Do you guys watch Extreme Weight Loss with Chris Powell?  I had a couple episodes on the DVR when I was on vacation and watched the one about Ryan from Appleton, Wisconsin.


He is 23.  He lives with his parents and was lost after he lost his arm in a car accident.  He’d never ridden a bike in his life and was simply lost.  But once he was on his journey, he never looked back.

Was it hard?  Absolutely.  Did he want to give up?  Yep.  But through the whole show the key word that just kept jumping out to me was consistency.  He stuck with it.  We all know we didn’t gain weight overnight, so we have to realize that it’s going to take a while to take off.

Although in his third three month stint, he stopped eating right.  So much so that even though the outside of his body was getting in shape, he was severely malnourished.  I don’t think I could ever be one of those people who leaves any food group behind – simply because I love food too much!

But I’ve realized in the five weeks that I’ve been doing Insanity, consistently, that my body is changing.  In fact Tony even mentioned last night that my arms look more toned. Open-mouthed smile  So I am willing to be patient, and consistent, in my weight loss, because I know that the hard work will pay off.

It was such a dreary day yesterday.  Heavy rain, clouds, just ick.   I made me and my boss mini individual quiches – how cute are these dishes?  I got them at T.J. Maxx for $3 each.  They are oven, microwave and freezer safe.

Mini Quiches for Two

  • each one: 236 calories, 9.6 fat, 11 carbs, 2 fiber and 21 protein


  • 4 ounces cooked potato
  • 1 zucchini, shredded and squeezed dry
  • 1/2 cup unsweetened almond milk
  • 2 eggs
  • 1/2 cup egg white
  • salt and pepper
  • 1.5 ounces reduced fat Swiss lorraine cheese

Spray the casserole dish with Pam.  Put two ounces of potato on the bottom of each one.  Shred the zucchini and divide that between the two dishes.  Mix together the almond milk, eggs, egg white, salt and pepper and pour half into each dish.  Then top with .75 ounces of reduced fat swiss cheese.  Bake at 350 for 30 minutes.  My boss gave me two big thumbs up on this one! I had planned on swimming at lunch yesterday, but the outdoor pool closed because of the weather, and there were a ton of kids in the indoor pool.  I switched gears and ended up doing the Stairmaster for 30 minutes – 97 floors!

I ended up making taco salads for me and my boss – the picture turned out shitty, but this was tasty.  Two cups romaine, cucumber, carrot, 1/4 cup canned corn, 1/4 cup black beans, 3 ounces lean ground sirloin – my dressing was 1 tablespoon light ranch mixed with 1/4 cup of salsa verde.

Later in the afternoon I had this protein bar – its my new favorite and it was my last one – swear they taste just like a Payday candy bar!

As Tony and I were getting dinner together, we realized Lyle, the squirrel is back.  Lyle is the super friendly squirrel that apparently is not afraid of us.   I threw him some granola, and he loved it!  If I had the balls I bet I could hand feed him, but turns out I don’t want to get rabies!

While I set everything in place, Tony made his famous fried rice.  You can see the video here on how he makes it.  While he piles up my bowl, and I seriously could eat the whole thing, I stopped myself after I ate almost half – about 1.5 cups.

It’s just.  So.  Good.  He thought it wasn’t salty enough because all we had was 50% reduced sodium soy – but I thought it was perfect – and just the right amount of sriracha, which always amazes me how he gets the heat level right because he can never taste anything after he adds the hot shit. Devil

So last night was Month 2, Day 3 of Insanity, and probably the hardest one yet.  It was Max Cardio Conditioning.  Um, there were not a lot of water breaks people!  If I am right, it was four sets of six minute sets, and one set went right into the other.  But, I’ve told myself that if I am giving up the time to workout at night, I have to give it my all, or what’s the point?

  • 30 minute, 2.02 miles, 97 flights stairmaster
  • 47 minutes M2D3 of Insanity – Max Cardio Conditioning
  • 1423 calories, 50.9 fat, 169 carbs, 18 fiber and 69 protein
  • 48% of calories from carbs, 32 from fat and 20 from protein

I’ve got a ton of stuff to get together for work today, you’ll find out why tomorrow!

    I might have to do that diet bet…I have been bad on vacay…no real exercise, it’s crazy hot and humid…

      Do you have Netflix or Hulu? It might be on there.

  5. Great story, he now looks how a teenager should look.
    When I look around me, I see too many children that already are too heavy. I think this will be a huge problem in a couple of years for health care. That said: I am an overweight person myself and don’t do much about it. Maybe I start with me first before looking around me.

    • It’s a sitting generation Fran. We had to find stuff to do outside – I think how many times my Mom said – “kids go outside for a few hours!” Probably to give her a break, but I loved a lot as a kid!

      • Same here. Children don’t play outside that much as we did as a kid. They now have Ipads, Nintendo’s, Playstations and much more television. My sister and I always played outside with friends. But we didn’t have a computer back then and during the day there was no television except for Wednesday afternoons 🙂 Oh the good old days 🙂

  7. I loved that story about Ryan. He’s such an inspiration! You’re right – consistency is key. I need to be more consistent with my weight loss efforts. I do well during the week but then slack off majorly on the weekends. It’s like I’m undoing all the hard work I’ve put in during the week!

    • That’s exactly what I was discovering Anne Marie – I mean I’ve literally maintained my weight since the beginning of this blog – I’d like to have my 5 year blog anniversary at a weight other than 168!

    Your pictures after working out always make me smile!!
    So, I keep wondering (you might have said before I started reading or you might not want to say) – where do you work? I want to work someplace where someone would make me such awesome lunches everyday!!!

    • Hey Kim! I am a legal secretary in a law firm, but we have an office suite that has a kitchen and lunch room in the middle of the two offices. I have everything but a stove (seriously, my last office had a full kitchen and it was not unusual for me to be baking bread and making stir fry for lunches!). I use the grill in the summer time though. We have a toaster oven too.

  13. Im doing a modified south beach so I’m going to make that quiche. I even have unsweetened almond milk. I need to cut my insulin down because too much makes me hungry. more carbs=more insulin. My endo told me years and years ago that the best diet for a diabetic is a modified south beach so Im going to try that. I think I ate too many carbs on WW.

    • Less insulin is always better – I wish I could kick bread, but I think this next round of diet bet I am going to lower my carbs to, but my doctor says that diabetics shouldn’t eat less than 125 carbs per day – they are still necessary to a healthy diet. Good luck Randi!

  17. I have a question about Dietbet – How do you know people aren’t cheating? I since it is just a picture of your feel and scale, the person could be holding a dumbbell in one hand and you would never know. I think the idea is so great, but I don’t trust the internet. What do you think?

    • Hey Julia! Well, the premise is that you take a picture with the “secret” word, with your feet on the scale. My scale has a 5 second lapse after it blinks the weight, and I had my camera on the counter next to me to take a quick picture.

      You also have to take a full body picture – preferably at the same time and location as Day 1. You can see my Day 1 and Day 30 in this link – I think you can see the difference. I am short, so 8 pounds can show as a loss.

      I am sure there are ways to cheat, but if you have a before and after photo that look identical, I think that they can tell you didn’t lose weight.

  18. What an amazing story about Ryan. I find stories like that give me a mental boost so thanks for sharing it. I read one time that it isn’t what we do occasionally that matters but what we do consistently that really shapes us.

    • That’s exactly it Tami! The occasionally splurges aren’t the downfall, it’s making those splurges more than occasional. Love it!

  19. The Ryan story on Extreme Weight Loss was so inspirational. Gonna start biking outside, getting my bike fixed next week. So I will have a better ride.

    A friend told me she lost 7 pounds in 3 weeks cutting out gluten. I think I might try that for the next couple of weeks and see what happens. I have to go on meds for diabetes. My thyroid and cholestrol were good but A1C and blood sugars were up again. So here I go again with the meds. I would like to lose 20 lbs by September….we’ll see how it goes. Trying to keep blood sugars, weight and salt intake at bay is quite the chore.

    • Oh I have to tell you I have made two pots of Lasagna Soup……I am ready to make more….LOVE that soup!!!!

    • Do you ever see Ryan in your town? I don’t know how big a town Appleton is!

      Yep, keeping the blood sugars normal is a daily struggle for me too – I want it high when I work out, then not too low at night so I don’t wake up to sweats.

      Hang in there! And so glad you love the soup!! It’s probably been a month since I’ve made it and that has to be a record for me. I’ll have to let Suzie know, as it was her recipe to start with.

  20. Hey biz…I know normally you work out a lot.even before the whole Insanity thing..but how hard is it for you to do Insanity?

    How long is the longest workout??

    • Jamie, it’s different from any workout I’ve done because its just using my body. That being said, even after five weeks, I can still only do about 90% of the exercises. The first month, the longest workout was 39 minutes. The second month? Try 59 minutes!

      While I can’t do all the exercises, I modify so I continue to move, I just don’t wait until they do something I can do. Like burpees – I can never jump up and down like that because um, my belly gets in the way, so I do it slower, but keep going.

      While Insanity doesn’t get easier, you will be able to do more of the exercises the more you do it. In May I wore size 14 pants and shorts on vacation. Today I wore a size 11 pair of pants I haven’t worn in two summers! 😀

      • I have a friend who is sending me the workout. I have a real problem with not following through on workouts…I am hoping that if i talk about it enough I will do it.

  24. Wow, that kid is definitely inspiring, I can’t even imagine it. More kids need to see his story because way too many teens are overweight these days, it is sad and scary.
