Ham, Spinach Egg Tarts

I was flipping through the Jan/Feb issue of Cooking Light, I came across a recipe for Mini Bacon Egg Tarts (page 169) in their budget cooking section.

I have the Heatlhy Life 35 calorie bread so I made my own version – perfect to make up a batch of these on a Sunday for a quick reheat in the toaster oven for later in the week.

Biz’s Ham, Spinach and Egg Tarts

  • made 6 in a jumbo muffin tin
  • 121 calories, 4.3 fat, 8.75 carbs, 3 fiber and 11.5 protein – or 3 WW Points each

  • 6 slices low carb bread
  • 1/2 cup skim milk
  • 2 eggs
  • 1/2 cup liquid egg whites
  • 3/4 cup chopped baby spinach
  • 2 ounce deli ham, chopped
  • salt and pepper
  • splash of Frank’s hot sauce
  • 1.5 ounce cheddar cheese, shredded

Heat oven to 425.  Spray muffin tin with Pam.  Carefully press each bread into the muffin tin, bake for 10 minutes.

Mix remaining ingredients together, except cheese.  Equally divide mixture between the bread bowls, dividing the cheese over the top evenly.  Reduce oven to 350 and bake for 15-20 minutes, or until the eggs are set (ours took the full 20 minutes).

These were so good – the tops of the bread were nice and crunchy, while the bottom was almost quiche/souffle like – yum!

I think later in the week I’ll have one of these with some sauteed apples with a bit of brown sugar and butter – still will be only 6 WW points for breakfast. 😀

Hannah and I were able to hang out a bit between a babysitting job early yesterday morning and her regular job in the afternoon.  We both went to sign up at the cheap gym – I forgot that this gym has t.v.’s on all their treadmills – nothing like watching Food Network while getting your sweat on!

Dinner was Biz solo dinner for one again – Tony had a baked potato. 😀  I ended up making Cooking Light’s Szechuan chicken stir fry, except making the dish just one serving – I also added broccoli and bean sprouts to mine.  And I left off the peanuts so I could have some rice – this dish comes in at 12 WW points.

I’ll leave you with this picture that makes me want to pee my pants every time I look at it.  With all of Hannah’s babysitting money she wanted to buy a small laptop that she could take back and forth to school – Best Buy was a bust, the ones they advertised weren’t there, and she really wanted to see it before buying it.

Anyway, we walked over to the Mac’s – which is really on her wish list but isn’t gonna be happening any time soon, and they have this app that is a photo booth where you can change the effects.

I give you Biz and Hannah as Chipmunks!  Happy Monday!

Off to the new gym. 😀

  1. I get to watch my kids from above in the pool while at the gym. My little one waves and smiles big when he sees me. So cute.

I never would recognize you as a chipmunk.

  2. LOVE the photo of you and Hannah!!! 🙂

I usually watch the Food Network when I do cardio at the gym. I’m always smiling when I watch a not so healthy cooking show… 🙂

Happy Monday, and have a great week!

  3. I love being able to watch TV while I run indoors! Totally passes the time! I love the idea of making bread cups. And that last picture is awesomeee

  4. I’ve been making a similar “tart” for years and love them for their portability to work. I usually just reheat it in the toaster oven.

    That photo is too funny!

  5. The tarts look delicious Biz.

Sounds like you made a great deal at the new gym. Most gyms near the town I live don’t have cardio equipment with tv’s yet so I ended up watching either discovery or sports when I was at the gym. Not fun at all 🙂

I love that photo, it’s too funny.

  6. The picture of you and Hannah is priceless…you’re both almost unrecognizable!
Those tarts look great – I’m going to whip some up this week for bringing to work. And thanks for including the PP value:)

  7. That stir-fry looks so good, and it’s only 7 am! I am not a savory in the morning person so that’s saying something. “Working out while watching food network” made me laugh. I am always eating food while reading about food. I always pick up old copies of Rachel Ray or Gourmet and read them with my lunch.

  8. Oh my, when I first read this title I thought it said Spam and Egg tarts, hehe.

I love the gyms that have TVs on every treadmill, so you can watch whatever you please!

    • Nothing wrong with Spam! Although truth be told, not sure I’ve had it since I was a child – we always had it on the shelf, but maybe it was the same can for years?! 😀

  9. Tarts look wonderful and sound easy. I’m trying to work new recipes into my life. Thanks for sharing.

  10. Working out in front of the TV is the only way to workout indoors! And personally, I move a little faster when it’s a food show. Maybe I’m subconsciously trying to earn the food that I’m watching!

You guys are so silly! 🙂

  11. The tarts look yummy – what an awesome idea!

  12. Haha – I love watching Food Network while I’m on the treadmill!
And that picture is hilarious. Colin would love that app!

  13. Those lil’ savory tarts are super cute and sound really good!

  14. I LOVE THAT PHOTO!!! Hilarious!

How was the Szechuan Chicken recipe? I ripped it out to make!

  15. Love the new breakfast! I like how the bread holds up – MUST try! Natie would love this too!

That picture is hilarious! It reminds me of when my nephew was little & we’d go to the fair & spend what seemed like hours in the fun house laughing at ourselves in front of the wavy mirrors. 😀

  16. i have always wanted to go to a gym with TVs on the cardio equipment! unfortunately, not at the cheap gym for me…at the expensive one haha

  17. Oh my god, that picture is awful and funny at the same time! Love that you and Hannah have so much fun together!

  18. Ok, I am not going to lie, I love watching the Food Network while working out. Don’t know what it is..motivation perhaps!
That stir fry looks amazing. I love that you made a single serving. I need to work on that. I always seem to make so much food for just me!

  19. Everything looks so good, Biz! I have my new Cooking Light by my bedstand ready to read tonite!

    LOL @ you and Hannah!

  20. HAHAHA! Aw, that photo is adorable. The chipmunk photo I mean.

That certainly is a super easy “tart.” I wonder how it would be like with curry in it.

  21. Love the pic ,too funny! Those tarts look great, good for weekends too!!
I’ve tried to find a cheaper gym, 24 Fitness is close, but they want you to come in before they will tell you how much a month. Totally bogus!

  22. Those little tarts look so good & easy with stuff I always have in the house. Bonus. 🙂

Enjoy your week and the new gym. We have a chain of gyms here offering the same 10$/month special. I wonder if it is all over the US – it is such a deal.

  23. I really love watching the Food Network while working out. It’s way too tempting. It makes me hungry everytime too.

I want to try tarts like that for mornings when I’m in a rush, yum!

  24. Those spinach egg tarts look delicious! I am going to have to try making them 🙂

  25. http://mrschupchake.wordpress.com/

What a fun photo of you two!

  26. One of my favorite things about just cooking for myself is the flexibility to do whatever I want!

That picture is hilarious, thanks for sharing 🙂

  27. Photo booth is a hoot! Carlos and I just crack ourselves up. I swear I have hundreds of photo booth pics courtesy of my little guy. You and Hanna are too cute as chipmunks!!

That is sweet that your gym has TVs on the treadmills. My gym is a no frills place and only $10/month too. It’s huge and clean and has everything I need, but the televisions are mounted to the ceiling and quite far in front of the cardio equipment. I would have to run with my glasses to actually see them!

My husband would love those tarts. I hope Tony is feeling better and stronger each day.

  28. Those tarts look sooooo good, I have really missed your food!
