Sriracha Honey Mustard Sauce = Amazeballs

Another weekend is in the books – and even with the extra hour we got, it still went by way too fast.

We had a fairly lazy Saturday morning, which I loved.  I was planning on getting together with Hannah for lunch – she was running late, so instead of picking me up, we met at the restaurant and I ran a bunch of errands before we got together.

One snafu?  I had just enough insulin to get me through lunch, so I swung by Walgreen’s to refill it, planning on picking it up on my way back home.  Well, for some fucking reason, my insurance company would only let me fill my insulin at a local pharmacy three times, and then I could only use their mail order prescription service.  WTF?!  I have never read anything like that before.

So Tony called me when I was out, and he said the pharmacist couldn’t override the mail order.  So I call the number on the back of my insurance card, but of course, it’s Saturday afternoon and their office was closed.  There was a “Care 24” number so I called that, and I got a registered nurse, who couldn’t help me, but transferred me to someone who could help.

Well, 30 minutes later, we finally got the insurance company to override the mail order this one time and I was able to pick up my insulin – for a cost of $203 for one box – I am so close to hitting my deductible – only $187 more dollars!!  I am hoping my gyno appointment last week and my mammo next week will put me over the edge, then everything will be free until the end of the year – I am going to stock up on so much insulin and test strips it won’t be funny! So after all that I was more than ready to eat lunch and relax!

We each got the teriyaki chicken bento box – the only problem was that my fried rice was CHOCK FULL OF ONIONS!  I’ve never seen onions in it before!  But since I somehow spawned a child who loves onions, Hannah got the leftovers.

I got to see Hannah’s new to her car – she’s been loving the freedom of having a car again!

We went to Goodwill – I am happy that I am a solid size 12 – and while I could fit into size 10’s and zip them up, I wouldn’t be able to walk in them!  I bought two pairs of 12s and a couple tops.  Tony always jokes that I buy too many khaki pants – I had to text him this picture!

Our time together was way too short – but it was great to see her!  The drive home was gorgeous too.

I picked up a steak from the discount bin – two sirloin steaks for $3.80 cents after the 50% off, and I found this cheese for 50% off.

I ended up making steak salads – so easy and quick.

Tony made me breakfast yesterday morning – his creative juices were flowing!  He made me a two egg omelet with leftover taco meat and baby spinach with an English muffin.  He always gets the spices just right – crazy since he can’t try the food he makes for me!

It was a gorgeous day – 50 degrees and sunny – it’s amazing how the sun shining can affect (or Helen effect?) your mood!  Our tree in our front yard is gorgeous.

I wanted to walk on some trails just a couple miles from our house – sadly, two of the trails were closed for deer thinning.  So I made due with the smaller trail – it was an invigorating 45 minute walk.

I had burgers on the menu since ground sirloin was on sale for $2.99 a pound – score!  I was on Tastespotting, and saw that someone made a sriracha honey mustard sauce and as soon as I saw it, my mouth started to water!  I decided that a tablespoon of this sauce was plenty – and each tablespoon comes in at 40 calories, .3 fat, 9.7 carbs, .3 fiber and .4 protein.  I also didn’t have two different kinds of mustards, so I used all Dijon.

  • 1/2 cup honey
  • 1/2 cup Dijon mustard
  • 3 Tablespoons of sriracha

Mix together and simmer over medium low heat for 15 minutes – it thickened up to a nice thick sauce.

Holy cow – this is such a simple, yet complex sauce for burgers.  You first taste the sweetness of the honey, but then the sriracha kicks you in the ass at the very end.  I may have to make this sauce for Christmas gifts this year!  I will warn you that this is SPICY.  Duh, but maybe start out with 1 tablespoon of sriracha to start out.

I even dipped my sweet potato fries in the overflow – so fricken good! 

And today starts week 7 of my strength training program – I took a sneak peak and wowza, I think the strength portion is going to take me 45 minutes!  Luckily my bags are packed, my food is prepped so I am ready to go.  Happy Monday – let’s make it a great day!

    • Thank you Helen – you are my grammar go to person! And yes, I realize that there are onions in almost everything, but I’d had this dish before and was just surprised to see them – oh well – Hannah got my leftovers! 😀

  7. Congratulations to Hannah on her new car! I’m soaking up every last bit of warm sun. The weekend was beautiful here in Western Mass. I thought of you last week when I read about that Sriracha factory in California. Good luck with your challenge this month. You can count me in! I’m training for a possible big race in December. I’m still on the fence about it, but I’ll keep training until I decide. Have a great Monday!!

    I read somewhere that they were going to stop making sriracha (,0,2608897.story#axzz2jhMancFI). I plan on stocking up. I have an almost whole bottle in the fridge, and bought one more at Target today (only 2 was left on the shelf…didn’t want to be a shelf I eat that on almost everything.

  10. Sauce looks good….I have mixed honey and Dijon mustard together….but never with hot sauce. Think I will try a few dabs of hot sauce next time around. Lovely pictures of Fall in your neck of the woods!!! Fun times with Hannah….enjoy!!

    Your insulin situation sounds scary….I can’t imagine the Hoops ObamaCare will make us jump through when it all kicks in. If it is hard now, what is to come, will be much harder, I have a feeling. Just my thoughts.

    You commented on my blog, you were making our beloved lasagna soup with whole wheat noodles???? sounds good, I found glutin free lasagna noodles and that was very good……..although I think no matter what noodles are in the soup…….it is a de-lishous soup!!! Have a great day!!

      Geese Louise, the game is tonight. I am certain that due to injuries and other factors my bears will not prevail in Curly Lambeau Field. At the end of the day we don’t have to wear those horrible puke yellow uniforms, and our fans don’t appear excited to wear hunks of cheese on their heads.

      • OH…..Geese Tony I realized the game was tonight when I went to Festival to shop and everyone was wearing green and gold…..(this is called a Senior Moment) I was going to ask someone what the score was yesterday……thank God I didn’t!!! Then I saw a couple of customers wearing those Bear colors shopping at MY Festival!!!! Then I thought….oh my goodness the game must be tonight!!!! Have a great game with lots of good football munchies Tony….the Packers will prevail!!!
        PS Biz…I bought some Sriracha today, making the sauce for my eggs tomorrow.

    ~ Those Bento Boxes look soooo yummy!
    ~ I thought fried rice always had onions in it? But what do I know… I like onions, so I guess I never paid attention before!
    ~ 12s? YAY! And fun to at least try the 10s on and have them fit!
    ~ That is amazing that he gets the spice right every time! I get frustrated when I see a recipe that says “to taste” and it’s putting the spice into raw meat (like meatballs or something) and you have no idea if you are going to over or under season something. Those are the times that I want measurements!

    ~ And you score such deals. My rule of thumb for meat is that it must be under $5/lb. However, I try to use grass-fed beef whenever possible. Mostly because my husband can only eat beef and pork, so I think it should be the healthiest kind. (And helps him get the Omega-3s he can’t get in fish!)

    Tonight is my WW meeting and it’s the only night I let myself have a cheat meal. After weigh in of course!! lol Hamburgers are on the menu along with fries and mac n cheese. I usually mix sriracha with light mayo for my burger condiment but I just might have to make the sriracha/honey/mustard sauce instead. Bet it would taste yummy with all those french fried crunchy onions I’ll also be piling on my burger!! lol 😀

  16. Insurance rules are so screwed up! Glad you got your insulin though and it all worked out. That sauce sounds wonderful – love that Sriracha sauce although for the life of me I can’t pronounce it correctly!

  17. This sauce sounds incredible. I had actually heard about sriracha sauce production being halted but I think it turns out the judge ruled against the factory closure: Thank goodness! I will have to try this next time we make burgers. Loving the photos of fall foliage, too!

  19. So stupid about the insuline. I never use up my own risk for my health insurance but since I have been to the doctor last Friday and they are running some tests on me, I’m afraid it’s going to cost me money. Get back on what’s the matter with me in today’s post that I will post later tonight.
