Surf and Turf Date Night In

I am quitting WW.  I started this blog in September of 2008 with the initial thought that if I put my weight out there for the world to see, it would somehow motivate me to lose the weight I gained since being put on insulin.

Last week I weighed in at 165.6.  This morning?

Yep – still hanging on to the 165!  I have a new plan that I am going to unveil on Monday – you’ll just have to wait until then!

After seeing Lori’s bagel the other day, in all its blistery toasted glory, I knew I had to have one – mine was jalapeno though!   You can’t see it, but inside is an egg white/roasted red pepper egg.

Usually when I make my baja fresh salsa, the longer it sits the spicier it gets.  For some reason this batch got blander.  So I added more garlic, cilantro and two chipotle peppers and it kicked it up nicely.  And if you are wondering, I ate the whole bowl full. Open-mouthed smile

Tony and I were watching Diners, Drive-Ins and Dives and at his restaurant, they had a tuna taco that was in a wonton cup.  Although his taco had a bit more southwestern feel (it had corn and black beans in it) the concept was that the lime juice “cooks” the raw fish.  I googled a recipe, sent it to Tony and he said “let’s make it!”

Tuna Tartare  (adapted from Karma Cucina)
Serves 4

For the baked wontons:
1 dozen wonton wrappers Olive oil Sea salt (I deep fried ours)

For the tartare:
1 lb. sushi grade tuna
1/4 cup extra virgin olive oil
Zest of 1 lime (I used 2 limes)
Juice of 1 lime (about 1/4 cup)
1/2 tsp. wasabi powder
1/2 Tbsp. soy sauce
1/2 tsp. Tabasco sauce
1/2 tsp. sea salt
1/2 tsp. fresh ground pepper
1/3 cup sliced scallions (white and green parts), minced (nope!)
1 Tbsp. seeded jalapeno, minced (nope!)
1 ripe avocado
1/2 Tbsp. toasted sesame seeds (optional) (nope!)

Cut the tuna into 1/4-inch dice and place it in a large bowl. In a separate bowl, combine the olive oil, lime zest, lime juice, wasabi, soy sauce, Tabasco sauce, salt, and pepper. Pour over the tuna, add the scallions and jalapeno, and mix well. Cut the avocado in half, remove the seed and peel.  Cut the avocado into 1/4-inch dice. Carefully mix the avocado into the tuna mixture. Add the toasted sesame seeds, if using. Allow the mixture to sit in the refrigerator for up to 1 hour if you prefer the tuna to cook slightly in the marinade or simply skip ahead to the next step.  Scoop a heaping tablespoon onto each wonton and serve immediately.

Tony has some excellent knife skillz. Open-mouthed smile  It was nice having him in the kitchen with me, even if we barely both fit in our tiny kitchen!

It’s always nice to have a glass of wine while grilling!  We split a NY strip, simply seasoned with salt and pepper.  See that time in the background?  For perfectly cooked fish it takes 2 minutes a side in one direction and 2 minutes a side in another direction to get the grill marks – for a total of 8 minutes exactly.  That way you don’t have a steak that is too done on one side.

I put some Frank’s hot chili sauce on top of mine.  While I loved the flavor of the tuna, the texture kinda grossed me out, but Tony absolutely loved it!

I am out of oranges!  So I ended up putting bird seed inside of the oranges, and this morning, the bird seed is all gone!

I won’t be blogging tomorrow – I am headed to my Mom’s church with Hannah, then having lunch at my Momma’s.  Tomorrow night Tony is cooking!  Spicy mussels in a chorizo broth and shrimp risotto.

  3. I find WW works when we use it faithfully. The main thing it taught me was portion control. I already ate mostly non processed foods sticking to the fresh vegetables and fruits but my protein would always be too big a serving and the breads, crackers, chips, potatoes, rice or pastas had to go or at the very least be minimal.
    Interesting to see what you are switching to.

    I’m kind of a picky eater, don’t think I could try the tuna. I wish I was a more adventuresome eater! 🙂

    I’m looking forward to hearing your new plan come Monday. While Weight Watchers works for some people, I don’t think there is any one plan that can suit everyone! You just need to find what works for you.
    I LOVE fresh tuna, but lately all I’ve had is pouched and it doesn’t quite live up to the real deal. You and Tony are so cute 😀 I have a feeling when I’m older I’m going to be doing the exact same thing with my husband.. watching Diners, Drive ins, and Dives and attempting to recreate anything that sounds good!

  8. Looking forward to the reveal of your new plan. So far my plan to stay under 1600 calories a day is right on track, but no major challenges yet to test my determination. Hope you have a wonderful Mother’s day!

Respectfully, I have found that no special “diet” is a panacea – just eating lots of fruits and vegetables, balanced with lean protein and some beans and whole grains, and working out consistently. My mom got diabetes a few years back and it really woke her up – she went from eating carb- and fat-heavy meals – like bagels, chips, red meat, too much alcohol, deep fried things, no fruits and veggies, etc. – to eating just fruits and vegetables, whole grains, lean proteins, and beans and has seen dramatic results. We are not religious adherents to any particular diet – just the diet of common sense, I guess. I mean, it’s no wonder she was eating the way she was and not losing weight! As my mom says, Duh! We still may indulge – but it is the exception and not the rule (maybe once a month or so). We love to cook and feel challenged to cook healthy meals in new and interesting ways and never feel bored or deprived.

    • Thanks for your input Kristin – and that is kinda like my plan – eat like a healthy person! 😀 (and maybe skip the cheese a couple days a week!) 😀

  16. I am curious about your plan. I did WW quite a few times over the years, but never went back to it since 6 or 7 years ago. I think we all need to adjust our plans based on the time of year and what is going on. At least I need to do that.

  17. I am big into birds. I’d like to know if your oranges/seeds only attract orioles (which are beautiful!) or if you get a variety of birds!!

I have enjoyed your recipes, your photos, used the “log board” to record my daily calorie intake, and your post have made me giggle and smile. I can not wait to see what your new Monday plan is. I too am checking out some other weight loss/get healthy plans. They might just be the way to go. If they seem productive I will let you know.

  19. Its so hard being on insulin. I try and try to lose weight, and I lose so slowly. Its very frustrating.

    • I agree, but it’s being on insulin that got me to where I am – all of a sudden all the things that I didn’t eat while on oral medication, all of a sudden I was like “I’ll have an extra piece of pizza – I’ll just take more insulin!

  25. I think it’s a good thing to change things up every now and then. WW is a good program but changing to something else can be a good plan too. It’s funny that I have made diet decisions this weekend too and have a new project that’s inspired on your blog (amongst other blogging cooking friends) 🙂

  26. I can’t wait to hear your plan! I still truly believe, Biz…diabetes is priority. If you were an uncontrolled diabetic, your weight would go down. And that would be bad. It’s actually a GOOD sign that your weight has been so stable and your blood sugars so well-controlled! You’re my source of inspiration when I tell people it CAN be done! It’s a TON of work, and I can’t imagine, but I do see the reality of the side where people don’t care and end up on dialysis. I wouldn’t wish that upon my worst enemy, and so I think the diabetes always has to come ahead of the weight. And if ANYONE does diabetes right…it’s YOU! 🙂
