Spicy Tomato Cauliflower Soup

I hardly ever wear winter coats.  I figure I walk to my car, drive to work, walk into work.  That is one thing I do not miss about working downtown was having to bundle up to make the mile walk to my office after getting off the train.

Yesterday however?  It was cold.  17 degrees cold.  But I still went with just my sweater because that’s how I roll. Winking smile

I still had leftover pot roast from the night before last, so I made a shredded zucchini, shredded potato, egg white hash and had that with 2.5 ounces of the beef with a small piece of toasted naan on the side.  I nuked the meat for about 30 seconds only – just wanted to take the chill off and not overcook it – still super tender.

I decided to take a group exercise class last night, so at lunch I just swam for 30 minutes.  The indoor pool has skylights and it was sunny yesterday and the reflection of the sun off the water was just so pretty.  Almost made me feel like I was outside!


I cleaned out my refrigerator last weekend.  I know I clean it out pretty decent every couple weeks, but somehow I had a container of yogurt that expired in August!  Ew.  I did find a head of cauliflower that I needed to use up.  My idea was to make a cauliflower soup, so I started with 4 cups of chicken broth, chopped up the cauliflower and started that going. 

And here is where things just went crazy.  I thought I could make an Indian inspired soup, so I added a cup of coconut milk and some garam masala.  The result?  Nastiness.  It was too watery, not a whole lot of flavor.  So I added a 28 ounce can of tomato puree and 2 chipotle peppers – the coconut milk was a tad too sweet for me.

The result of that?  Deliciousness.  I liked the sweet/heat combo of the coconut milk with the chipotle peppers.  I also pureed it with my stick blender.  The best though?  I made this four servings of 2 cups each – each serving is only 154 calories, 3.7 fat, 27 carbs, 7.7 fiber and 6.3 protein.  I had some naan cheese bread on the side.

So I got to the aerobics room at my gym at 5:05.  The class started at 5:15.  It was described as being “high energy cardio with strength training using various equipment such as body bars, hand weights and Bosu.”

Now it’s been well over a year since I took a group exercise class.  And the fact that I chose one to start that was 55 minutes long – I was a bit nervous.  And the median age of the class of six women?  I would guess around 55 – including the instructor!  The others were obviously regulars.  The instructor came up and asked me “have you taken a step class before?”  I had, but the last step class I took was when I worked at Sears Corporate headquarters – and I left that job in 2005!

I have to say, while the class was fucking hard, it went by really quick.  Just when I thought I couldn’t do anymore cardio, she’d switch it up and we’d move on to strength.  And when I thought I couldn’t do that anymore, we went back to cardio.

The hardest part?  At the end, right before the cool down, we did five one minute squats against the wall with our arms out – holy shizz, I am feeling that this morning in my quads and calves.


I survived though!  And I have to say that I really pushed myself, way harder than I probably would have on my own doing a video tape.  I am definitely going to make this class a regular, and am going to see what other classes I can squeeze in – I know they have spin classes on the weekend, which means I’ll just have to get my ass out of bed! Open-mouthed smile 

I got home an hour later than normal, but I had already made the Cincinnati chili, so all I had to do was cook up the pasta.  I had mine with 1 cup of chopped broccoli and jalapeno peppers.

The jalapenos weren’t spicy at all. Sad smile  But I was REALLY hungry, so this was delicious. 

My pre-workout fuel – at 3:00 p.m. I had a giant fuji apple with a teaspoon of peanut butter.  At 4:15 my blood sugar was only 160, so I ate a banana, and that worked out great.  I didn’t feel a huge drop in my blood sugar while I was working out.

Joe and Lizz were supposed to fly in last night, but they had trouble with their first plane due to mechanical issues, so they got stuck in Atlanta for the night.  We plan on having dinner out with them and Lizz’s parents, so I am excited about that – it’s been a long time since we’ve eaten out!   1. I never do classes because I don’t belong to a gym. I am much better being on my own schedule by myself. I alternate with running, doing the stairmaster in my bedroom, and doing Jillian Michaels workout videos.

    You are so funny with your non-coat wearing ways. I am the same way, I am just too lazy to grab a coat, but granted I live in Southern Ca, If I lived where you lived I would most certainly change my lazy ways.

  2. I’m the same way with winter coats. People are laughing at me because I’m still wearing my hoodie. I figure it’s not like I’m outside for a long time.

    Is it just me or does your breakfast look like it has shriveled penis’s in it?

  3. Good save on the soup Biz. I made some soup a couple weeks ago and it was so flat – no matter what I did to it the taste was flat! I ended up dumping it.

    Great job on the group exercise class. I don’t belong to a gym so my exercise is all done solo or just with hubby.

    You should carry a jacket with you in case you get stuck in your car one day – just saying you need to be safe!

  4. You had me at Spicy with the soup…lol. I love how it went from nastiness to deliciousness. lol

    I’ve done many group exercise classes in the past. I do admit, they intimidate the hell out of me. Esp the ones with ppl OLDER than me, more fit than me. Well, I also don’t like the ones with a bunch of youngsters in it either. lol I’m hard to please, I guess. I really, really dislike spinning. I took a handful of classes for that, and just never got over how much my ass hurt afterward. It was an awkward ouch, that they say eventually goes away, but I guess I never got to that point. My favorite group exercise was Jazzercise, but it’s been YEARS! I’d like to give zumba a try sometime.

    I also hate winter coats! So bulky. I do wear them though, cuz I hate to freeze more. But then I hate to sweat when you go inside to places, and well, I always worry about getting stranded in subzero temps without proper attire, if my car should break down or something. So I almost always have one with me at least.

  5. I just started taking a Zumba class exercise class. I used be an exercise instructor at our local YMCA years ago and really miss the group classes. Plus it doesn’t seem like exercise! But I normally go to Snap Fitness and run/walk/do eliptical and do Jillian Michael DVD’s at home.

  6. I was too intimidated to go to a group exercise class by myself at my last gym, but I remember liking them back in the day. BTW, wall sits are the devil, and especially having to hold your arms out like that!

    I have thin South Texas blood and require a coat when the temps drop below 50. I know, I’ve become a wimp! Don’t know how you not only managed to just wear a sweater yesterday, but also get in the pool…sure it was inside and heated, but swimming does not appeal to me when it’s freezing cold!

  7. I miss going to group exercise classes! When I switched to a smaller, local gym, I lost out on that. However, I do love my current gym–for being small, less expensive, and just steps from my home. It’s hard to beat!

  9. 17 degrees and you don’t wear a winter coat!? You’re crazy woman! I can’t even be in 50 degree weather without a coat…but i’m a sissy so that’s how I roll. haha.

    Isn’t it great how mistakes can turn into something so delicious?!

    I’m glad to hear you enjoyed the group class even though it’s been a few years! I have only been to two, both kickboxing, and it was always with someone else I knew that had taught the class before. I’m always so afraid to take group classes!

  12. Even if I don’t wear a winter coat, I take one in the car with me. I guess I always worry that the car will break down and I’ll have to walk someone where in the cold to get help. (For the same reason I keep a pair of old sneakers in the trunk!).

    If I am going to exercise at night, a group class is the only way I manage. I am just not self-motivated after work!

  13. I hate wearing coats, but since I have to walk to work once I get off of the train, I have to wear one. I haven’t taken group exercise classes in such a long time, but I really like them a lot. It makes me feel like I don’ t have to think about which exercises I have to do on the machines.

  14. I started with Jazzercise as my first exercise. I’d love to try Zumba, but think that it requires more coordination than I have. I like group workouts cause they do push me much more than I’d ever push myself and I know that I need that!

    I hate being cold so I’m pro coat! 🙂 My daughter runs hot so I can never get her to wear a coat. I force jackets on her, but she ends up taking it off anyways. Stubborn like her mama. 🙂

  17. Oh that pool makes me long for summer. I need to go to the high school and go swimming. I always said if we hit the lottery a built-in, enclosed pool would be the only thing I wanted! Even though the class was quite a workout, it sounds fun. The picture of the chili and pasta looks totally professional!! Wowza 🙂

  18. I go to the group classes (Jazzercise, Zumba, dance or cardio) at least two times a week and preferably three. I love it. I also work much harder and it goes by quicker than when I do a DVD at home.

  19. Nope…haven’t been to a group class in a very long time. I was involved in “Inches A Weigh” for two years laying on beds that toned your body and there were always women in the room so I guess that was a group class……I loved the bikes and eliptic machine, never used the treadmill alot. I only lost 10lbs and 24 inches in two years…..didn’t work for me I guess, so now I just ride my bike and watch what I eat, watch my blood sugars and sodium in-take.

    I run around with my coat on, but usually unbuttoned, people tell me cover-up you’ll catch a cold. Illinois is just a wee bit warmer then Wisconsin though, I remember running around with just a sweater on…..but not in Wisconsin. When we moved to Wisconsin in ’76, that particular week was 56 below and I was outside with just a jacket on, unzipped and no gloves, but then I was younger then like 30 years old and probably 1/2 the brains I have now…lol 🙂

  21. It’s uncanny Biz, guess what I found in my fridge yesterday? A carton of yogurt that expired in August! No joke. I even opened it to check on it’s state and yeah, way disgusting. But I once had a container of yogurt in the fridge three months before finding it and it was still good so I just had to check to make sure. 🙂

    I haven’t taken a group class in over a decade but I did love that about them, that you work harder in a group than alone.

    My exercise for the weekend was dancing at the wedding and I decided I really need to do that all the time b/c it’s so fun it doesn’t even seem like exercise. So I’m going to learn the Gagnam Style dance. 🙂

  22. I used to take a lot of group classes because (like you said) they made me work harder than I did on my own in the weights room at the gym. I also loved doing them. But since I switched to doing home workouts with the help of DVD’s I like that a lot more because I do it at home. I work as hard as I did in the group classes.
