How to Make Homemade Frozen Pizza

If I were to only have one type of food for the rest of my life, I think I could survive on pizza.  I mean, there’s breakfast pizza, reuben pizza,  Mexican pizza,   the possibilities are endless!
I wanted to help my friend out by making some food for her husband while she has surgery.  I figure everyone loves pizza!  I ended up making six pizzas for him – two Mexican pizzas, two sausage and pepperoni and two sausage, mushroom and green pepper.

I used a different dough recipe – this one only needs to rest for 30 minutes.  And I’ve never made a dough with beer in it before!

Quick Beer Pizza Dough (from King Arthur Flour)

  • 4 cups flour
  • 2 teaspoons (or one packet) of yeast
  • 1 teaspoon baking powder
  • 1 1/2 teaspoons salt (next time will add 1 tablespoon)
  • 2 tablespoons olive oil
  • 1, 12 oz. can of room temperature beer

Mix the flour, yeast, baking powder, salt and olive oil in your stand mixer.  Turn it on just to combine then pour in the beer – let the machine knead the dough for 7 minutes.  Let dough rise 30 minutes before using.

I made three batches to make the six pizzas.  To make homemade frozen pizza, make sure whatever toppings you have are cooked – especially the meat.  Prebake the crust at 425 for 10 minutes.  Remove from the oven – add your sauce and toppings and cheese. 

Then I put that pizza on another pizza pan and put it in the freezer to flash freeze.  By the time the next pizza was ready to freeze, it had been in there 20 minutes – I just wrapped them in foil and then stacked them in my downstairs freezer until I was ready to go.

I taped instructions – just cook like any other frozen pizza – 425 for 12-15 minutes.

That’s the Mexican pizza – the base is refried black beans with enchilada sauce, with taco chicken, black beans and corn with pepper jack cheese.

That’s how the pizza looks after being frozen 20 minutes – its hard enough to wrap up and not break.

And of course, since I had pizza on the brain, I had to make one for me and Tony for lunch. 😀  My side was sausage, pepperoni and green pepper – Tony loves black olives on his side.

Hannah and I ended up going to the gym yesterday afternoon – we swam for 45 minutes, then hot tubbed – it was nice to catch up with her – she’s been so busy working, house/dog sitting, babysitting, cleaning houses, I don’t see much of her.

  13. Yum. I’ve never considered making whole ready-made frozen pizzas – I usually just make dough and freeze them, thaw and make into a pizza. My latest recipe ended up yielding 8 frozen personal pizza sized dough balls.

  20. what a great idea to make homemade frozen pizza! hey, I have a suggestion for you…visit your local bake supply shop and get some of those cardboard circles they use for cakes…then freeze on them and they will help support your pizza! 🙂

    I have yet to be disappointed by any recipe I’ve used from KAF! this one looks like another keeper!
