I am sure by now you guys know I like spicy shit.  A lot.  So am stoked to have stumbled upon a few recipes and products to add to my never ending list of things to try.

First up?  Ally’s Buffalo Chicken Egg Rolls.  Holla!  Baked with spicy chicken and cream cheese – and it scores two points with me because I am also a known cheese whore.

A Bird in the Kitchen made spicy zucchini pancakes with green goddess dressing.   Growing up my Dad always made homemade thousand island dressing, but I remember green goddess dressing being one of my favorite bottled salad dressings – all for a girl who only ate cucumbers and carrots.  😀

I have decided that Friday is going to be grilling with Biz at work – this week I plan on making grilled carne asada fajitias with fresh peppers, homemade spanish brown rice and homemade refried black beans.  I have a spicy salsa, but for those who can’t take all the heat, I think I will make Gina from Skinny Taste’s creamy cilantro tomatillo dressing

And WW posted a Chinese BBQ sauce that I can’t wait to try:


  1/2 cup(s) hoisin sauce   
  1/2 cup(s) ketchup   
  1/2 cup(s) diet ginger ale   
  2 Tbsp rice vinegar, seasoned   
  1/2 tsp five-spice powder   
  1/4 tsp garlic powder   


  • Combine all the ingredients in a small saucepan over medium heat. Stir occasionally until simmering.
  • Reduce the heat to low and simmer 5 minutes, or longer for desired thickness. Cool 10 minutes before using (or cool and store in a plastic or glass container in the refrigerator for up to two weeks). Yields about 2 tablespoons per serving.

And K.C. Masterpiece has a new marinade – buffalo!

I can’t wait to find that – I am actually fresh out of my Buffalo Wild Wing spicy sauce – this could be a great substitute.

My meals have mostly been leftovers morphed into something edible.  I had a lone leftover baked potato, so I cut it in half (it was 4 oz.), scooped out the potato leaving about a 1/4 inch skin, then cooked the potato with 1 egg, 1.5 ounces steak, baby spinach and cheese – a filling and delicious breakfast for 8 WW points.

The weather was iffy at lunch, but I went for it.  In my 8.5 mile, 55 mile bike ride it started out cloudy, then really windy (it seemed the wind was in my face the whole time), then rainy and I got back to my office and it was sunny. 😀

I heated up the rest of Tony’s pad thai noodles to make a noodle dish:

  • 2/3 cup pad thai noodles (4 pts)
  • 1 cup diced zucchini (0)
  • 1/2 cup carrots (0)
  • 3 ounces leftover steak (3)
  • 1 cup baby spinach (0)
  • 1 tablespoons spicy szechwan sauce (1)
  • sliced jalapeno and cilantro (0)

Wow, was this delicious – it took me a long time to eat and while I love fresh jalapenos, for some reason some are hotter than others – I could only eat one!

I actually got snacky later in the day which is not normal for me, but even after lunch I only had 16 points, so I had 3 oz. of leftover chicken and a pear.

I talked to Tony later in the afternoon and said “I have ground beef . . .” and before I gave him my options of stuffed peppers/pasta bolognese/blue cheese sliders, he said “loose meat sandwiches.”  So that’s what we had – with waffle fries from Alexia – these were good!  Dinner comes in at 10 points.  And if you are even wondering, no, that isn’t too much mustard. 😀  I think manwich is on the sweet side, but when I add the mustard, its the perfect balance.

After dinner Hannah and I went to the gym.  We ended up swimming for 45 minutes – we did the weighted ring toss and try as I might, out of the 6 rings Hannah would get 5 and I would only get one – she’s a fast swimmer!  The only time I got more than one is if she gave me a 3 second head start. 😀  I would do lap swims in between – it doesn’t really feel like exercise because its so much fun.

We stopped at a frozen yogurt place – I had an unphotographed no sugar added peanut butter yogurt with fresh strawberries and a tablespoon of mini-chocolate chips for 6 points – delicious!

Stats for the Day:

  • 35 points
  • 55 minute bike ride at lunch
  • 45 minute swim after dinner
  • average blood sugar 123

A shout out to all my Chicagoland readers.  My friends BIL is battling non-hodgkin’s lymphoma, which is a cancer of the blood.  He’s single and the medical bills are piling up around him.

  2. I just love the look of that Thai noodle dish. Great photography… And grilling at work??? Real grill or inside? Do post that.

    Such a nice thing the tavern is doing. Tough world when billions are being spent almost daily in Afghanistan but nice people need to depend on kindness of friends… If I were ranting on my site, I would start talking about the audacity of hope and not in a nice way…

    But I digress. Thanks again for helping me out. You are kind beyond words

    I’ve had runs like that bike ride, where no matter which direction you turn, it feels like you’re always into a headwind. Not fun, but I figure you’re getting great resistance training!

  19. oh man, i wish you could have had the enchiladas i made for dinner tonight! they had a serious kick with the amount of chili powder, cumin and peppers i put in there!!! my mouth is still on fire, and it’s been 3 hrs since i ate! hehe!

    and great swim! i wish i had the guts to get out there and swim…but my left shoulder doesn’t rotate correctly so it makes swimming hard…boo.
