Things are Going to Get Bizzy!

Work is getting super busy.  I am pretty much non-stop all day, so my little breaks here and there to check in on you is going to be gone for the next couple weeks.  I’ll try to stop by when I can, but just wanted to let you guys know my blog reading/commenting is going to be fewer and farther between. 😦

I actually love being busy doing something constructive.  The days of standing in front of the copier all day make up for helping my boss prepare for trial.  As Tony will attest, I leave all of my organization skillz at work and don’t bring any of that home! 😀

I tried another almond flour pumpkin pancake recipe – I am going back to the drawing board on this one – that batter was too thick, slightly gummy – but I did like the apple cinnamon coconut syrup – tasted like apple pie!

I haven’t run the numbers for any of my meals yesterday either! 😀

Sorry for the horrible picture too – I took exactly two pictures and that was the best of them. 😀

I had leftover butternut squash soup, sans the shrimp and a grilled chicken salad on the side –  this was a filling lunch!

I thought I might have to work late last night, but I didn’t.  Driving home I could not remember what I had on the menu.  I walked in the door, looked at my menu planner and saw “bacon wrapped scallops.”  Only one problem – I didn’t have any scallops.  The store Tony and I went to didn’t have any scallops, but I thought I’d pick some up later in the week but completely forgot.

So Tony came up with Plan B!  Bacon wrapped shrimp!  Salt and pepper shrimp, wrap each one in 1/2 a piece of bacon, brush with a touch of teriyaki sauce and bake at 425 for 10-15 minutes, or until bacon is cooked.

On the side I knew I wanted stir fry veggies, but wanted to make a more “Paleo” sauce.  In a pan I squeezed the juice of one orange, zested about 1/2 an inch of fresh ginger, added 1/3 cup of beef broth, and 1 teaspoon of this product:  gochujang.  I always think of Sophia when I see this in my fridge!

The result?  I very light and spicy broth to pour over my shrimp and veggies – it was delicious!

I worked through lunch so I never got any exercise in.  It was technically a rest or light cardio day, but I missed Monday’s workout and was going to sneak it in.  Today I have to go into work early and may have to work late – fingers crossed I don’t though!

  1. I hear you! My time is out of control right now too! mmm- I’m totally making BN squash soup next week too. I can’t wait. And the shrimp look perfect. Hang in there!

  2. Good luck with your busy days ahead – keep your head in the exercise and healthy eating game, even though I know that can get damn hard sometimes!

  3. How bizarre to get to the end of a Biz post and not see a bunch of numbers…er, stats! Sounds like you are in the “keep your head above water” thick of it – keep focusing on the most important stuff (food intake and hopefully you will have time for a little exercise), and you are going to be just fine.

    I’m not as crazy busy as you, but with my part-time job AND the holidays AND my kids coming home, I’ve got lists going out the wazoo in order to keep my head on straight!

    It’s been a busy couple of weeks over here too. I seem to always be doing something but then feel like I’ve accomplished nothing. I don’t even want to think about the holidays lurking just around the corner.

    I also love the salad and soup combo. I think I will start doing that since I found bringing just soup maybe with fruit doesn’t do enough for lunch.

  8. I used to work in a law office and I hated when things got to the trial stage. The coppier and I were BEST friends during those times! The one benefit – it sure made the day fly by!

  10. Bacon wrapped shrimp – I’m in! I find a cup of hot soup at lunch to be so filling and satisfying. It’s a crazy time of year and it’s just going to get busier as the holidays approach.

  14. It’s a busy time of year in general! It seems to come and go in waves, though. I am ready for the holiday, that’s fer sure!

  15. I am busy too but for me it’s laundry, scrubbing toilets and volunteering at the school. As usual your food looks great. I am amazed you can come home after a long day of work and make such a delicious, nutritious meal. To have a good dinner I usually start at about 3:30 so that between helping kids with homework, it’s on the table by 5:00.

    Your comment made my DAY. I am aware there are much better writers than myself, but in order to come across as me I have to use my own voice. As much as I love others style I know it wouldn’t ring true for me. I try and put thought into these entry’s because they are a journal for my family, but I also would like if possible for others to learn something, feel validated, or maybe just get a laugh.   20. I totally understand the busy thing with less time for the extras, like blogging. I have been very busy since the move, and of course more furniture showed up yesterday so my weekend just got a little busier. Let me know when you perfect an almond flour pumpkin pancake recipe. I have some almond flour here that is in need of using.
