Since its just me for dinner tonight, I decided to use the last of the beer can chicken to make Ramen noodle soup. So simple!
- 8 ounce chopped chicken
- 1 cup chicken broth
- 4 cups water
- 3 ounce chopped carrots
- 6 ounce diced canned potato
- 1 package chicken ramen noodles (with seasoning)
Just throw everything except noodles in and simmer until carrots are cooked. Add noodles and its done when the noodles are cooked through – about 5 minutes. The only other seasoning I add is cracked pepper and Italian seasoning.
Daughter is off to homecoming!
