Week 7 of 101 Days of Summer!

Hey guys – I woke up late, didn’t make it to the gym 😦 so no new post this morning.  Am I the only one who worries when a regular blogger doesn’t post?  I usually think “oh great, she’s been in a car accident!”

I plan to walk at lunch and do 30 day shred tonight – have a great Monday!

I am so happy to have our power back so that I can have a good week.  I’ve planned all my meals, I know its going to be hot in our neck of the woods so I need to get to the gym in the morning in case its too hot to work out at lunch.  I need to power through and lose more than .6 this week! 😀

A couple weeks ago Tony was flipping through the channels and happened to stop on Ina Garten’s show – she was making baked eggs and Tony told me he wanted to try it.  It’s really super simple, yet so flavorful!

Baked Eggs with Fresh Herbs

  • 2 tablespoons skim milk
  • 1 teaspoon butter, divided
  • 4 eggs, divided
  • 2 tablespoons shredded Parmesan cheese
  • 1 teaspoon fresh rosemary
  • 1 teaspoon fresh thyme
  • salt and pepper

In an oven safe bowl, put one tablespoon of milk and 1/2 teaspoon of butter into two separate bowls.  Heat your broiler on high – put the bowls on a cookie sheet and put under the broiler for about 3 minutes, or until the butter and milk are nice and bubbly.

Carefully remove the bowls – add two eggs to each bowl (they start to cook almost immediately!) and then sprinkle 1 tablepoon of Parm, 1/2 teaspoon of rosemary and 1/2 teaspoon thyme, and then salt and pepper.

Return to the broiler – I cooked Tony’s for 5 minutes so the yolk was still runny.  I cooked mine for 9 minutes and the yolk was perfectly cooked.  These were so flavorful – and each one is only 6 PointsPlus!

These would be great to make for a brunch if you were having a bunch of people over. 😀

So my SIL came over around 3 yesterday and we headed to my Mom’s house.  I have to give Jody props – she lost 3 pounds this past week, she’s been great about using eTools and she’s walked a mile a day – so proud of you Jody – keep up the great work!

I really like that tank top I am wearing – I bought it at a garage sale for .25 last week – its super comfy, and somehow I am going to try to even out my farmers tan!

We had a great time, we walked around a lot, had some good food and enjoyed each other’s company. 😀

On the menu this week:

Breakfast

  • breakfast nachos
  • homemade pretzel bagel egg sammie
  • cinnamon apple breakfast risotto
  • zucchini and smoked goat cheddar omelet
  • spicy oats

Lunch

  • roasted red pepper and chickpea soup with spinach apple salad
  • salsa verde chicken enchiladas with spnaich mexican rice
  • spaghetti squash frittata
  • Italian sausage soup with macaroni
  • grilled chicken with Vietnamese peach relish (can’t wait for that one)

Dinner

  • smoked ribs with baked beans and green beans
  • spinach and beef taquitos with refried beans and mexican rice
  • apple glazed pork chops with baked potatoes and broccoli
  • pecorino crumbled chicken with polenta
  • steak and shrimp kabobs with brown rice

    This was a wonderful week – went on vacation with my boyfriend, and while the food wasn’t always the healthiest (of course), I did pack up some healthy snacks and made good choices at at least some of the restaurants. I discovered the key to healthy eating on a car trip is definitely a cooler – perfect for yogurt, carrots, and baba ghanoush! We also got in a ton of hiking – fun!

  3. Jeez, who knew spaghetti squash were so deadly? 🙂 I cannot wait for your pretzel roll recipe, if you have one…and the zuke omelet, even though I hate omelets.

    My week was good – lots of yoga (10 hours of classes!) and some good running mileage. I discovered that there’s TVs in the gym, so I’ve been walking on the treadmills to get my Criminal Minds fix and I can walk about 4 miles in an hour, so that’s a nice way to get some tv watching in and some exercise ( have cable at my apartment, but no TV!). I want to try again for the running group tomorrow (5 miles) because I didn’t go last week because it was 100 degrees! I’ve been using dailyplate to keep an eye on my calorie intake/macros because I do that occasionally, and I can’t tell if it’s a good thing or a bad thing!

    • Yep, I’ll have a recipe – they really didn’t turn out as “bagely” as I thought, but they are still really good – I mean, who doesn’t love pretzels?

  4. Glad you guys had fun in OP! I gained 1.4 this week, but considering being off for 4 days and enjoying several days of my son Mark’s birthday celebration – I consider that a win! It could have been much worse. I also missed a day of exercise, but like you I will have to plan this week since its going to be so dang hot out!

    I have to think of meals that I can cook on the stove this week! No oven for me 🙂

  5. oh my gosh! I’ve never seen a squash explode like that! Glad you had fun with your Mom, sister & Hannah! The top is cute. And pecorino crumbled chicken with polenta sounds awesome. Egg bakes are such a great go to. I actually like making them for dinner. I’m not making a lot of new stuff this week, but am excited to make spanikopita burgers

  6. Your spaghetti squash explosion is so funny-thanks for the laugh! The baked eggs look good, but I think I’ll wait for the temp to come down before I’ll turn on my broiler. OR- I could just take them outside to bake 🙂

    I’ve been doing great! I said goodbye to WW & am finally feeling good about my choices. I’m working out everyday – sometimes twice a day. I’m satisfied with my foods for the week & am overall happy. It’s been a long time coming. Today I even took my t-shirt off at the public pool – it was just me in my bathing suit. I haven’t done that in years!

  13. Something about that exploding squash made me laugh, and i think it has more to so with my morbid sense of humor than anything else. I had no idea you could do that the microwave to begin with. Sorry i’ve been so hit and mainly miss. Just thought i’d check in with some friends before this baby comes and things get a little …unpredictable i guess would be most accurate. Love all of your great meal plans as always, and they help me when planning mine. Thanks, and i also love that tank. I had a top just like that but the print was smaller making it look almost like a fussy tv screen but with color.

    I know you are getting a little frustrated with the .6 pound losses but they are steady and consistent so don’t get discouraged because slow and steady is the way to go. Keep up the good work and stay cool.

  16. I’m right there wondering & worrying about my friends who post regularly and then… don’t. I’m so consistent, when I don’t post or am a few hours behind, I actually get emails & texts from people wondering if I’m okay!

    oohh — I have a spaghetti squash to be used for dinner on Wednesday, praying it isn’t an exploding spaghetti squash like yours!

    I was down 3.2lbs at weigh-in on Thursday (http://losingit1.wordpress.com/2011/07/14/weekly-weigh-in-grandmas-cookies-edition-rachel/) and even though I had a fun-filled birthday weekend (eating out twice, Harry Potter and a bridal shower), I think I made pretty good choices and was back at the gym this morning sweating my butt off.

    Those baked eggs looks delicious. I might have to try those tonight if I have the ingredients!

    And you look awesome in that tank top. Your arms especially!

  18. I know what you mean – when bloggers don’t post, the first thing I think is that something horrible happened….and then I realize that I need to calm down….lol. I love your tank top. It’s so cute (plus, you’re rocking it!) The exploding spaghetti squash make me laugh! I think it has something to do with it actually blowing the door open!

    Hi Vat. Holy exploding squash batman!!!! And it blew the door of the microwave open??? Wow!!! Love that you took a picture of it before it was cleaned up!   21. I’ve had a spaghetti squash explode but mine made the whole microwave “furry” on the inside. My FIL was also visiting so I got to hear all about what I did wrong. lol.

  22. Your food pictures/descriptions are always drool-worthy! Yum!

    I got in all of my workouts this week! I even added in a 2.5 hour canoe trip – so much fun and I can’t wait to go again. 🙂 For the second week in a row I gained though – I’ve been eating too much ice cream! I’m still feeling good though and I’m trying to stay focused this week before I leave for vacation on Friday. 🙂 My goal is to add more veggies!
