Tony Cakes, Grilled Cherry Salsa, Jersey Mike’s and a Winner!

Tony has been wanting to make me johnnycakes, which I aptly named Tonycakes. 😀  He adapted a recipe by adding chopped bacon and chopped fresh jalapeno. 

Tony Cakes – this makes 14 cakes at 4 points each

  • 2 cups white cornmeal
  • 1 teaspoon salt
  • 4 tableless unsalted butter, melted
  • 1 cup milk
  • up to 1/4 cup boiling water to get the right consistency
  • 4 slices of bacon, cooked and chopped
  • 1 jalapeno, chopped

Combine the conrmeal, salt and butter together.  Add the milk and enough water to make a moist but firm batter.  Mix in the bacon and jalapeno.  Drop by large spoonfuls onto a hot griddle, flattening slightly with the back of the spoon.

The first bite my mouth expected pancakes, but its anything but the texture of a pancake.  His recipe said “serve with honey, or maple syrup.”  I reached for my sugar free Smucker’s syrup (best sugar free syrup in my opinion!) and this dish sang.  You get the salt from the bacon, the crunchy texture of the cornmeal, the sweetness from the syrup and then the bite from the jalapeno – so delicious – thanks for making breakfast Tony!

 Tony and I did our grocery shopping on Saturday, and of course my first order of business when we walk in is to see what’s on the dollar rack.  I lucked out with rainier cherries for $1.00!  I only had to throw out about six from this whole package.

I rewrote the recipe because this time I doubled the amount of cherries, lime juice/zest and cilantro.

Grilled Cherry Salsa

  • 4 tomatoes, divided
  • 1 jalapeno pepper
  • 3 cloves garlic
  • 2 cup cherries
  • 1/2 cup fresh cilantro
  • juice of two limes
  • zest from two limes
  • 1 tsp. kosher salt

I did this on my gas grill.  Just char three tomatoes, the garlic, jalapeno and cherries – it took me about 15 minutes at a temperature around 350.

Let the cherries cool, then pit the cherries and add all the ingredients to a food processer and puree.

I am really LOVING this salsa – the sweet heat combo is a winner. 😀

We also tried out a new sub shop on Saturday – I’d never heard about it before, but the lines have been long so we waited for it to die down a bit.

They actually hand sliced the meat as you ordered the sandwich – and it was pricey – Tony and I each got a regular sub and it was over $15 with tax.  And it was huge – I was only able to eat half of it, but the best part other than the quality of the meat?  Cherry pepper relish!  I am going to have to recreate that.

This was a great sub – I liked the bread better than Jimmy John’s and if any of you have a recipe for cherry pepper relish, please let me know!

And then we went to the Fundraiser for my friends BIL – although I read the flyer wrong – I thought it was from 11:00 to 1:00 p.m., so Tony and I got there around 12:15 . . . and knew no one, so we just had a nice lunch at the bar.  Um, turns out the flyer read 11:00 a.m. to 11:00 p.m.!  Oh well, I did get to eat 21 points of nachos:

crispy tortilla chips, cheese, guacamole, sour cream, black olives and chili - oh my!

And this place has the best chicken fingers. ever.  We didn’t eat them there, but brought an order home just to bulk up our bill for the fundraiser – maybe if I put one on a salad I can make it work into my lunches this week! 😀

And lastly, I want a tiny dog.  Like my SIL just got – his name is Brutus and he’s only 3 pounds!

I only get them every great once in a while but they are SO worth it. Deliciousness. I like a medium sized dog. Frank weighs 60 pounds and hes a great height

  6. I have always wanted a beagle if I ever got a dog. So, mid size dog. Although honestly I prefer cats much better. They are just easier and I love them!

    AND I MADE A CHERRY SALSA just this weekend too!!!

    I left mine rough cut, no puree, and topped a steak. Same colored cherries (oooh aah pretty)

  8. I’m happy with my lab, I think a little dog would be really cute and fun for cuddling, but I think we’ll always have big dogs.

    And I’m drooling on my laptop over those nachos!

  10. I’m a cat person too… but we had a little 10 pound Shih Tzu for a few years that adored me so it was hard not to love her back!

    Jealous of your Rainier Cherries. As I walked past them in the grocery store this weekend, at 5.99 a pound all I could do was stare longingly.

  11. I LOVE MY TINY DOGS. they’re the sweetest little companions and easy to care for. They also live so long – heart that.

    I love jersey mike’s – their turkey is so fresh it’s like thanksgiving.

  12. I’ve never had a dog, always been a cat person. But I tend to prefer the personality of a big dog. The next door neighbor does have a little dog though that I love so I do know there are nice little dogs. I hope whatever you decide you are happy with it 🙂 Love the grilled cherry salsa recipe might have to try that 🙂

  13. Gotta love the big dogs! The little ones are nice too but I always feel like I’m going to step on them. Besides hubby and son (6′ – 6’1″ and built like linebackers) look really silly when walking a little dog.

  15. We have 4 small dogs. 2 standard dachsunds( a wire and a smooth), a cairn and a westie. They are a handful. We have 3 Jersey Mike’s where I live. I love them. I used to love Jimmy John’s when I lived in Ontario, Canada( I’d drive to the one in Michigan), but I burnt myself out on them. Sign up for Jersey Mike’s texts and emails. They send great coupons. Btw, a mini turkey and provolone has 8 points. The WW restaurant book doesnt show the regular size. I just count it as 10 points.

  18. Wow, you got the deal of the CENTURY on those Rainier cherries! They are usually around $10/pound here – I feel bad enough paying 4 or 5 bucks a pound for regular cherries so I never get them. That salsa sounds out of this world good!!!

    And I’ve never had a “Tonycake” but I love cornmeal and they sound crunchy and good!

    I think tiny dogs would be the best combo of a cat and a dog – small and cute like a kitten, but they can’t jump up on your counters! The smallest dog we had was a dachshund and when she was a puppy she weighed less than a pound. ADORABLE!!!

  23. These is nothing like a tiny dog under the covers to warm your feet at night. I have always had a chihuahua, probably since I was 5 yrs old, they have always slept with me, under the covers at my feet. Love it! Besides, it saves my husband from having to warm my feet for me!!!

    Brutus!! oh my, he is a little cutie! (great name, too!) since I currently have a little 14 – pounder Long Dog named Basil, I’ve got to be in the small pup club. I grew up with dachshunds, so it’s what I’m used to. My first apartment in college, though, I had an Alaskan Samoyed – he was BIG! 🙂

    • I had a rather hard time choosing just one type of physician I would want to work for. So many of them fascinate me, and with me not really going into any medical field other than support, I never gave this any thought in the past. After reading the list, I am more favorable of working for a neonatologist. It is difficult to think about how neonatologist physicians sometimes have the most difficult job in the world, but I can only imagine how amazing it would be to be a part of saving a baby’s life. I had a coworker once whose baby was born at 36 weeks, and her baby had a lot of heart and lung problems. There were concerns about whether or not they would ever fully develop once she had him, but after many months in the NICU, and many scares that happened during it, the doctors were able to save him and he is now a very healthy 5 year old. It is because of that I have a higher interest in the neonatologist field.I hate to say which type of physician I would care less to work for, and it is because I worry that many will take it the wrong way. When I was 16, I used to help my mom at an assisted living home as a caregiver. We would get to work at 7:00 A.M. every morning to prepare breakfast for four of the elderly men and women that we were caring for. We would then make sure that all bedding was changed, rooms were cleaned, meals were prepared, and appointments were handled. We worked 12 hour days, and they were always grueling. The owner of the home made sure that everyone had their medicine and made it to their doctor appointments on time. However, she was more worried about getting paid for her services than actually helping the elderly. She would yell at them if they did something wrong, and even call them terrible names. My mom reported her and we both quit our job, but it has always left a sting in my heart since then. It is because of my experience with that situation that I do not think I could ever work for a gerontologist. I know that the situations would be much different, but ever since my experience with caring for elderly individuals it is very hard for me to think about assisting a physician in geriatrics because I worry that someone else might treat the elderly in the same way the owner of the home did. I am a firm believer that the elderly deserve the ultimate care and comfort when going through any treatment and aging in general, but I do not think I could ever work in that environment again.
