Beer Battered Onion Rings for Two

Guess what was staring in my face every time I went into our lunch room yesterday?

Not just any Cheeto – cheddar jalapeno people!  I must have been in the kitchen half a dozen times yesterday making my breakfast and lunch, and filling up my water bottle.  Um, but guess who didn’t eat any?!  Me!  It helped that my co-worker told me “they probably are stale.”   In any case – I’ll take another NSV yesterday!

Best part about Wednesday?  Bagel Wednesday!  Jalapeno Cheddar with 1 tablespoon light cream cheese and 1/4 cup egg white in the middle.  372 calories, 4.3 fat, 65 carbs, 4 fiber and 19 protein.

I’ve been working on a project at work involving numbers – me and numbers don’t work so well together.  I talked to Tony around 11:45 and told him I was just about to go work out.  I started on my project again and next thing I knew it was 1:15!  I missed my workout window. Sad smile   But I had Nicole’s Lemon Orzo soup for lunch.  My only difference I that I make my chicken stock with leftover chicken carcasses, skin bones and everything – but you can use her version by picking off the meat of a rotisserie chicken.  I also left out the spinach.  Love the tanginess of the lemon!

My two cup serving comes in at:  330 calories, 13.5 fat, 57 carbs, 2.9 fiber and 39 protein.

I hate spiders.  Really most insects creep me out.  Right now?  I have a cricket in my basement.  It chirps all the time until it hears me, then stops, and then when I walk away it starts all over again.  I have no idea how its surviving down there!  When I took this picture, I saw the spider in the corner of the window – I was afraid it was one of those jumping spiders and I got the hockey puck out of there!

I did get a little snacky in the afternoon and found this in my desk drawer – Quaker chewy chocolate mint.  I have no idea how long its been there, the neon green chips kind of freaked me out but it was good and held me until dinner – 100 calories, 3 fat, 18 carbs, 1 fiber 1 protein.

I know just like my KERF post, I am going to get flack about my side dish last night.   You all know Tony and I abhor onions.  Like in just about everything.  That is except for . . . onion rings.  But we are pretty particular – light batter, SUPER THIN rings.  I put the nutrition for these rings without deep frying because alternatively, you could bake these at 450 for 15 minutes.

I’ve also said before that since we use a deep fryer, the oil keeps its temperature and it doesn’t come out greasy – I did add 1 teaspoon of oil to the dinner as a whole, but I doubt that much oil was absorbed.

Beer Battered Onion Rings for Two

  • 172 calories, .36 fat, 33 carbs, 1 fiber 4 protein

Ingredients:

  • 1 large vadalia onion, sliced thin
  • 4 ounces beer (I used Summer Shandy)
  • 1/2 cup flour
  • pinch of salt and pepper
  • pinch of cayenne pepper

Mix the beer, flour, salt, pepper and cayenne pepper together to make a batter.  I did this in 3 batches, but dip your onions in the batter, shake to coat, then deep fry or bake – deep frying only takes about a minute since they are so thin.  When I do them in batches, I under cook them a bit the first time around.  Then right before serving, I drop everyone back in the pool for about 30-45 seconds.  Drain on a paper bag and be sure to salt when they come out the second time.

These came out amazeballs – light, super crunchy – with my 4 oz cheese burger in the back, dinner all together comes in at 585 calories, 19 fat, 57 carbs, 2.9 fiber and 39 protein.

Stats for Wednesday:

  • 1387 calories, 40 fat, 172 carbs, 9.4 fiber and 79 protein
  • 50% calories from carbs, 26 from fat, 24 from protein
  • no exercise Sad smile
  • average blood sugar 178

I am going to see one of my former co-workers tonight while Tony watches the Chicago Bears game – can’t wait to catch up with her!  I am HORRIBLE at keeping up with work relationships if I or the other person leaves.  Doesn’t matter if I’ve eaten lunch with you every day for 3 years – I am so bad about that!

  1. YOU ATE ONION RINGS!? And homemade ones, to boot. I am so proud, Biz!!! It’s true about frying and the amount of oil absorbed. The fryer at the hospital is at the same level more or less, even after a day of chicken fingers and fries for hundreds! And I need to make that lemon orzo soup again….yum!

  2. Great NSV!! And those onion rings look A-MAZ-ING! I had to comment because I (finally) made one of your Chobani parfaits this morning and loved it. I have been drooling over them every time you post one. I had pineapple Chobani (with a splash of sugar-free syrup!), sliced strawberries, and Kellogs low fat granola. Omg so good! I told my husband before I made it, “things are about to get fancy up in here!” lol. He was impressed with my breakfast :). Thanks for the inspiration!

    Yeah – you eating onions… I think I passed out a moment. I never thought I’d see the day. 🙂

    If it wasn’t for Facebook, I’d probably lose touch with all of my old co-workers. Unfortunately, that’s where the connection stops.

    • Yep, if I were have to rank my snacks, jalapeno cheetos would be on the top – followed by the Chicago Mix of popcorn – half caramel corn and half cheddar popcorn 😀

  8. I will eat onion rings also, but they have to be like the onion strings. I do like carmelized onions, though.

    • Nooooo!!!!!! Carmelized onions are the worst. One day Tony texted me when Hannah was at home and he said “your daughter is cooking something with onions!” When I got home I asked her what she made and she said “just carmelized onions.” Not sure where I went wrong with that child. 😀

  11. Yay Biz, you didn’t have the cheetos! I love me some bagels too…so good. That soup sounds pretty darn good. My son can’t stand spiders either. Before he went to Afghanistan I told him to look up camel spiders (found in Irag and Afghan) he about freaked. I’m such a good Mom like that 😉 (Check them out on google if you’ve never seen one!). Those things would scare pretty much anyone! I’m weird about onions too, I only like them on certain things and/or certain ways. I definitely want to try your onion rings though. I’ll be buying the stuff to make them after work! I’m bad with keeping up with old co-workers too.

    Do you know I don’t own a deep fryer. Probably a good thing. lol Cuz those onion rings DO loooook amazing!

    • I should have given you kudos too Renee – since she got the recipe from you – sorry about that! It’s good and bad to have a deep fryer. Bad because once you have one, you start thinking of all the things you can deep fry – and because its still on the counter, I plan on making fried chicken tonight!

  16. Hey I won’t ever give you flack for eating onions, I fully support your onion eating even if it is out of character! Since you like them thin as onion rings, you might actually like the flavor of onion in food where they are well cooked and sharp taste and crunchy texture is mellowed out. You should maybe try adding some to your salsa or something! And WTG on the NSV!

  19. Mmmm, onion rings. You can bake them eh? How well do they turn out? Because I don’t do deep frying (not because I’m against it, but because I’m scared to heat up that much oil in my kitchen).

  20. When I was a kid I used to squeamishly pick the onions out of onion rings so I could the crispy shell. Now I love onions in every form except rings. Weird?!

    I work one floor above my old unit and I don’t think I’ve been down there in months. If it weren’t for Facebook I wouldn’t know anything about any of them.

  21. I’m terrible about keeping in touch with people. I communicate much more regularly with other bloggers than any ‘real life’ friends. Yes, I’m antisocial! That lemon chicken orzo soup is one of my favorite soups. Need to make it soon!

  23. No, I usually don’t keep in touch with co-workers that leave. Except for 2 girls and that after a working career of 25 years 🙂 I don’t feel the need to keep in touch with most of them after they leave.

  24. I haven’t tried making onion rings at home but a friend made some once and they were fantastic! She did the really skinny shoe-lace type of onion rings. So good.
