Popcorn Flour Pancakes and Weekly Holiday Challenge Update

I don’t even know where Tony heard of this recipe, but this one is a winner.  And it was nice to just sit back and have breakfast made for me. 😀  And these are perfect if you are following a gluten free diet.

Popcorn Flour Pancakes (haven’t figured out the points yet!)

  • 4 tablespoons butter
  • 2 teaspoons baking powder
  • 3 cups popcorn flour
  • 1/2 teaspoon salt
  • 2 tablespoons sugar
  • 1.5 cups milk
  • 3 eggs
  • 1/4 tsp. cinnamon

Melt butter in a bowl and let cool slightly,  Mix the dry ingredients in a bowl, in a nother bowl, add remaining wet ingredients to butter.  Add wet ingredients to dry ingredients and mix well.  Using a 1/3 cup measure, pour batter into a non-stick pan and cook about 3-4 minutes per side.

So I am sure by now you are wondering, how the hell do you get popcorn flour?  We had popcorn the other night and I made way more than we would eat.  Tony at first thought to just put the popcorn in the food processor, but it didn’t make a fine enough flour – so Tony went to Plan B. and used our coffee grinder to get the right consistency.

While these didn’t fluff up as high as my normal pancakes, these were delicious – you could really taste the popcorn in the pancakes!

So how is the Holiday Challenge going?  I started the week out with a bang, working out at least 90 minutes each day until Thursday when Tony and I had to run errands at lunch and when I took Friday off, I didn’t work out.  I had plenty of opportunity to do something yesterday, but didn’t, so I need to get that exercise mojo back – stat!

  1. Mum…that sounds unusually good. lol. I told my sister about it, and she mentioned using the Jalapeño popcorn that we bought at Big Lots yesterday. Now that would be weird.

    Popcorn pancakes, who comes up with these yummy recipe ideas? I am not that creative but that sounds delicious. I will have to try that next time I make popcorn. I bet kettle flavored would make some awesome pancakes.

  3. I had a so, so week. I went out to lunch or dinner with friends the last 4 days! That put a hurt in the wallet and healthy eating, but I’m somehow still losing. I really need to up the workouts though.

    My goal for this week is to making better choices if I do find my self going out to dinner with friends again. I hope you have a great week Biz!

  4. I’ve been doing awesome getting to the gym, but I’ve been eating way more than I’m burning. This week my goal is to STICK to my meal plan, prep the night before to make it easier, and try to juice every day (this goes along with the prep piece). I’m ready to make it a fabulous week!

  8. Okay – call me a dolt – but what exactly is popcorn flour? Do you just ground up popcorn? ‘Cause I think I’ll pass, no offense. [I am allowed to skip one of your recipes right? heehee]

    I am not participating in the challenge, but I have to say I am proud of myself for finally buying the protein powder I was told to buy to get more nutrients in my diet – and although it has a bit of an after taster [think Ensure, which I won’t drink] I have managed to adde it to a couple of other things to get it in my system. Does that count?

    • You just pop popcorn and then grind it up – it’s that simple. I remember my dad drinking ensure – while he said it tasted okay, it always had a weird smell to me – hope the protein powder shakes fatten you up! 😀

    Hi Vat. WOW….you and Tony are VERY innovative. Popcorn flour? I’d never have thought of grinding up old popcorn, but I bet the result was delicous!!!!!! Sorry, I’m so behind in my challenge update. Great on the water, less great on the tracking. VERY ready now that our anniversary, my birthday and my trip to see my parents are all behind me, to get back to home cooking and tracking. Hope you’ve had a great weekend.

  13. Hi all, I had a fantastic week. I am running again after the broken rib saga. I am pain free and feeling great. Disney Marathon training is on again! I have been incorporating even more fruits and vegetables into my diet. I’m drinking lots of water. Snacking at work was minimal this week. I feel like I’m back on track again.

    I got all of a sudden super busy with different work projects, and, unfortunately, didn’t get to work out as much as I wanted since Friday… 😦 Makes me not feel good. I will somehow have to make it all fit into my day…

  17. Hi Biz! Been doing pretty good with the exercise but so-so on the food. Met my quarterly athletic event goal by running my 4th Pumpkin Run! That’s the race that started all the fitness fun!

    Glad you’re going to ask your doctor about your insulin dosage. After reading about your lows lately, I suspect that might be a combination of weight loss increased exercise. Hope they help you get it just right. You might also check out Dr. Shari Coberg’s blog, she writes a lot about managing exercise and insulin-dependent diabetes.

    Glad you had a good weekend–I read every day, but sure do miss being able to comment as much as I’d like!

  18. Popcorn flour pancakes just blew my mind! I’ve always preferred sweet popcorn to savory so I think I’d like this.

  19. It was such a busy week. Other than my 15-hour day today, I do have to work 6 days this week…but it will be shorter days than 15 hours, so that’s good. I have been working TOO much lately, it’s not good. My workouts have really suffered and with so much travel….so have the eats. I am back on track this week and loving it! Cheers to a great week! And P.S. popcorn flour!? So creative!!!!

  22. So interesting… I have to try this out of curiosity more than anything!

    Ugh – my week. It’s been busy, but running was a must a few days & I felt GREAT! I really wish I had a more consistent schedule with running because it’s become my cheap therapy for sure!

    Other than that – it’s been a bake off at my house. I’ve been baking for Natie’s birthday – 50 cupcakes for school & my work. Then his cake for this weekend celebration with Grandma & Papa, then more cupcakes for his school’s Halloween party & my work. Of course I’m partaking in these celebrations. 😛
