Bagel Wednesday?? And A Giveaway!

Hannah’s car had to make a trip to the repair shop yesterday morning, so I traded my over time Tuesday night and came to work late yesterday.  The day definitely goes faster when you don’t to work until 11:15! 😀

We stopped and picked up bagels on the way home – at Great American Bagel you get 13 bagels for $7.95 on Wednedsay.  Um, check out this one!

Somehow we got 15 bagels, not sure how that happened, but they freeze well.  As I started putting them in the freezer bags, I could tell that some were way heavier than others, so I weighed all 15 bagels.  Yep, call me crazy!  The smallest bagel was 4.5 ounces (which is what I ate at 9 points) and there were two asiago cheese bagels that topped in at 8 ounces!

It helps to have a food scale – it’s the difference between eating a 9 point bagel and a 16 point bagel, which is huge!  And since we are starting into that crazy holiday season, I thought I’d do a quick pre-holiday giveaway.

This scale can weigh up to 11 pounds (why that much, I have no idea!) and it has a “tare” button – which means you could add veggies to your bowl to find out the weight, hit the tare button and the scale goes back to zero so you can add the next ingredient.

I use my food scale on a daily basis, and realize when I don’t my “eye ball” 4 ounce portion is leaning more towards 7 ounces!

I was fascinated with all your comments yesterday on the Paleo diet.  So I’ve compromised and decided I am going to give the Paleo diet as close to 100% as I can for two full weeks.  Two weeks with no grain, no dairy, and no alcohol.  I will also be introducing strength training to the mix too – this all starts November 7th so wish me luck.  Until then, I’ll be the woman with a bag of potato chips and box wine. 😀

I originally intended this dish to be my breakfast, but it looked more like a lunch to me.

Chicken and Spinach Stuffed Pepper

1 serving:  322 calories, 10 fat, 21 carbs, 3.8 fiber and 34 protein (8 WW points)

  • 1/2 yellow pepper, precooked in the microwave
  • 4 ounces raw chicken
  • 3/4 cup tomato sauce (I had no sugar added marinara sauce)
  • 1/2 cup baby spinach
  • 1/2 teaspoon of Italian seasoning
  • 1/2 teaspoon of crushed red pepper
  • 1 ounce fat free feta
  • 1 egg
  • salt and pepper to taste

In a skillet I put the chicken, sauce, spinach, Italian seasoning, crushed red pepper and salt and pepper and simmered it for about 10 minutes until the chicken was cooked through.

I stuffed that mixture into the pepper, leaving room for an egg (the first egg didn’t have enough room and spilled out on my cookie sheet!).  Sprinkle with feta cheese and bake at 350 for 15 minutes, or until the egg is done to your liking.  Sophia, I know you’d bake this for just a few minutes because you love a runny egg!

Tony and I both ate late lunches so we weren’t really hungry for dinner.  We ran a couple errands, got our flu shots and later in the evening I made us a cheese, sausage and cracker plate – definitely a non-Paleo diet dinner!

  1. I’ve actually been looking at that food scale on Amazon for a couple weeks.

    My next goal is 10 lbs by Thanksgiving- hopefully in the 250’s by the New Year.

  2. I think it’s a good idea to ease into the paleo. I like the no grain and no alcohol. I think you’ll start feeling awesome with just doing that. Dairy, MY personal opinion is that I need it. Be sure to be taking calcium!

    What will you replace bagel wednesday with once you’re grain free? Vegetable Wednesday?

  3. Oh, by the way. The first few days without the grains will be the hardest. It’s like your body is going through withdrawl and you will CRAVE them. Get through it and you’ll be fine. If I have wheat now, I crave it for days, once I’m off, no cravings and it’s all good. Make good plans for meals and leave nothing to chance!

    Are you able to have polenta? Because I made meal the other day with a polenta “crust” topped with a bunch of veggie that tasted very much like pizza. It’s fork food though. I did add cheese too so that might be out of the question for you. Maybe you’ll want to try it for Friday night “pizza” night. I’m quite sure that Tony wouldn’t touch it with a 10 foot pole though. Let me know!

  4. Good luck with your paleo diet – I have never had much luck with restrictive diets. That’s why I like Weight Watchers. I’m still going for my one pound a week loss until the end of the year. Didn’t do so well this week because I spent four days at a quilt retreat and let me tell you quilters love to eat!

  10. My goal is to get back to walking/running….I have not worked out since May! I used to wrk out 5-6 days a week. I moved across the country in May and have not got back into the swing of things yet. Good luck on Paleo, I have a few friends who have done it…i think it would be to restrictive for me 🙂

  11. The scale looks awesome! Ok, one thing I would love to accomplish before the end of the year is to add a jog to my daily walks. Even if it’s just a quarter of a mile, I’d really like to get this added in.

    Good luck on the diet- I doubt I could do it…Ha! Who am I kidding? I know I couldn’t–I’m not eating meat anymore. Well, except that day that I made your incredibly delicious gumbo!!!!

    Now I have to go back and read the paleo post. I tried “primal/paleo” for a couple of weeks and I felt really good…wasn’t hungry ever. I might have to give it another whirl. But not until after my vegetarian friend leaves.

  14. Oh my dear, a good scale would be so fantastic. I have one but it’s not the greatest and only goes up to a couple of pounds and when spliting up the meat and all it would be nice to go just a bit further.

    One goal I would like to accomplish before the end of the year is to be able to run 5 miles in under 10 min/pace. This used to be no biggie for me, and now it is a biggie. But as I get smaller and healthier, this is a doable and exciting goal : )

    I use my food scale everyday for the same reason. I can’t live without it. That and the ridiculous amount of measuring cups and spoons I have.

  23. That bagel looks so yummy!!!! I freeze all bread here as we don’t go through it fast enough and I like it t be fresh. I love my food scale as well. I’ve used it so much that I’ve gotten good at eyeballing high calorie items (cheese, almond butter). I also use it when I make bread or measure out flour so I am not scooping out 12 cups of flour over and over.

  25. I can’t wait to hear how the Paleo diet goes for you. You are so honest and down to earth. My mini goal is to not replace Facebook with Pinterest 🙂 but it appears it’s going that way. But I have been thinking about getting a scale to start weighing out food, my son just left for college and I’m finding I’m making and buying way too much food. My goal before the end of the year is not lose 10 of the 30lbs but leave them somewhere never to be found again! 🙂

    We’ve been in our house since 07, slowly remodeling it. I’d like to have the walls decorated with real pictures (esp. since hubby gave me some for our anniversary on Monday). I know it sounds really simple, but there are other minor touches that have to be done first; so really I’d like to do the touches and THEN hang the pictures.

    I’d also like to decorate for the holidays and put them away before the end of January rolls around.

  29. Last summer I hit a plateau in my Crossfit training and my trainer said that if I really wanted to lose that last bit, that I needed to add weight training. So that and Paleo- took that last bits off. Plus I feel so much stronger, and no, women do not get big if they are doing it right. Hang in there. Email me if you want to really grumble about it!! We can have a grumble fest! I almost died on my net climb today- I looked down and went into a huge panic and almost threw up. Ugh!

  31. Everyone says this but I really would feel better with 15 lbs less. I’ve commited to simple and fresh prepared meals in the process. I’ve taken up bicycle commuting and dropped the alcohol, but grains sounds like too hard for me…

  32. I was looking at food scales yesterday, so I will enter. My goal is to be under 200 by the end of the year (it’s only 7 lbs!)

    As for Paleo, I love it. I do more Primal low carb. Main thing, when you quit the grains, be sure to check your blood sugar often since you do insulin. Without those carbs, it will be lower so you will need to adjust.

    You will probably feel 1000x better after the 1st week though….the first week kinda sucks with the wheat withdrawal.

  55. I should try Paleo with you. I already get sick when eating wheat and had to cut that out. It couldn’t hurt to try cutting out more grains. I’ll read up on it!

  57. Whoa!!!! That is huge variation in the bagels. I use my food scale a lit too…probably not as much as i shoulf, but at least several times a week. I love the Franzia photo…too funny!!

  61. My goal is to walk every day, no matter how long it is. I have peripheral artery disease and I am supposed to walk. The claudication in my calves really hurt a lot even after 5 min. of walking, so I sometimes end up doing a number of short walks. The claudication should improve in time with the walking and some pounds should come off, too.
