Keeping the Eye on the Prize

Who watched Biggest Loser last night?  Who cried like I did??!!  I absolutely LOVE makeover week!  Other than the finale, it’s probably my favorite week.

It is so amazing how far they have come in just 16 weeks!  It got me thinking – sometimes we want results right now.  We have a good week, step on the scale and shows a minimal loss.  We pout, start thinking what we could have done differently, if anything, and maybe feeling discouraged decide to say f*ck it and reach for a bag of potato chips.

But I started thinking – these contestants started out weak – Ashley couldn’t even keep herself on a treadmill the first week – do you think she was feeling confident in her abilities even at day 45 or 60?  The point I am trying to make (for myself more than anything!) is that I have to keep the eye on the prize, and while that does mean a lower number on the scale, the ultimate prize for me is good health!

I am 5′.2″ – so my healthy weight range is 118-132.  I’ll be happy with 135, even though my doctor wants me to be 125. 😦  What is your prize?

Breakfast yesterday morning kept me full for  a long time – I ended up not even eating my apple until right before my walk!  6 baked wonton wrappers (baked at 350 for 7 minutes – careful – they can go from done to burnt pretty quick!), 1/2 cup egg beaters, 1 ounce ham, diced red pepper and pickled jalapenos.  Sadly, caloriecount gives pickled jalapenos a D- because one serving has 62% of your daily allowance of sodium!  Breakfast (without the apple):  368 calories, 34 carbs, 29 protein, 11.3 fat and 2.2 fiber.

I adapted Alison’s Spinach and Tortellini Soup – I left out the onions and reduced the amount of cheese tortellini.  It was delicious and super filling!  I love the crushed red pepper – it made the broth nice and spicy!

Biz’s Spinach and Cheese Tortellini Soup (printer friendly version here)

Makes 4 servings  (approx. 2 cups broth with 6 cheese tortellini )

200 calories, 5.2 fat, 26.1 carbs, 3.4 fiber and 12.7 protein

Ingredients

1 teaspoon olive oil
3 cloves garlic
2 carrots
2 stalks celery
1 teaspoon oregano
1 teaspoon crushed red pepper
14 ounce can diced tomatoes
6 cups chicken broth
3 cups baby spinach
4 ounce cheese tortellini

Directions

  1. Heat olive oil. Add garlic, diced carrots and celery and cook about 5 minutes. Add oregano. crushed red pepper, tomatoes, broth and simmer until carrots and celery are cooked – about 20 minutes.
  2. Cook tortellini according to package directions. Julienne baby spinach and add to stock with cooked tortellini.

It wasn't until I got home from the store that I realized Alison used spinach tortellini - mine were just plain cheese

On the side I made a pita grilled cheese with baby spinach, 1 ounce fresh mozzarella and 1 pita.

I "Pam" fried it so it was nice and crispy! Lunch comes in at 472 calories, 61 carbs, 28 protein, 12.6 fat and 4.7 fiber

I lucked out at our 50% off rack in the meat department last week.  I got this 1.8 ounce Porterhouse steak for $6.10! It was 50% off the lowest price, and the sell by date wasn’t until May 7!

It took a while to grill since it was so thick – I seared it on both sides then finished the cooking on indirect heat.

I “Pam” fried up 6 ounce of red potato, and steamed 1 cup of broccoli and put 2 tablespoons of nacho cheese sauce on top – with 3 ounces of steak – delicious if I do say so myself! 😀

Stats for Tuesday:

  • 10 minute AM Abs
  • 45 minute walk at lunch with 4 pound weights
  • 1,447 calories, 162 carbs, 104 protein, 42 fat and 19.3 fiber

Happy Cinco De Mayo!  I think we are ordering from a Mexican restaurant at lunch today – I am thinking grilled chicken fajitas (sans onions!) would be my best bet – what do you think is a healthy Mexican choice?

    I watched biggest loser and also love makeover week. They looked great and I am cheering for Ashley! She is such an inspiration to many 🙂

    I love pickled jalapenos, but I never thought about the sodium. EEK! It probably won’t stop me from eating them, but maybe not a whole jar in a week? 😛

    Today for Cinco de Mayo, I brought some leftover flatiron steak that I sliced super thin, black beans, corn, salsa, and jalapenos! I’ve got a huge super perfect tortilla to eat with it, too!

    Porterhouse is my very favorite cut of steak. I probably could eat one that size all by myself if I set my mind to it. But of course, if I really do want to be thin and healthy, I can’t. Ah well, a little is better than none.

  5. I haven’t been watching BL this season, but I did always love makeover week. So great to see the contestants so happy!

    As for healthy mexican from a restaurant…the fajita is probably your best bet, but like Indian, nothing from a Mexican restaurant is really healthy. To get healthy you have to cook at home. 😦

  6. I watched Biggest Loser last night and when they showed Sam at the end with his new “room mate” I screamed NO WAY! I totally thought Sunshine and him were an item!!!! I still can’t believe it! I love that show, a am so happy for Sam but I am glad that they all did the right thing and had MIke stay on the show. He needed to be there! Sam had met his goal weight!!! Keep your chin up. We all hit stumbling blocks. Just like Dairus we just need to pick ourselves up and finish what we started! Good day to you friend!

    I have a very hard time being healthy when it comes to Mexican! I love cheese enchiladas and a nice big margarita! haha…so definiely DON’T take my advice 🙂

  10. I loved the makeovers – thought they all looked so good! So glad to see Daris and Mike get haircuts – Daris looks like a different person now! I don’t think they made a big enough deal on the show about Sam reaching his goal weight while at the ranch – I know Jillian kept saying he was done, but until Sam said it after he was eliminated, I didn’t realize that he was DONE. Amazing! And I love that he and Stephanie are together – they are so cute!

    You are right – the contestants probably never really dreamed that they could do everything that they are doing in the gym now. Same for me, and I’m sure, for you as well. I’m hearing the Rocky theme in my head now!

  12. My goal is to break through my plateau and get closer to goal. Or at least get to where I was last summer. I’m at a pretty comfortable place, where I still feel like I can eat enough to make me happy, yet stay within a given range…but I feel like I need to see what it takes to get me to goal and whether it’s worth it once I’m there.

  13. thats interesting that ur doctor wants u to be a lower weight. i guess he’s just dudging the bmi right.. i think any goal for weight is where u feel most comfortable in your skin… and when u can come into a balance without ups and downs yet be able to eat an amount comfortable for your body. lovbtw ur potatoes are absolutely stunning. when i get them from one of my fav restaurants they never look as good as that. .so thats saying something right there. ur amazing ❤

  14. I have it DVRd so I will watch it tonight. I am the same height as you and I am shooting for 150. I know it won’t be the “ideal” weight but it is WAY better then 315 which was were I started…

  15. So crazy that Sam reached his goal weight on the ranch. Honestly as much as I love him and I’m still mad at Michael for making the stacked teams, it was right for him to go home, it’s only one week early anyways…

    I knew he and Stephanie were living together from an interview I heard with Stephanie after she was sent home, so it wasn’t a shock but it’s cool they are a cute couple.

    That porterhouse looks amazing! As for the tortellini I used spinach to use a bit more, you cut back on the tortellini it works 🙂

    I was happy my doctor was happy with me being at the upper end of my BMI range, in part because I am packing a ton of muscle now 😀 No plans for cinco de mayo for us, but I did have huevos rancheros yesterday…

    I’m 5 or 6 pounds away from where I’d like to be. It’s important to have goals, but you’re right: the prize IS good health. It’s where our bodies function at their peak at and where we FEEL great at.

  19. omg, i couldn’t believe daris’ transformation!! amazing show 🙂 right now i’m not worrying about the number, i’m just trying to get back to being happy, healthy, and the rest will come… i hope 😉 it’s the acceptance thing that i’m struggling with right now. buuttt enough about that, i’m really all about good food 🙂 and that’s what you got goin on here! love the breakfast cups!!

  20. Too bad pickled jalapenos are high in sodium, because I can down several at a go. I know you have no problem doing that, too! I LOVE your wonton breakfast. Such a cool crunchy meal!

    Everything looks amazing today…..My mom used to put cheese on everything to get us to eat it. I think I need to get some broccoli just so I can put some of my Trader Joe’s Nacho Cheese on it 😀
