I love balls.

After having pumpkin scones almost every day last week, I went back to an old standby – the bagel sammie!  1 small onion bagel (the only time I’ll do onion anything), 1/4 cup egg beaters, 1/2 ounce swiss cheese and 1 oz. deli ham.  A delicious 9 PointsPlus breakfast that kept me full for hours.

I actually got the idea for my zucchini meat balls from Rocco’s Now Eat This cookbook.  But the recipe called for charring a small eggplant, and then after the eggplant cooled, scraping out the seeds and then using only 1/4 cup of the eggplant flesh and reserving the rest for another use.  First of all, I hate eggplant, and second of all, the remainder of the eggplant had I used it would just be thrown out in 3 weeks the next time I deep clean my refrigerator.

Biz’s Zucchini Meat Balls

  • 1 ball – 2 points, 2 balls – 5 points, 3 balls – 7 points

Ingredients:

  • 1 zucchini (mine was 6 ounces)
  • 8 ounces ground beef (I used 20% fat – nice!)
  • 1 clove garlic, minced
  • 1/4 cup egg beaters
  • 1/4 cup fresh basil
  • 6 tablespoons grated Parmesan cheese
  • salt and pepper

I made the mistake of putting all these ingredients in my food processor, so the balls are not as firm as they should be.  Everyone likes firm balls, right? 😀  Next time I would process everything but the meat, and then mix the meat and zucchini/egg mixture together.

But the flavor was amazing – so I had 3 balls, a 1.5 ounce roll (I hollowed out some of the bread from the roll), 3/4 ounce of mozzarella cheese and homemade marinara sauce.

I cooked the balls in about 1 teaspoon of olive oil and mostly Pam.

Then I assembled my sammie at work.  I nuked the balls for 1 minutes.  Then put the balls on my roll, put the marinara over the top, and the cheese and put it in my office toaster oven on broil for about 5 minutes.

You guys have to try these balls.  I am sure they would be a bit less points with leaner meat, but these were so tender and delicious.  I did add crushed red pepper to half the ball mixture – I preferred those better. 😀

On the side I had watermelon and papaya.  Lunch comes in at 10 points.  But I learned a valuable lesson – papaya tastes like the bottom of a bird cage – ew!  Never buying that fruit again!

I did my 50 minute walk at lunch – turns out I walk a mile in 15 minutes – I am going to try to pick up the pace this week.  It was a gorgeous day – 75 degrees, sunny and breezy.

Over the weekend Tony and I grilled a marinated flank steak – our store marinated it and it was so good.  We had leftovers, and I morphed them into the best taquitos last night.  I had 3 corn tortillas, 2 ounces of chopped meat, .75 ounces of cheddar cheese, 3 tablespoons of refried beans.  I added 1 teaspoon of canola oil in my points because I deep fried these, but I’ve said it before, since our fryer holds the temperature well, nothing is really greasy.

On the bottom I had a romaine salad with cucumbers and just used my smoked salsa as a dressing – such a delicious 9 PointsPlus dinner. 😀

Stats for Monday:

  • 29 points exactly, no wine 😀
  • 50 minute walk at lunch
  • 25 minute Shred at 8:45 last night because I said I was going to do it 😀
  • average blood sugar 132

Biggest Loser finale tonight!   I hope either Hannah or Olivia wins. 😀

Have a great Tuesday!

  1. That meatball sandwich looks AMAZING! Really delicious – will have to give it a try! 🙂

  2. Your balls are kinda small 😀
That is awesome that you did the shred so late, wtg

  3. oh no! I love papaya! Its definitely a unique taste though- a love it or hate it. The balls sound awesome! Love adding veggies in unexpected places. Hope you have a fantastic week

  4. I love Rocco’s balls, I mean your balls. Great inspiration! The taquitos look awesome too!

  5. Oh, and while I kinda WANT one of the sisters to win, my bets still going with Irene to win biggest loser.

  6. The taquitos look delish! Great idea that I’m going to try. I saw that you hit your points, so “no wine”. If only they made wine that didn’t cost 4 points! 🙂

  7. I don’t like papaya either! Those meatballs really do look good. I bet they could be made with ground turkey or chicken and be just as tasty.

I was talking with a friend at the dojo about walking because she heard I walked an entire marathon really fast and I told her that it’s like anything else – the more you do it, the better and more effiicient you’ll get at it. Just push a little and I bet you could move right down to 14:30/mile!

  8. Those meatball sandwiches look so good! I always have way too much zucchini once summer hits, so I’ll have to keep this recipe in mind.

  9. Mmm your balls sure do look yummy!! I would never think to add zucchini to them. I also really don’t like papaya at all, but I’ve seriously been going through watermelon like it’s my job!

  10. Bleghhh papaya is nastyyyyy. I was thinking that to myself as soon as I saw you were eating it…and then I read your important lesson. 😀

Love the ball jokes, because clearly I have the sense of humor of a 12 year old boy!

Did you know egg beaters sometimes have onion powder in them? That’s all I can ever taste!

    • What??!! Onions? I didn’t know that, but then again, I don’t taste it either – and Tony and I are pretty good at detecting the damn onions in everything. 😀

  11. mmm your balls look delicious! 🙂 hehe

As I flew home from FitBloggin I was able to catch up with all of your blog posts, however I was not able to comment (no wi-fi on my damn plane!) I just gotta say how much I enjoy reading, drooling, and laughing as I visit your blog! I really do love it!! 🙂

  12. Surprised you didn’t make melon balls to go with your theme, lol!

I like dried papaya, but then again, it mostly tastes like sugar, so that could be the reason.

  13. This post made me laugh. A lot. 🙂 I love your idea of adding the zuchinni to the meatballs. Going to have to try this trick. J. Alabama hates veggies and won’t eat them if he knows they are in there. Sneaky sneaky!! 🙂

    • Be careful though – I’ve made a meatloaf for Tony and I pureed celery and carrots into it to “healthify” it. Um, let’s just say after two bites, he was like “is there fucking vegetables in my meatloaf?!”

  14. lol…yes, you do love your balls don’t you?? 🙂

I bet they would be awesome with ground turkey. I have a love/hate thing going with eggplant. Some times I love it, other times I hate it. It can be bitter. Not a fan of papaya either. Give me mango and I am good to go! Love mango.

Have a great day Biz! Hope your weather is being more cooperative with grilling these days. I actually got to grill last night ( before the swirling tornado clouds passed by…lol) too!

  15. Nice balls Biz!!! (you are HILARIOUS!!) Have a great, ballsy day!

  16. You seriously winner the prize for best blog post titles. I love it!
I think it’s a great idea to add zucchini to the meatballs – I’m definitely trying it!

  17. I love balls too! 🙂 Usually I prefer those made of cake and coated in chocolate, but right now I’d kill for yours. Or the taquitos. I’m starvin Marvin–I gots to eat! Oh yeah, and I agree with you on the papaya. I’ve never had one that didn’t taste like barf to me. I always figured that we just can’t get good ones here but I’m not so sure any more. If I ever go on a cruise, I’m going to try the papaya and see if it tastes different.

  18. She’s got big balls! He’s got big balls! <— do you know that song Biz?

Your papaya comparison made me spit out my coffee! I actually really like it but had to laugh at your bird cage bottom comment.

  19. Those meatballs sound seriously good… .love the zucchini. I bet they were super moist because of it!

  20. I ❤ your blog titles. 🙂

I'm not sure how I feel about papaya. I figure the ones that I try here are probably not the freshest so I'm going to continue sitting on the fence until I try one one plucked from a papaya tree. Or bush or whatever they grow on.

  21. We made marinated london broil on the grill twice this week and I use the leftovers [thinly sliced] in flour tortillas with lettuce, tomato and onion in Pooldad’s lunch.

He still won’t stop talking about those d*mn sandwiches. giggle

And I making your breakfast sammie for the girls tomorrow. The meatball recipe is going to my beloved MIL who always ends up with more zucchini then she knows what to do with because my lovely FIL is a master gardener. Thanks bizzy.

  22. I think you need to book a stand up tour, Missy. Loved your description of papaya, which I agree with totally. Hmmm, balls – tasty, roundish, textured…and tasty! They look fantastic, and dare I say better than most?

  23. Meatball sandwich looks delicious. I love the idea of adding zucchini to the meatballs! I will certainly try that. I also hope Hannah and Olivia wins, but I probably won’t have a chance to watch it until this weekend.

  24. I love Hannah and Olivia too…watching now!

The balls sound amazing…I am going to have to try those!

I LOL’ed at papaya tasting like “the bottom of a bird cage” – I love papaya!! But like you, my mom hates it. She thinks it tastes like vomit?

  25. Haha, balls 🙂

I love dried papaya, and I love frozen papaya in smoothies, but I don’t know if I like fresh papaya because I’ve never had it! Maybe I’ll let my bird try it out first and he can tell me if it really does taste like the bottom of his cage, haha!
