Southwestern Egg Rolls – BSI Corn!

I decided to come up with a recipe using just what I had on hand.  I looked at a bunch of copy cat recipes for Chili’s southwestern egg rolls, but they all called for using tortillas and canned black beans, both of which I didn’t have.  So I give you my version!

Southwestern Egg Rolls

  • 12 egg roll wrappers
  • 8 ounces grilled chicken
  • 1 tsp. taco seasoning (divided – 1/2 rubbed on chicken prior to grilling, then 1/2 in the filling)
  • 7 ounces of corn (taken off the cob)
  • 1/4 cup chopped fresh cilantro
  • 1 tsp. cumin
  • juice of 1 lime
  • 1/2 cup vegetarian fat free refried beans
  • 1 tablespoon canola oil (mixed with Pam) for frying

The best part is that each egg roll comes in at 121 calories, 2.4 grams of fat, 16 carbs, 8.5 protein and 1.2 grams of fiber – add zero point salsa for dipping and this makes a great appetizer at home.

I ended up weighing the filling, and dividing that by 12 - each roll got 1.6 ounces of filling

Crustless Zucchini and Baby Spinach Quiche

If you haven’t looked for it yet, you have to try Cabot’s 75% reduced fat cheddar cheese – it is SO flavorful!   I used calorieking.com to figure out the calories of this quiche – this is for the WHOLE pie!

After I shredded the zucchini, I squeezed out as much of the liquid as I could.  Just throw everything in a bowl, mix and put in the pie plate.

And I am so proud of two very inspirational ladies who have run races this week – first up is Heather at HangryPants – she ran a half marathon yesterday at an amazing 8:46 mile pace!  Awesome job!

Then there’s Meghann – who in January 2008 hadn’t run more than a couple miles – she did her first half marathon in the fall and today is running in the San Diego Rock n Roll Marathon!  Last time I checked, she’s made it past the half way mark – and at a 9:56 pace!!

Great job ladies!  I may just have to sign up for a race of my own! 😀

Thai Marinated Chicken Wings

Note to self:  you need to marinate these wings longer than 2 hours – overnight would be better!

While I like the marinade recipe, the short time I marinated them, there was really no flavor to them at all. 

  • 3 cloves minced garlic
  • 2 tablespoons fresh grated ginger
  • zest of one lime
  • juice of one lime
  • 1/2 cup water
  • 1/4 cup soy sauce
  • 1/4 worchestershire sauce
  • 1/4 cup chopped cilantro
  • 1 tsp. crushed red pepper

Fat Cat

When Hannah got home last night, she noticed that there was a huge cat in our back yard – it didn’t have a collar, but boy was it friendly!  We decided to give it some milk.  All I know is that our dog wanted to get at it!  I am sure if we let it, it would have walked right into our house!

I woke up with hashbrowns on my brain.  I usually dice my potatoes small, boil them until they are tender, and then finish them off to get a nice crispy crunch – I used 3 potatoes and about 1 tablespoon of olive oil.

Hannah has to work this afternoon so we are off to check out some local garage sales before she has to go in.  Then Tony and I are going to head to a butcher shop – we are toying with the idea of buying meat in bulk to see how that fits into our food budget – we’ll probably stop and get a bite to eat along the way – see you later!
