I was flipping through the Jan/Feb issue of Cooking Light, I came across a recipe for Mini Bacon Egg Tarts (page 169) in their budget cooking section.
I have the Heatlhy Life 35 calorie bread so I made my own version – perfect to make up a batch of these on a Sunday for a quick reheat in the toaster oven for later in the week.
Biz’s Ham, Spinach and Egg Tarts
- made 6 in a jumbo muffin tin
- 121 calories, 4.3 fat, 8.75 carbs, 3 fiber and 11.5 protein – or 3 WW Points each
- 6 slices low carb bread
- 1/2 cup skim milk
- 2 eggs
- 1/2 cup liquid egg whites
- 3/4 cup chopped baby spinach
- 2 ounce deli ham, chopped
- salt and pepper
- splash of Frank’s hot sauce
- 1.5 ounce cheddar cheese, shredded
Heat oven to 425. Spray muffin tin with Pam. Carefully press each bread into the muffin tin, bake for 10 minutes.
Mix remaining ingredients together, except cheese. Equally divide mixture between the bread bowls, dividing the cheese over the top evenly. Reduce oven to 350 and bake for 15-20 minutes, or until the eggs are set (ours took the full 20 minutes).
These were so good – the tops of the bread were nice and crunchy, while the bottom was almost quiche/souffle like – yum!
I think later in the week I’ll have one of these with some sauteed apples with a bit of brown sugar and butter – still will be only 6 WW points for breakfast. 😀
Hannah and I were able to hang out a bit between a babysitting job early yesterday morning and her regular job in the afternoon. We both went to sign up at the cheap gym – I forgot that this gym has t.v.’s on all their treadmills – nothing like watching Food Network while getting your sweat on!
Dinner was Biz solo dinner for one again – Tony had a baked potato. 😀 I ended up making Cooking Light’s Szechuan chicken stir fry, except making the dish just one serving – I also added broccoli and bean sprouts to mine. And I left off the peanuts so I could have some rice – this dish comes in at 12 WW points.
I’ll leave you with this picture that makes me want to pee my pants every time I look at it. With all of Hannah’s babysitting money she wanted to buy a small laptop that she could take back and forth to school – Best Buy was a bust, the ones they advertised weren’t there, and she really wanted to see it before buying it.
Anyway, we walked over to the Mac’s – which is really on her wish list but isn’t gonna be happening any time soon, and they have this app that is a photo booth where you can change the effects.
