Asian Marinated Chicken Chopped Salad

Thanks to all of you for welcoming me back from vacation!  It was funny when I went to the grocery store on Monday the first half of my basket was all fruits and vegetables, I think even my body was like “no more meat!”

Since I didn’t have a blog to post yesterday I got my walking shoes on and went for a 30 minute walk before work – so refreshing to start the day out like that.

Breakfast yesterday was what I like to call an inside out omelet –it’s low carb and high protein too!.  This was for two servings, one for me and one for my boss:

Inside Out Omelet

2 servings:  223 caloires, 6.7 fat, 6.1 carbs, .2 fiber and 33 protein

  • 4 slices of deli ham
  • 1.5 cups liquid egg whites
  • 1.5 cups chopped baby spinach
  • 2 roasted red peppers, chopped (I used jarred in water)
  • 1 ounce of cheddar cheese

Scramble the egg whites with the spinach and peppers.  It takes a while – I usually just put that in my pan on medium and walk away for about 5 minutes. 

When I got to work I laid out the ham, divided the egg mixture between the slices of ham.  I put the filling at the top of the ham slice, then rolled it tight.  Sprinkled the cheddar cheese over the top and then put in under the broiler until the cheese was melty and the filling was heated through.  I was in a hurry so no natural light in these pics! She posted a workout on her wall that my sister said might work for me during a lunch time workout.  At the time, I didn’t know it was a cross-fit workout until my co-worker told me it was!

First of all, I totally modified this – I did a 1 mile run, then for the pull-ups, I used the rings like this for the 100 pull ups:  Still fucking hard though!

Then I did 50 push ups, 50 sit ups, 100 air squats and then finished with a 1 mile run.  It took me 40:50!   I am happy that my first mile and second mile were almost the exact same pace!

My friend Jody put on Facebook that they were showing cross fit on the Extreme Weight loss show last night.  I told her I was taping it.  She’s a huge cross-fit fan, has lost 40+ pounds and keeps trying to convince me to do it.  Here was our conversation:

I thought it was funny when she said “and ur still alive?!”  I am feeling it today – especially in my back and shoulders.  As soon as I hit publish on this post I am going to do my Classical Stretch on the DVR to stretch out.

When I was at Sam’s Club I saw they had a new salad kit for only $2.39.  I was going to make a chopped Asian salad from scratch, but I couldn’t buy all the ingredients for that price, so I used this as the base.

It said it was 3.5 servings, I only made it two.  I used 1/3 of the dressing and my boss used the other 2/3 – I don’t like an overly dressed salad.  Monday night when I was grilling our steak, I cooked the chicken for this dish.  The chicken marinated for about 2 hours before cooking, but I am sure it would be even better marinated overnight.

Asian Marinade

4 servings:  53 calories, 3.1 fat, 5.3 carbs, .1 fiber and .5 protein

Ingredients:

  • 1 tablespoon sesame oil
  • 2 tablespoons low sodium soy sauce
  • 2 tablespoons rice wine vinegar
  • 1 teaspoon splenda (you could use sugar)
  • 2 teaspoons minced garlic
  • 1 teaspoon fresh chopped ginger
  • .25 cups water
  • 1 teaspoon sriracha

I also drank all my Detox Water at work.  You know how I could tell I was dehydrated?  I drank all 2 liters and only went to the bathroom once!

I had to stop by Walgreen’s after work to pick up my insulin.  I had to get a new prescription when I went to the doctor a few weeks ago.  I have no idea what he wrote down, but I got two boxes of pens for the price of one!  Normally a box costs me $40, yesterday I got 2 boxes for $40!

Check out how much it would have cost without insurance for those two boxes – crazy!  I don’t know what people do without insurance!

  1. Welcome home and congrats on the weight loss during your vacation! The salads look so yummy! I’ve never had an Asian chopped salad but want to try. Kick ass on your workout today! I gotta get into it…I’ve lost 34 lbs w/o working out much at all, but I think that’s about to end! Lol. Off to work…have a good one!

  3. Wow – I have a few friends who do cross-fit and I heard several people say that Murph is one of the hardest WODs!!! I’m still too wimpy to try cross-fit!!!

  5. ugh…med prices are insane. My Dad’s cancer medication is something crazy, like $1000 a month without insurance. Glad you enjoyed your vacay…it looked like so much fun! And I love that bagged Asian salad…I buy it all the time!

    I grabbed a premade chicken salad at Sam’s Club the other day…it was incredible! It had pecans and cranberries in it, and I didn’t have to make it which alone made it better than mine in my book!

    Haha, I don’t do Crossfit (too scary!), but I have read about it enough to know that “Murph” is one of the notoriously hardest workouts! You’re a beast, Biz! 😀

  9. That chopped salad looks INCREDIBLE – will have to see if our Sam’s Club has that salad mix. I’ve done a few Crossfit workouts and thought I was going to die – might be a good reason to keep doing them, once I get back to working out on a regular basis!

  12. I don’t know how you do those workouts Biz, I would be on the floor panting after 5 minutes…no lie! The inside out omelets are a great idea for me since I can’t make an omelet to save my life…lol!! Must try it. What do people do without insurance? They go without and hope for the best. I know I still have a gallbladder that is a bitch to live with sometimes…ugh! I go without asthma medication and the only one’s I do buy are my blood pressure medications and that’s because my Mom has had 3 strokes.

      And my face does get super red when I finish a workout like that, I wonder if people think I am about to pass out?!

  14. Great idea for the omelet. I don’t like deli ham so it wouldn’t work for me. Do you have a mail order pharmacy option available on your insurance? I get 3 months worth of insulin for the same price as one month at the pharmacy.

  15. I have to try grilling romaine lettuce – it looks so good. My dad just started using those prefilled syringes – he is a type 2 insulin dependent diabetic. Thank goodness he is a Vet and gets his for free!

    I so hope that with my new dietary changes that I can avoid becoming a diabetic and also lower my cholesterol. I know that genetics play a part in what happens but I do believe I have a lot of control through diet.

    • Yep, my Dad was diabetic too – it was such a pain in the ass back then because you had to boil the syringes. I love the insulin pens! And FYI, a pen can stay out for 30 days without being refrigerated. Not sure people know that. So I keep the boxes in the fridge, but carry my pen with me in my purse.

  20. Must look for Asian chopped salad my next trip to Sam’s. And, I need to make that inside-out omelet too…..love how you start out the day with goooood breakfast ideas.

    Yes, I know what you mean by expensive medication. I thank God I am not on any medication, as the Doctor took me off all meds as my liver levels went up when he put me on diabetes and cholostrol medication. All I do is the strips and I was paying $15 for 25 strips then all of a sudden I got 50 strips for $15, so that was a bit of a savings. My liver levels are normal now, that’s been over a year. My husband does the meds for his bi-polar, but gets samples from the Dr. for his other medication, so that saves also.

    As for excercise, still riding my stationary bike (don’t think I will make the 100+ miles) but, walking the dog around the block gets a few miles in. She lets me know when it is time to go. Working in my back yard, building a fountain and moving rock has been quite the excercise for me too!! Plus pulling weeds and planting flowers.

    • Louise, I didn’t get my 100 miles either – I guess I thought I’d work out during vacation, but I will still put your name in the drawing for the salsa! 😀

  24. First off, those inside out omelettes are too cute. I wish I liked eggs…I would totally try it. And I also wish I had a grill so I could make fancy grilled caesar salads like that. Le sigh.

    But I have to ask about those insulin pens…aren’t they kind of a waste? Why not have 1 pen and buy the insulin to put in it? My boyfriend has that kind. I didn’t even know they made prefilled pens.

    • Do you like egg whites? That’s what I used. 😀 You have to throw out each syringe after you use it – so this way, all my insulin is in one pen, and the only thing a change after each shot is the needle, which are super cheap – I think I get 1000 insulin needles (they just screw into the pen) for about $10!

    Although I loved watching your vacation pics, I’m also very happy Bizzy is back in the kitchen because I love to look at your food.

    In Holland it’s the law that you have health insurance, it’s not a choice and although you have to pay a lot for it since the government doesn’t pay that much for you anymore, I’m always glad I have it when I see bills of the dentist or doctor.

  26. I was without insurance for the first 7 years of being diabetic and I actually managed OK! I used a cheap 70/30 insulin (I think it was $15-$20 per bottle, which lasted me about a month I think) which was a blend of 70% long lasting and 30% quick or vice versa-can’t remember. I don’t know how I managed with that b/c it’s so much easier now taking Lantus once a day and humalog with meals, but I know from experience you can do it cheap even without insurance. I just don’t want to have to! I also couldn’t afford doctor visits but once a year to keep my prescriptions active, but my A1C was actually lower during those years than it is now. I also bought testing strips on eBay in big lots but that was my highest cost–even in big lots on eBay, they were a lot more expensive than what I pay now with insurance.

    I can’t believe you survived the Murph either. I can’t do a single pull-up, even the modified kind I could probably only do one. Go Biz!

  27. I have never tried a cross fit workout, but definitely know that one day I will want to. Perhaps post babies??? I think I’ll need something to get me in shape after I have kids, so that just might have to be it!

    I love grilled romaine. Gordon Ramsey thinks it’s lame, but I think it’s brilliant!

  28. Tough workouts FTW. I lift a lot but I don’t do Crossfit per se (I have issues with how they market it, among other things), but they do inspire some really good, intense workouts that don’t take forever to do.

    Nice job on the omelette–you’re making me want to make one this weekend!
