Dill pickles are a veggie serving, right?

After I downloaded my pictures for the day, I realized that I didn’t have the most nutritious day food wise!  I only spent $40 bucks at the store this week and just threw stuff into the cart.  Um, it was tasty though! Open-mouthed smile

I made a shredded zucchini egg white breakfast sammie.  I assembled it at work, but the cheese on and put it in the broiler of the toaster oven.  Somehow I am the only one that notices that the dishwasher needs to be emptied, so while the cheese melted, I unloaded the dishwasher, took the coffee cups back by our coffee nook, started talking to one of my co-workers and then all of a sudden remembered my breakfast might be burnt!

I promise that’s only one slice of American cheese, but it got really melty!  The blackberries were delicious too.

I checked my blood sugar before working out and it was perfect – 101.  Damn!   Not high enough to work out, and I couldn’t justify eating stuff, so yesterday became an unintentional rest day.

Lunch was ground beef and bean tacos.  1/4 cup of refried beans mixed with 2 ounces of cooked ground beef, romaine lettuce, a touch of cheese and lots of hot sauce.  On the side was some leftover Mexican rice and two baby cucumbers.

There was talk that we might get some measureable snow yesterday, but it didn’t happen.  We have now gone the most time in recorded history between measurable snowfalls – our last one was March 4!  I am A okay with that.  Even though we have a snow blower, which is fun for the first five minutes, its still hard work.

I decided to make patty melts for dinner.  The only noticeable vegetable on the plate are dill pickles!  I had an extra baked potato from over the weekend, so I made fries out of it and Tony and I split it.  I had an ounce of brie on mine – so melty and good!

And in case you are wondering, we have “his n hers” ketchups.  I made sure to keep these two very separated!  I also had jalapeno mustard on the side for dipping my patty melt.  Can’t get too much jalapeno.  YOLO!

I still have no Christmas decorations up.  I remembered yesterday that our attic door is broken – there is a pully system to keep the door open, and since its broken, you need two people – one to hold the door open and the other to bring stuff down.  The steps are too steep and narrow for Tony’s feet, so I am going to have to be creative and figure out a way to get our decorations down.

But I have been enjoying seeing all of your creative ideas!  I loved Lori’s window treatment she found off of pinterest.  Didn’t this turn out cute?!

Gotta love pinterest!  Alright, off to put my mystery meals together for the day – make it a great day!

  1. I’m convinced the climate is changing. We have had so much snow the past 3 years compared to, let’s say, the 30 years before. Our Summers have more rain than before but we do have beautiful Springs and Autumns that we didn’t have before.

  2. lol. The title of your post totally cracked me up. Bob and I just OD’d on pickles on Sunday. I bought some to have with a spread of apps for the football game. Yeah–we ate the entire jar (at least it was a small jar–but still)!!

    • John, I had no idea I had the capability of chaging my background color – I thought that was an upgrade that cost $$ and I am too frugal for that. So it’s Christmasy on the blog at least!

  11. Who would have thought to slice up baked potatoes and fry them? You are THE BEST at using up leftovers. It is truly a gift.
    I am terribly sorry you are without decorations. I love all the shiny brightness of Christmas decorations. I must have mine put up the weekend after Turkey day. They usually come down the day after Christmas unless we are having a New Years gathering at our place.

  12. I don’t have anything but our tree up (and it only has the three ornaments I’ve been given this year on it), but at least the boxes are down from the attic. Progress? Hope you can get someone to help – it won’t be a Biz Christmas until we see lots of snowmen everywhere!

  18. I haven’t had a patty melt in years! I just put it on the list since we have venison burger to use up. Those blackberries look delish! I don’t have any decorations but a single wreath up this year. I just didn’t feel like it. And pickles totally count as a veggie serving! In fact it’s almost 5 pm and all I’ve had today is dill pickles and venison jerky, I’m such a health nut 😉

      • Thanks Biz! One day (before tickets were bought) I was looking at pictures and seen the dreaded cat…that’s when it hit me I couldn’t go! We’re trying to come up with something else but, Christmas is getting close!

    Your tacos look yummy, I made tacos the other night too….but ate my fillings on bibb lettuce leaves, and topped some of them with Trader Joes Corn Salsa…so good (not saying that I didn’t eat a shell or two on the side that my brother fixed).

  21. Love pickles, I would say yes!! They are a vegie, so eat alllllllll you want 🙂 Today I bought my first bottle of Louiseana HOT SAUCE!!! Walmart’s brand…..I know, I know probably not the best, but it was in my budget and it may be in my fridge for a couple of years….hahahaha….not much of a hot sauce girl so maybe a little mixed with ketchup might be fine. Making chicken wings tonight with some hot sauce (watered down) of course!!!

    Should decorate my tree tonight, so far it just has it’s lights on and decorations are in the bedroom.

    Your food you ate today, as usual looks wonderful, even the melted cheese on your sammie!!! And those berries……oh my, looks like summer! Wamart had cheeries today, $5.98 a pound…yikes!! My husband loves them, but not at that price!!!!

  26. I just found some fresh ghost peppers at the store yesterday, I am going to make some hot sauce to see if I can finally see Tom visibly react to something spicy, I wish I could share it with you.

    • OMG, be very careful! The fumes of the peppers will go everywhere – if you have an outdoor grill with a gas side, I suggest doing it outside – let me know how it turns out!
