I jinxed myself.

I woke up fine yesterday morning.  No coughing!  But around 10:00 I could feel the pressure in my chest building again, and by noon my cough was alive and well.  I think its because I finished the prednisone on Monday and by noon yesterday it just wore off.

I’ve been through two z-paks, 3 bottles of prescription cough medicine, a bottle of antibiotics, prednisone, cough pills AND an inhaler, and nothing worked.  So I have a half day today – I have a doctors appointment at 1:00 today and I think the next step is a chest x-ray.

Not joking – my boss asked me if I ever smoked.  I told her I quit 20 years ago when Hannah was a baby (I quit while I was pregnant, but started again when she was six months old when I went back to my part time bar job – I probably smoked another year before officially quitting.).

She told me she knew someone who had a persistent cough, and that it turned out to be lung cancer and she only has six months to live.  I loved that pep talk!  Ha!

I was so excited to pack my gym bag that I walked off without my good camera, so my camera phone had to step in.  Breakfast was 2 corn tortillas, 1 scrambled egg, 1/2 cup baked beans (sounds weird but its delicious!) baby spinach and cheddar cheese.  I love all the hot sauces in the background!

Frank’s Hot Sauce was my hot sauce of choice yesterday – breakfast comes in at 432 calories, 17 fat, 48 carbs, 10 fiber and 21 protein.

It was so good I made another pot of Suzie’s lasagna soup – I shared it with my SIL for one of her lunches this week and also sent some home with my Mom.  My mom brought me a bunch of fresh basil so that was a nice topping!  Lunch comes in at 378 calories, 18 fat, 35 carbs, 2.6 fiber and 18 protein.

I was actually really busy at work yesterday – the day goes by so much faster when I am busy!  I’ve gotten my other boss addicted to my afternoon iced café mochas.  It’s a 25 calorie pack of diet cocoa mix, mixed with coffee.  I mix the cocoa with the hot coffee until the cocoa is dissolved then pour over ice and add about 20 calories worth of whip cream on top – a delicious under 50 calorie drink!

Look at how artistic I was to get my Kleenex box in the shot! Open-mouthed smile

I forgot to defrost meat that I had planned, so it was leftover time – and what better thing to make than tacos!  Two corn tortillas, 2 ounces flank steak, baby spinach and cheese tacos (2).  The side dish is one medium zucchini that I sauteed with 1/4 cup of cooked rice, 1/4 cup refried beans, 1/4 cup canned corn and 1/4 cup of my salsa.  With a splash of hot sauce it was quite good – my cup is 1/2 of the serving.  Dinner comes in at 519 calories, 15 fat, 57 carbs, 8.9 fiber and 39 protein.

When my Mom came over on Labor day she brought me this when she was on her last trip – I think its hysterical!  Thanks Momma!

And because I was feeling sorry for myself last night, I ate flaming hot Cheetos while watching Master Chef – I hope Christine wins it all! Open-mouthed smile

All in all I ended up with 1669 calories, 73 fat, 170 carbs, 22 fiber and 82 protein – a whopping 40% of calories were from fat – I need to fix that stat!

So I had to log into my 5k race for Saturday.  It gave me an option of running or walking and hit the walking button.  I hope I can get something so I can still do it – its four days away so here’s keeping my fingers crossed!

Loved all the comments to my 4 year blogaversary yesterday!  You have until Friday morning to enter to win the light box and Cooking Light for a year.

Oh, and here is my Mom’s recipe for the corn salad she brought – I got several emails asking for the recipe – it was really good!

The recipe:

  • 12 ears of corn, husked
  • 6 tbsp olive oil, divided
  • 1 cup thinly sliced red onion (I left this out just for you!)  Yippee!
  • 1 cup loosely packed fresh basil leaves
  • 1/3 cup fresh lime juice
  • 2 tbsp. chopped fresh thyme
  • salt & pepper

Rub corn with 1 tbsp. oil.  Grill corn, over medium hot fire in charcoal grill, gas grill on high, or as I did it, roasted over open flame on my stove.  It took about 4 minutes to char, turning frequently.  I broke the ears in half to char more evenly.

When cool enough to handle, cut kernels from cobs and transfer to a large bowl.

Place onion in a strainer and rinse with cold water to mellow its flavor (never saw this tip before!).  Drain well.  Mix all ingredients, season with salt & pepper to taste.  Add more lime juice if needed.

I divided the recipe by four, using 3 ears of corn and one whole lime, squeezed, approx. 1 tbsp.

Loved the picture!  It looked very professional.

  2. Your boss is a reallll piece of work. But you knew that already. ::rolleyes::

Good luck at the doctor today – I hope they can figure out why you are still coughing and get you well!

  3. Good Lord – love the comment from your boss – yikes!

You & your hot sauceSSSSSS…. that’s why you need the box of tissues! 😀

  4. Oh i know that cough thing all too well! Make sure you get back to the doc and get back on an anti-inflammatory! I had to go on steroids twice to get my lungs to calm down!
Miss you! Lets have a date soon 🙂

  5. Insensitive as the boss may be, it MIGHT just be something more serious. Hopefully not THAT serious but I’m glad you’re going in for a chest xray. Hopefully it’s just super duper persistent!

Maybe you’re allergic to hot sauce??? 🙂 I think that would be worse than lung cancer for you!

  6. Love, love, love grilled corn!! Looking forward to trying this recipe!! Thank you for sharing!!

  7. Hope you fIgure out what is causing your cough 🙂
The picture of the corn salad looks like it has chopped tomato but I don’t see it in the ingredients – is that what the red is?

  8. oh no! Feel better girl….Interesting comment from the boss. Thank you for the corn recipe. And I need to make that lasagna soup! Fantastic.

  9. Your boss is quite a character! I’m glad you’re going to the doctor’s today. Feel better Biz!

  10. sounds like you need a nebulizer. Sometimes if your lungs are too closed, you can’t get the inhaler in.

    Feel better!

  11. Jeesh, your boss is kind of a Debbie Downer, haha!
Get better and stay better Biz. 🙂 I’m going to be making your momma’s corn salad, I want it for breakfast now!

  12. I seriously hope they can figure out what is wrong.. keeping on going to the drs sounds depressing! And good luck on your 5K – you can do it!!

  13. Your boss is such a breath of fresh air…NOT!! Who says that to someone? Oh wait, an evil gnome that looks just like your boss! I certainly hope you find out whats going on. That cough is hanging on much too long. I’m so glad you like the soup Biz, it’s a fav of mine right now too! The basil is a perfect touch. I need to try your iced cafe mochas, they look incredible! Cheetos…you didn’t invite me??? 😉

  14. Bummer! Sorry you are sick. It seems to be going around.

  15. I think a chest X-ray is def in order! I hate to say this, but you should probably skip this 5k :(. That’s my nursing advice for the day.

I certainly don’t want to spill my wine, so I guess jogging is out for me 😉 Where did your mom go? We have a Morris Farm Market right down the street! It’s not like Morris is a common name or anything…lol

    Get well soon!

  16. I’m glad you’re getting the x-ray to rule out anything serious but Pete’s sake, your boss is an A$$. I hope you retorted something like, “thanks for THAT encouragement – NOT.” Why on earth do people say stupid stuff like that?

    :: rolleyes ::

LOL at the Cheetos… did Tony guilt you into admitting your snacks with his ask Tony segment the other day? 😉

  17. Roz@weightingfor50

Your boss said THAT???? sigh. Hope the x-ray shows NOTHING! And that you’re back to non-coughing Vat before long!!!! I love the jogging/wine coaster. So fun. Take care, feel better soon!!!!!!

  18. Does your boss have aspergers??!!!?? Seriously!

Hope that the x-rays rule out cancer, but helps the doctor figure out what to do to help you recover!

PS…You need to get yourself a camelbak. Will stop the wine spilling right away! 😉

  19. Your boss. People like that really are shitty. Stop and think before speaking? Why would I do that?? Duh.

Plus you are way too nice to her fixing her food and such. Ask for a raise.

Hope the chest x-ray comes out in the clear.

  20. Bizz,

I have read your blog for a few years now…love it 🙂 I have seen your posts about your cough. I have to tell you I had almost the exact same experience! IT was nearly 10 years ago when I went through it. I was in high school (I’m 26 now) and I thought I just had a cold, but then it got worse and turned into bronchitis. I started to feel better but I just could not get rid of the cough. I was literally on all of the antibiotics you were, the zpak; they tried two or three different inhalers. The first one was that purple round one…if you know what I mean? They ended up doing a chest x-ray and a few other crazy tests, my bronchitis turned into a respatory infection, which my doctor determined that it had turned into sports induced asthma. They gave me a prescription for an Albuteral inhaler and I would take Claritin daily. For about two years I dealt with the asthma and used my inhaler on a regular basis, especially during physical activity. After that I slowly relied on it less and less, the tightness in my chest slowly faded and, though it took some time, over time I grew out of the asthma. I was told that this is not that common but isn’t unusual either.
I just thought I’d share this with you because I know I started to get scared of what was wrong with me, and after seeing that your boss gave you such a motivating pep talk, I hope that the my experience may help in some way, even if your outcome is not the same as mine.
I’ll keep you in my thoughts, and send good vibes your way 🙂

    Ames

    • Thanks for all the info Ames! My chest x-ray is done, they said it would take a couple hours to get the results – fingers crossed its nothing more than taking some more meds! 😀

  21. Hi Biz…….naw…….you didn’t jinx yourself, no way. I like what ames said about her experience…..remember what she said and forget what your boss said. I have had a few people in my life play the “scare tactic game”, but it never turned out the way they said. Listen to your Dr and what he says is your best bet.

Going to try that Corn recipe for sure…..I just got done deyhydrating some corn and making freezer corn. Sooooo whilst I am still in the “corn” mood I shall try this one too. I put my “freezer Corn” recipe on my blog. If you would like to take a look it’s at http://www.cards4ubylouise.blogspot.com I will leave there a few days……best corn you’ll ever eat during the winter months, tastes like fresh off the cob GOOD!!

Well, keep yourself healthy so you can inspire us all with your interesting blogs. Will be praying for you, cause God is your great physician and healer of everything. Look how much he has done for your family!!!

  22. ugh I am so sorry the nasty cough is back! 😦 Everyone at my work is sick also, I am hoping to avoid it.

  23. Oops – I did leave out the tomatoes from the grilled corn salad recipe. Should be 2 large tomatoes. I found that coaster at the Morris vegetable market on our way to Kitty Hawk/Outer Banks NC. Bought another one for my serious fisherman cousin that read “Old fishermen never die – they just smell bad”!

  24. Your Mom is awesome, I love the Jogging/Wine sentiment 😉

And I can’t believe I missed your blogaversary! I was kidnapped by all of the first day of school shenanigans. Happy anniversary and I’m heading over there now!

  25. Oh no, hope you’re feeling better soon, it seems like you’ve had that cough forever 😦

    Your lasagna soup looks delish!
