Breakfast Casserole with Zucchini and Sausage

I have Kelly to thank for this casserole idea.  I did tweak her recipe a bit though – I decided to make a smaller casserole with only 4 servings, and I added shredded zucchini to the casserole.  I love the idea of the refrigerator biscuit bottom layer – never would have thought of that!

Breakfast Casserole with Zucchini and Sausage

  • 4 servings:  419 calories, 23 fat, 24 carbs, 1.3 fiber and 25 protein

Ingredients:

  • 9 refrigerator biscuits
  • 6 ounces breakfast sausage
  • 7 ounces shredded zucchini (2 medium)
  • 3/4 cup egg beaters
  • 3/4 cup liquid egg whites
  • salt and pepper
  • 1 chopped chipotle pepper, chopped
  • 1 ounces of shredded extra sharp cheese

Layer the biscuits in the bottom of a dish sprayed with Pam.  Press down to make a dough layer.  Cook the breakfast sausage until cooked through.  Drain and then layer over the biscuits.  Saute the zucchini and chipotle pepper in the same pan for a few minutes, then add to the sausage layer.  Pour the eggs over top, sprinkle with salt and pepper. top with cheese and bake for 20-25 minutes, or until the eggs are set and the top is golden brown.

This was surprisingly filling.  The only thing I’d do differently is maybe make it the night before and let the egg mixture soak into the biscuits so it would be more quiche like, but this was filling and delicious.  Thanks for the inspiration Kelly!

It was a crappy day outside so no walk for me.  I did get a work project done though so I am happy that is over with. Open-mouthed smile

Lunch was beef and zucchini tostadas.  I am not sure how well you can see the base of the tostadas, but I made a pinto bean puree.  I took a large can of pinto beans, liquid and all, and cooked that over medium heat with about a teaspoon of minced garlic, 1 teaspoon cumin and 2 chipotle peppers.  After 15 minutes I took it off the heat and pureed it with my stick blender.  It was spicy deliciousness. Open-mouthed smile

I have to tell you, those pickled jalapenos and radishes I made get hotter and hotter each day I eat them – these were just on the threshold of being too spicy – even for me!

When I got home I couldn’t remember what I had planned for dinner, so I started to ask Tony what he wanted.  I said “I have stuff to make burgers” and he said “burgers it is!”

I only used half a bun, 4 ounces of ground sirloin, 1 slice of mozzarella cheese, pickles and um, maybe a little bit of habanero mustard on top.  Am I the only one who has three opened bags of fries in my freezer?  How the hell does that happen?!

I never did figure out my calories for yesterday – but I am probably right around 1500.  I did snack on some chipotle sunflower seeds last night while we caught up on our Sunday shows we DVR’d.

Anyone watching Celebrity Apprentice?  Do you want to punch Aubrey O’Day in the face like I do?  I’ve never “met” a more ego centric person in my life!  And I am sorry – Teresa from Housewives of New Jersey?  You did not show America that you are more than just a housewife.

Alright – off to jump in the shower and get ready for work – it looks nice out today so I AM WALKING TODAY!  See, I put it in caps, so that means it’s gonna happen.

Make it a great day!

  1. Have fun on your walk – we’ve got rain here so no outside exercise for me!

  2. Biscuits on the bottom is totally brilliant! What a fun treat. Now I’m in the mood for a burger! Get that walk in

  3. A biscuit crust is a great idea and don’t they make a lower fat version of those? We often have several bags of fries open because we buy different types – sweet potato, seasoned, crinkled, steak, etc. When each bag gets down to about a serving we combine them all too.

I hope you get your walk and your mojo back today Biz!

  4. I had burgers last night too (turkey burgers), no bun. I try to cut way back on grain a few days before my dr’s appts, helps me to not be retaining water. I hate getting on the scale. Ugh.

I also made a frittata-like quiche thing with bacon and chard over the weekend. Instead of biscuits as the bottom layer, you use 2 cups (for a 9×13 pan) of whole wheat bread crumbs (I just use the heels of old bread loaves). I love it and it lasts awhile for breakfast, lunch or dinner!

  5. I guess all of my goals will have to be in CAPS now, since it’s a sure thing and all. Enjoy the walk.

  6. Have a GREAT WALK!! It’s rainy here. I’m so done with this random what the hell season is it weather…spring please!

  7. Too hot for you? Those must be some damn hot pickles!!

  8. Love Celebrity Apprentice! My husband and I were thinking of a drinking game where we take a shot whenever Aubrey praises herself, however we’d probably die of alcohol poisoning! And Teresa is dumber than a rock.

Get your walk in!!!! We’re all expecting a picture of your smiley face outside in the sunshine tomorrow! 🙂

  9. Namaste Mari

I have been craving burgers like crazy and this post didn’t help =) the bfast casserole looks deelish as well!

  10. What a great idea for the breakfast casserole – I’m totally making this!

  11. I watch Celebrity Apprentice. Can’t stand Aubrey! I so don’t want her to win. I might be an episode behind as I watch it on hulu. I was so, so glad that Lisa was fired. She was really a witch too. I hate how Arsenio throws the word “whore” around like the word “chick”.

  12. I always have 8 million bags of opened shit in my fridge, freezer, and cabinets. It’s a mess. Same with jars. I have 2 opened jars of salsa AND sunflower seed butter right now. But usually taht’s the husband b/c he “can’t find” the other one, so he opens a new one.

  13. Your breakfast dish looks awesome! Your lunch…ditto. I like what you did with the pinto beans. We had some fries last night and yep, I had 3 open bags…lol! I have no idea why, I think the hubs grabs the first he sees. Yeah, I’m blaming him 😉

  14. that breakfast casserole would be called ‘hot dish’ at my In Law’s house 🙂 I am glad there is someone out there that loves mustard and pickles as much as me!

  15. Weighting For 50

Hope you had a great walk Vat!!!! Happy Tuesday

  16. The tostadas look delish! Aubrey makes me gag! I like how she asked Teresa “do you want me to do it” – be the hair model that is. She is smart and has a creative mind, but she is so FULL of herself.

  17. I don’t think I’ve really thought of casserole with biscuits!!

Haha, I can’t imagine “too spicy” for you. I guess now they can be used up slowly since a little goes a long way!

  18. Food looks so good, it’s always a pleasure to visit your blog and see what you’ve made this time.

I don’t watch that show because it’s not on Dutch television. I heard about it a few weeks ago when my hub was watching American Shopper on Discovery and they mentioned Paul Teutel Sr. was in the show. Otherwise I wouldn’t have known.

  19. I know this is a little late and all, but I’m just now getting around to reading this post. I love the idea of this casserole! Was it so high in fat b/c of the biscuits and sausage? (I’m still doing the whole WW+, and 10+ is awfully high for me for bfast). I did however think to myself it’d be awesome to put in muffin cups (you know w the biscuits and all) and have little single servings to go! Also always looking for ways to add veggies to as many meals as possible, thank you!
