what’s in it for me) and focus on the positive. Immediately. How can this be a good thing?! Then I embrace it and roll with it and act like it’s a wonderful idea! haha (so maybe I do denial – on the backend?) Best of luck getting through your change – so glad you have a rescue boat but do wish it was bigger. boo. 😦

  16. I adjust to change pretty well, but nights of wine and ice cream and or chocolate usually help. Sorry your work situation is not going well, but I’m glad that you’re going to be safe from whatever is going on! Hugs 🙂

  21. I’ve always kind of been a person who welcomes change…I always did like challenges. I wonder what is going in your work but I hope you survive it for the better. From what I know of you anyway you are an incredibly strong and brave person, so I know you’ll be in one piece! 🙂

  22. Biz, I know I’m late (I’m catching up with blogs finally!) but I’ll be thinking about you at work. I had some serious work related stress while I was on my trip (let’s just say it looked like my employer was going to furlough all of us for an indeterminate period of time) so I know it’s not fun!
