Gyros Pita Burgers

When I was getting ready for work yesterday, I kept reminding myself to grab my insulin pens that were in the downstairs fridge.  Only one slight problem with that – there wasn’t another box!

The pharmacy doesn’t open until 9:00 so I called it in to the Walgreen’s near my office.  My plan was to pick it up before I worked out.  That meant no insulin for breakfast though!  Typically I take half anyway to get my blood sugar in the low 200s to work out.

Breakfast was an open faced egg/spinach/ham/cheese sammie with some clementines on the side.  I had it on half a high fiber Thomas’ english muffin.

I was quite sure that my blood sugar would be well into the 300s before working out, but I was pleasantly surprised that it was only 221 – perfect!  The only bad thing was that by the time I picked it up and got to the gym, I could only do a 25 minute workout.  I decided to do the stair master, and ended up doing 78 flights of stairs in 25 minutes.

Lunch was roast beef/cheese/avocado roll ups.  The tortillas is a LaTortilla factory Smart & Delicious Light wrap – 80 calories and 6 grams of fiber!  I love how soft it is.

2 ounces of thin deli sliced roast beef, 1/2 an avocado, that I mashed and then spread on the tortilla, 1/2 an ounce of shredded cheddar and baby spinach.  On the side was 3/4 ounce of tortilla chips with salsa verde (store bought and ALMOST too hot for me) and delicious strawberries.

No where on the container did this say it was hot, spicy or anything.  Typically I find salsa verdes to be really mild, but it was delicious.  I gave some to one of my co-workers, and he was like “that was fricken awesome salsa.”  Agreed!

I like to call myself the Queen of Accessories when it comes to lunch and dinner.  When I worked downtown, one law firm I worked at was right across the street from a grocery store, so I would spend under $2 a day accessorizing my lunch, whether it would be fruit, buying an avocado, or some salsa.

I had gyros burgers on the menu for dinner.   On the way home, I stopped at this place to pick up four containers of tzatziki sauce to go with our dinner – they sell them for .25 cents each.

We each had a cup with dinner, and I have two for later in the week – my guess is each one is about 1/4 cup of tzatziki.

Hooray for it being light out at 6:15!  Better pictures are in the future!

This was so good – the burgers were juicy – I added extra crushed red pepper to my burger.

Here is why my gyros burger looked like back in 2009 – I think my food photography has gotten a tad better since then!  And more appetizing!

Ha – that picture just makes me laugh it’s so gross!  I can’t believe anyone would look at that and think “that looks good – I think I’ll make that!” Open-mouthed smile

I am just about to make some Chobani banana granola pancakes for breakfast.  My boss is back from spring break so I am back on breakfast duty this week.  She tends to prefer sweet breakfasts.

Hopefully the sun will peak out today – it gets so dreary day after day without seeing the sun!  Make it a great day!

  1. Great job fitting in the workout! Every little bit counts- yes? Your meals always look so…complete- just perfect! Picking up the sauce makes dinner seem like takeout even though it was mostly homemade. I need to do this!

  3. LOVE La Tortilla Factory wraps. They make a 50 calorie size that we always keep on hand. Perfect for making a big batch of enchiladas, or to keep at work to whip up a quick snack (spread peanut butter with sliced banana inside. Delish. Or spread a laughing cow cheese inside with some mustard and veggies). Have a fantastic day!!

  6. Do you just use an insulin pen for your diabetes? Once a day? Any pills? I use Lantus Solostar pen once a day at 6 PM. How long have you been diabetic? Me – 16 years. Lantus used since 2009. Just wondering. Your foods look great!

    • The pills are long gone. I’ve been on insulin for probably five years now? I use the Novolog Flex pen for each meal – my ratio is 5:1 – meaning I take 1 unit of insulin for every 5 grams of carbs I eat. I take the Lantus at night before I go to bed 30 units. I’d love to get an insulin pump, but because I am a “controlled diabetic” they won’t pay for it. Rat bastards. 😀

      I’ve been diabetic for 12 years I guess? My Dad was Type 1 – diagnosed on my parents honeymoon!

  11. I seen you did 78 floors in 25 minutes, rock on girl!!! You would find me out of breath, huffing and puffing back on oh, say 8 floors….lol!!! That salsa verde looks really good. Anytime I see something spicy or hot I think of you. Like today, when I bought the sriracha chips 🙂 (Yes, we just got them and I still can’t find the other two…boo!). I had to laugh with you about your pictures, so much better now. We’ve all done it though 🙂

  12. mmmm….love gyros!!! Yummy lookin’ food you made today. My blood sugars have been stablized at 150’s for the the last couple of days, not sure what’s up with that…..usually bounces around alot. When it gets over 200 I freak out!!! Start wondering….what did I eat that caused the blood sugars to jump!!! Just wish I could lose a few pounds, maybe the blood sugars would go down a bit……but the scale does not budge!!!
