Lean Cuisine Soup

I am so looking forward to a full grocery shop this week.  Yesterday was slim pickings to make my meals yesterday.  For instance, take a look at my breakfast tacos:

I am sure you are thinking – what the hell is in there?  Try 1/2 a cup of scrambled egg whites, 1 breakfast sausage, and a cup of broccoli slaw.  I divided the mixture between 3 extra thin Mission tortillas (love these!) and cooked them in 1 teaspoon of olive oil.

When I got to work, I put them in the toaster oven to crisp up again at 350 for about 7 minutes.  I added some Tabasco at my desk and these were delicious!  Breakfast comes in at 380 calories, 12 fat, 31 carbs, 6 fiber and 35 protein.

I checked the indoor pool schedule at my gym and went and swam for 40 minutes – again, just me and the lifeguard. Open-mouthed smile  I have to tell you that swimming is a good workout – I could feel muscles in my back and my face was flushed when I got done.  I am not a fast swimmer, so I don’t even know how far I went, but for the sake of my 100 miles in August challenge, I am adding another mile.

So Tony, who swore that he hated Greek yogurt?  Tried the blueberry one and loved it – winning! Open-mouthed smile

So I was literally grasping at straws trying to figure out what to make for lunch.  A quick peak in the deep freeze and I found a chicken fried rice Lean Cuisine that Hannah bought and left.  They are only 260 calories, so i was trying to think how I could bulk it up and decided to make a soup!

The red container?  That’s called Gochujang – or in other words, it’s a hot pepper paste.  I add a tablespoon of this to soups to kick them up a notch.  I cooked the Lean Cuisine, then put the chicken broth and chopped broccoli together and cooked that for 2 minutes.  I added the hot pepper paste, stirred it to combine, then added the Lean Cuisine to the bowl, and nuked it for another 2 minutes.

This giant bowl of soup comes in at 350 calories, 4.9 fat, 60 carbs, 4.4 fiber and 16 protein.

But you guys, by the time I got home, I was hangry.  I literally only just over 700 calories before dinner.  I had defrosted some ground beef and ended up making myself a Reuben burger – a 1/3 pound burger with cheddar cheese, sauerkraut and thousand island dressing and I didn’t have any fries, so flaming hot Cheetos made the plate. Dinner comes in at 682 caloires, 40 fat, 50 carbs, 1.5 fiber and 34 protein.

All in all it wasn’t a bad day, but I think I need to eat bigger meals earlier in the day and less at night.  I am proud though that I never ate any more cheetos later in the night – no snacks at all. Open-mouthed smile

Stats for August 3:

  • 1412 calories, 58 fat, 141 carbs, 11.9 fiber and 88 protein
  • 39% calories from fat, 36% from fat and 25% from protein
  • 1 mile swim
  • 6.1 miles down, 93.9 miles to go in August

So excited – Tony and I are going to Ruth’s Chris tonight for dinner!  We’ve had a gift card for the longest time.  Their filet’s are amaze balls!

My SIL is coming over for dinner tomorrow night too.  She just moved her son and his girlfriend to Tennessee, so I know she’ll need some extra hugs now that they don’t live with her anymore.

    I do much better when I eat a big breakfast, big lunch and lighter dinner. It makes a big difference for me since I work out in the mornings most days. Of course, I still do a couple snacks, which I know you don’t do.

  4. That Kim is brilliant! Hahaha, thanks for the shout out! I am definitely in, maybe this will give me the motivation I need to get back to moving more & eating less! My official goals are: some form of exercise at least 4 days a week, and eat less sugar! (to start right after my Bday on Monday!) The big 4-0….I will need some chocolate for that.

    Omg my son had his wedding reception at Ruth’s Chris in Baltimore last year! It was the best. I know you’ll have a great time!
    Only you could think of making soup out of lean cuisine. Tricky!!

  9. Love your August challenge – I missed the announcement in your previous post, but I’d love to jump in a little late! I have been a total disaster in terms of getting to the gym in July due to a crazy summer work schedule, but I definitely need to get back in the swing of things. The challenge I’m going to give myself for August is committing to making it to the gym every weekday, so 5 days a week! I can do it!! 🙂

  13. I like your challenge! For August I’m going to drink lemon water every morning, green tea at least once a day, and 5 servings of fruits and vegetables a day. Woop!

    I’m jealous of your Gochujang, I looked everywhere for that in Wichita and never found it. I was going to use in on some Chuncheon chicken wings and ended up having to use sriracha but it was still good.

    Good idea eating more earlier and less later–that is an old eating principle that still holds true today. Eat breakfast like a king, lunch like a prince, and dinner like a pauper.

  15. If you know the length of a lane at your pool and you count the lanes you swim it should be easy to know how many miles you’ve swam. If you’re not sure, ask the lifeguard.

    My challenge – I want to do 4 yoga classes a week. (And I want to lose 6-8 pounds by Sept 26th – hopefully the yoga will do it! I don’t think that’s too unreasonable of a time frame.)
