She’s Gone.

Yep, our car of nearly 12 years has officially died.  Turns out it needs a whole new transmission, but with 145,000 miles on it, it’s not worth getting it fixed.  Tony is going to be checking out some cars for me – luckily we have the car rental for a full week so we don’t have to rush into anything. Open-mouthed smile  I just didn’t expect to buy two new cars within weeks of each other!  Such is life, right?

The first rental car I got had the check engine light on, so I traded it in on my way to work.  The switch was seamless, and to apologize they upgraded my car so this week I am driving the Nissan Rogue.  It’s nice – its like a car/SUV.

Alright you guys – I flew to close to the sun on this parfait combination.  I was out of my homemade granola, but I had some Kellogg’s vanilla cherry yogurt in our kitchen cabinet at work.  My yogurt flavor?  Passion Fruit+kiwi+apple+cherry+vanilla=tastes like ass.  Way too many flavors going on here – I need to remember “keep it simple stupid.”

I actually don’t mind this granola by itself – this one comes in at 343 calories, 4 fat, 63 carbs, 5 fiber and 21 protein.

I had to work right through lunch.  We had a document that needed to be filed and I’d much rather work through lunch than have to stay late.  We finished it at ten minutes to five!  The day flew by.  Lunch was leftover Chinese from the weekend – on the bottom you can’t see is 3/4 cup pork fried rice with 3/4 of a cup of beef and broccoli – I kicked it up with some sriracha. Open-mouthed smile  LUnch comes in at 521 calories, 22 fat, 48 carbs, 5 fiber and 31 protein.

Yep – more Mexican!  Although when I downloaded my pictures I thought “I probably could have added a vegetable on the side.”  Not sure iceburg lettuce constitutes a vegetable.

I chopped up some of the flank steak, mixed it with a bit of Mexican rice and about 1/4 cup of my baja fresh salsa.  Added a bit of cheese and then . . . pan fried it in a bit of oil.  I loves me some crunchy tacos!   Because I fried these, (I ended up eating 2 1/2) – dinner comes in at 560 calories, 34 fat, 18 carbs, 5 fiber and 40 protein.

OMG, I made the best granola last night.  I will post my recipe tomorrow, but I have Nicole’s granola recipe as my inspiration.  I finally got the clumps of granola I have been trying to create!  You will have to stop by tomorrow for the recipe.  The best part?  I made it with sugar free pancake syrup, only 1/3 cup of brown sugar for the whole recipe and light coconut milk!

Tony was watching an episode of Real Sports with Bryant Gumble.  Matt Long was a firefighter that was working the day of 9/11 in New York.  After seeing so many of his friends die, he vowed to stay as healthy as possible and became a pretty accomplished triathlete.  Until he was run over by a bus.  The bus literally had him pinned underneath, and the hit was so forceful, his bicycle seat actually impaled him up to his intestines.

His pelvis was separated from his skeleton, they gave him a 1% chance of even living, and had to replace the blood in his body 4 times before they were able to control the bleeding.  His one leg is now 1 inches shorter than the other.

But 40 surgeries later, he ended up doing the Ironman Triathlon and actually came in 2 minutes before the required deadline of 17 hours.  That’s a 2 1/4 mile swim, 112 mile bike ride and a marathon.  How is that for some inspiration?

I couldn’t find the full video – but here is a snippet of that video – make it a great day!  If you google Matt Long triathlete on you tube, you can find some inspirational videos, as he is now a motivational speaker.  You can read more about him here – he’s also written a book.

  1. oh my gosh! That story is insane! Bummer the parfait wasn’t delicious- it sure looks good. I totally am trying that granola- how fun.

  2. findingradiance

That’s a cute little car (truck??).

That story is very inspiring. Makes you figure you can get your butt out the door and do exercise, doesn’t it? Kudos to him!

    • I’d say its more like a car than a truck – its roomy like a truck but I like the fact that I don’t need steps to get into it like our Explorer!

  3. I have been searching for a lower sugar/fat granola that still clumps! Can’t wait to see the recipe. My car decided it didn’t want to start the other day while I was picking my kids up from school! What a mess…had to get a jump start from the custodian (my dad will be so disappointed that I did not have my own jumper cables in the car!) The weather was terrible, but got a jump and went and bought a new battery. Glad that’s all it was! We made the custodian some cookies for helping us in the rain! It has mega miles on it now, but it’s a Nissan, so I’m hoping it will keep on keepin’ on for a while longer.

  4. What a nice car! Upgrades are always a plus!

  5. Wow, that guy is AMAZING!! Can’t believe it.
Good luck on the new car.
    Everything is better with sriracha.

I saw that episode! The stories on there are crazy! Although Bryant Gumbel’s voice drives me nuts for whatever reason.
I can’t wait to see the granola recipe. I’m on a granola making kick lately. And I make “Baja Fresh” salsa too! 🙂

  7. My favorite thing in the world is granola so I will be here bright and early for the recipe. I love coconut and always add in a ton of it and coconut butter but have never used coconut milk, sounds so good.

  8. Holy cow….just your recap of Matt’s story gave me chills and goosebumps. If I watched any of his videos, I’d be a bawling mess!

    Good luck car shopping!

  9. Sorry about your car but at least now you’ll be able to go in reverse! That story is amazing, WOW!

  10. The car deal, you’re so right that’s how things just seem to go. This is the 2nd year I have opened my pool only to dump money into it because some problem comes up…grrr! Oh well, tis life 😉 The video and story of Matt…amazing. What a strong individual!

  11. Another inspirational person to do a triathlon is “Iron Shad”! He is on dialysis and did the Iron Man. He also speaks inspirationally, I heard him at a conference once. He lived many years without hope but really turned his life around. Also I’ve been looking for a “clumping” granola so looking forward to the recipe!

  12. Wow…what a story. I love this video series 🙂

The Rogue was one of the cars I test drove, along with the CRV and Sportage. I ended up with the Sportage and had to LOL at the 145K miles in 12 years. My car isn’t even 3 years old and I have nearly 75K on it. I drive WAY too much for work, it’s really uncool 😦 So much wasted time and money…makes me sick to even think about.

I can’t wait for your lightened up granola! I will totally be making it!!

  13. 145,000 miles is a BABY!!!!! How on earth did you put so few miles on it in 12 years!?! We always drive our cars way, way past 200,000. My parents’ 1997 expedition just rolled over 400,000 a few months ago.

I like that Nissan, though! J’s family are big Nissan/Infiniti lovers so I’ve driven them a few times over the years since being with him. I really like them. I think once the Jeep goes I’d be open to a Nissan!

    • I usually only drive that car too and from work – my first car? I had it for 8 years and only put 40,000 miles on it! But that was when I used to use the train to get to Chicago.

Bummer about the car – hopefully with two new ones, though, you guys won’t have to deal with any repairs for a long, long time now.

  15. Hate car trouble, mostly because I don’t know jack about them! Hope you find a car that won’t give you problems for a long time!
Oh man, that video left me full of inspiration, what a story. Talk about strength and tenacity! 🙂
Looking forward to your granola recipe, I’ve had a craving for it!

  16. sorry about your car!

I have to give Nicole’s granola a try. I love that you were able to reduce the sugar and still get wonderful results!

  17. Bummer about the yogurt. It looks so delicious!
And sorry about your car! But like you said, it’s not worth it to get it fixed.

  18. Oh I love granola! Can’t wait for the recipe

  19. Cool little SUV! We just bought a Hyundai, mostly because of the fabulous warranty.

Real Sports is one of the best sports shows out there, this is a great story.

  20. Jim and I just had to replace both our cars – a few weeks back mine died on Tuesday his on Wednesday. I sympathize

  21. Another new car, fun! Car payments, no fun. I love watching the videos you are posting, very encouraging. Hope it’s a great weekend for you.
